Rice pudding with raspberry sauce (Budìn de arroz con salsa de frambuesas)

I made this recipe from the Blog of Cynthia that many of you know by her blog http://www.tasteslikehome.org/ to the Event TRIED & TASTE organized by Zlamushka of the blog http://www.burntmouth.com/ that was so kind to invite to participate.

So here I am the last day!! Sorry but I cannot made before .

Cynthia is writing a book so I find this recipe in her Blog and I think was so yummy and here is the original recipe The only difference is Cynthia use freeze strawberries and I use freeeze raspberries.(You can choose that you like more)

Ingredients


1 cup long grain white rice


4 cups whole milk


Condensed milk to sweeten to taste


1 small cinnamon stick


1/2 vanilla bean seeded


1/3 cup of raisins


1/4 cup of rum


For Raspberry sauce


2 cups of frozen raspberries, thawed


A few drops of lemon juice


Sugar to sweeten sauce to taste


Method


1.Soak raisins in rum and set aside.


2.Wash rice and strain excess liquid


3.In a heavy-bottomed pot combine milk,rice,cinnamon stick & vanilla bean and bring to boil.


4.Turn heat to very slow and let rice cook uncovered (approximately 1 hour)


5.10 minutes before the rice is finished,sweeten with condensed milk then stir in rum and raisins that have been melding together.


6.Set aside to cool


7. When the rice is cool enough you can chill it in the fridge.


Method raspberry sauce


1.Combine all ingredients in a blender and make puree.Pour this in a container and place in the freezer by 30 minutes before you are ready to serve the dessert.


2.At the 15 minute interval,give the sauce a stir and return it to the freezer.


These are a varierty of ways to serve:


You can place the rice pudding in individual glasses or bowls and top with raspberry sauce.


You can serve it buffet style rice pudding in a large dish and sauce in a jug for easy pouring/drizzling orthe sauce can be put in individual shot glasses.

BUDIN DE ARROZ CON SALSA DE FRAMBUESA

Esta super rica receta la hice por el evento Tried & Taste que organiza Zlamushka de http://www.burntmouth.com/ con las recetas de Cynthia de http://www.tasteslikehome.org/ , Cynthia para las que no la conocen tienen un precioso blog en Inglès principalmente de comida caribeña ella es de Barbados, comenta de cocina en un diario, tiene el blog, estupendas recetas y preciosas fotos, ahora està preparando un libro .

A mì me invitò a participar Zlamushka y me gustò la idea porque me atrae las comidas de paìses distintos y culturas distintas, la misma Cynthia dice siempre estoy aprendiendo, a mì me sucede lo mismo.

Hice la receta tal cual lo ùnico diferente es que yo tenìa frambuesas congeladas en vez de frutillas que es la receta original, pero creo que queda bien con cualquiera de las dos.

Ingredientes

1 taza de arroz blanco gran largo

4 tazas de leche entera

Leche condensada para endulzar al gusto (usè medio bote)

1 palo de canela para sabor

1/2 palito de vainilla sin las semillas

1/3 taza de pasas

1/4 taza de ron

Salsa frambuesas

2 tazas de frambuesas congeladas o frescas

jugò de 1/2 limòn

azùcar para endulzar la salsa (a gusto)

Mètodo

1. Remojar las pasas en el ron y dejar reposar por un rato.

2.Lavar el arroz y pasar por un colador para que estruje del exceso de agua.

3.En una olla (puede ser de teflòn porque el arroz se puede pegar) colocar la leche entera,el palo de canela y la vainilla, revolver hasta que enpiece a hervir.

4.Bajar el fuego al mìnimo, muy suave (yo lo pongo sobre el tostador que uso sòlo para el arroz) y dejar cocinar el arroz sin tapa revolviendo de vez en cuando, (cocciòn aproximadamente 1 hora)

5.Calcular unos 10 a 15 minutos antes de que el arroz estè listo y endulzar con leche condensada y agregar el ron y las pasas, revolver bien y dejar que se termine de cocinar.

6.Apagar el fuego y de jar que se enfrìe.

7.Cuando ya estè màs frìo llevar al refrigerador a enfriar.

Salsa de frambuesas

Combinar todos los ingredientes mencionados y moler tipo purè en una Juguera o procesadora.

Poner en un bowl y llevar al refrigerador por 30 minutos (ella dice Frizer pero yo creo que con el refrigerador està bien) antes de servir el postrep>

Cuando hayan pasado 15 minutos retirar, revolver y dejar nuevamente en el refrigerador.

Hay varias formas para servirlos : Se puede poner en copas o bowls y servir con la salsa de frambuesa como se ve en la foto.

Tambièn se puede servir tipo buffet y colocar el arroz en una fuente y poner la salsa en una jarra para que cada uno se sirva como quiera.

Pero yo no lo harìa tan libre,me descuidè con la salsa de frambuesas y mi hija le estaba colocando màs a su postre!


En esta ocasiòn, la receta viene en inglès y la traduje al español, asì que si tienen alguna duda preguntenme.

Libanese's Rice with fry meat balls (Kibbe or Kubbe)






Well, well here at my wright a free advice that I make to Carozzi pastas,



I want to add some pictures of the paste that I use to the Rice and I find this,



So is the Carozzi people look this you may be support my blog!!




This paste I use to the Libanese's rice that I will explain, here the name is Cabello de Angel but sure there in others countries have an other name, is a type of pasta little and short that is used in soups too.






In all case Carozzi is a so good paste that I used many years ( is so antique here)



The first I thought was post about the Libanese's rice but after I add other recipe of beef meat balls with burghol, I have other Libanese's recipe in my Labels with chopped walnuts is so nice too.



I told you the other time these recipes are from my Mother in Law that come from a Libaneses and Palestine family.







Ingredients



Two cups of white rice (washed in cold water)



1 cup of paste as the picture type Carozzi



3 spoonfuls of oil unsaborized



1 teaspoonful of yellow curry powder



salt







METHOD

In a pot fry the cup of little pastes, until be golden to brown. (The first time I eat them I thought were burned!!) add the cups of white rice (washed in water and dry with a colander) to the golden paste and add curry powder and salt, stir again, slow the fire, and add 4 cups of boil water and stir with a woodspoon.



Cook at so slow heat by 20 minutes. (If you have I use the antique toaster to place under the pot ).



Let the mix rest by 8 minutes when is cook.



Serve with the fry meat kibbe balls.




FRY MEAT KIBBE BALLS




Ingredients




500 grs. of grind beef meat


1 cup of burghol wheat (In natural stores or Supermarket) (You may buy in Amazon too)


1 spoonful of oil (olive or unsaborized)


1 spoonful of chopped chives


salt and pepper


Oil unsaborized to fry the balls




Method


Place in a bowl the cup of burghol wheat with a cup of cold water, soaked by 1 hour.
Strain in with a colander, dry and press well with the hands.

In other bowl add the wheat burghol to the grind beef meat, and join well.
Add the oil, salt,pepper and chives chopped, join.
Make little balls and to fry and dry in a paper towel before to fry in a frying -pan.
(Because if they have some water with the hot oil, can splash.
Cook to medium heat.
When are little golden are Ok. Let them in a dish with a towel paper and serve with the rice.
EN ESPAÑOL
Bueno, arriba puse a pastas Carozzi para mostrar el tipo de fideos que se usa para este arroz Libanes, es un tipo de fideo corto, pequeño que aquì se llama cabello de angel pero en otras partes sabe Dios como se llamarà, por eso la foto de Carozzi.
Bueno si los señores de Carozzi ven esto podrian apoyar mi Blog ya que les hago propaganda gratis, y en dos idiomas señores!!
Lo primero que habìa pensado es poner el arroz Libanes pero despues agreguè estas bolitas de carne con trigo burghol que se agregan a otra receta que habìa publicado de Kibbe con nueces molidas.
Pueden encontrarla en "Labels".
Casi todas estas recetas libanesas provienen de mi suegra, ya que mi marido es de familia Palestina/Libanesa, asì que me he visto en la obligaciòn de aprender esta comida tambièn, la verdad es que es rica y a los niños tambièn les encanta.
Ingredientes
2 tazas de arroz blanco(previamente lavado en agua frìa)
1 taza de fideos cortos (tipo Cabello de angel)
3 cucharadas de aceite sin sabor
1 cucharadita de curry amarillo en polvo
sal a gusto
Mètodo
En una olla freir los fideos pequeños hasta que estèn dorados casi medios cafecitos (la primera vez que comì este plato pensè que los fideos se habìan quemado, pero no)
Agregar el arroz previamente lavado y secado en un colador,revolver bien con una cuchara de palo la mezcla de arroz y fideos,agregar la sal y el curry y mezclar bien.
Agregar 4tazas de agua caliente, revolver y poner a cocer a fuego lento, yo prefiero poner un tostador debajo para que se cocine lento.
Cocinar por 20 minutos. Cuando estè listo dejar reposar por unos 8 minutos antes de servir.

Bolitas de carne con trigo burghol
(Kibbe meat)

Ingredientes

500 grs. de carne molida (posta o tàrtaro)
1 taza de burghol
sal y pimienta
1 cucharada de aceite de oliva o sin sabor
1 cucharada de ciboulette picado fino
Aceite para freir el kibbe.

Mètodo

Remojar el trigo burghol con una taza de agua frìa, por una hora.
En otro bowl unir la carne molida con el trigo remojado, estrujar muy bien el trigo antes de ocupar, apretarlo con la mano para que no le quede agua. agregar la cucharada de aceite, el ciboulette,la sal y la pimienta, unir bien y hacer las bolitas de carne.

Pasar por una toalla nova o de papel por si tuvieran algo de agua, para que no salte en el aceite

En un sartèn colocar aceite para freir, fuego medio, dorar ligeramente y al sacarlas ponerlas en un plato sobre un pedazo de toalla de papel para secarlas.
Cuando estèn listas servir con el arroz Libanès.
Este plato completo se puede calentar sin problemas en el microondas.

Oven Chilean empanadas (filling with beef meat)








When I begin this blog I post cheese fry empanadas that you may find in old posts.

But This oven empanadas are the typical of Chile, to September, and the holidays and the Sundays is a typical lunch of here. Normally the people bought the empanadas in some stores

and ..... the supermarkets.
But I made them at cook class and here at home. An where I live many people make empanadas to offer and sell the weekends.
I dedicate these empanadas to all the chilean people at exchange and love this and many people that had live here and love this type of foods.

With the empanadas you can drink red wine(merlot or Cabernet sauvignon) or white wine (Chardonnay or Sauvignon blanc) all are nice to eat empanadas. Cheers!!

This recipe is from Paula's magazine special cook from year 1992,Cook Editor Rosario Valdes Chadwick who has wonderful recipes.






I place four littel pictures to can explain the method.


The first to the wright, one portion is ready to roll on.



The second at the wright is a tea dish over the dough to cut the
empanada by the border with a knife.






In the next picture the filling is over the dough empanada, beef meat and a piece of boiled eggs. You may add too olives (one by empanadas) and raisins if you like. To veggies I feeling with cheese, my daughter don't like beef meat.




And the last picture the empanada is ready, with the filling and double the border to cook at the oven.

Ingredients





To dough

1 Kilo plain flour

1 spoonful of baking powder

100 grs. lard (better if is vegetal)

150 grs. marguerine

1 and half cup of milk

1 cup of water

1 spoonful of salt

2 eggs

To Filling


3 spoonfuls of unsaborized oil

100 grs. of butter

1 spoonful of paprika powder

3 onions chopped

500 grs. beef meat

1 spoonful of flour

1/2 cup of cold water

1 cup of warm water

salt and pepper

1 teaspoon of cummin

12 olives


2 boiled eggs


2 spoonfuls of raisins


A mix of yolks and milk to cover the empanadas

Dough method

Place the flour with the baking powder over a table. In a pot warm the lard,margarine,milk water and salt, to medium heat to mix all.
Empty this mix over the flour with baking powder and make a dough, add the eggs, kneading by 3 to 4 minutes.

Let rest the dough by 5 minutes cover with a towel kitchen.

Divide the dough in 12 portions aprox.If you think is needed more flour add a little.The dough don't be stick in the hands.

Roll each portion how you see at picture with a tea dish and cut with a knife by the border.
Preheat the oven to medium heat.
Filling each empanada with two spoonfuls of the beef meat filling,one olive, one slice of boiled egg and some raisins (optative).

Double the border and moist with the fingers with warm water.

Brush the empanadas with a mix of yolks and milk.


Cook at the oven until be golden by 20 minutes aprox.

Serve hot.

Filling

Chopped the onions and place in hot water by 15 minutes. Dry well with a colander.

Place the oil an butter in a frying pan with the paprika powder and add the chopped onions, fry, when is ready add the beef meat and stir cooking (dont overcook)

Dissolve the flour in cold water add the hot water and empty over the meat. Take out the fire and add salt,pepper and cummin.


Let chill before to fill the empanadas.

Empanadas chilenas al horno
rellenas con carne
Cuando comenzè este blog coloquè unas empanadas fritas con queso, pero no habìa hecho las de horno que son las tìpicas chilenas, las del 18, las de Septiembre y las Fiestas Patrias, las que tambièn se comen los Domingos a la hora de almuerzo, tambien venden en muchas partes especialmente en los supermercados.

Y aquì donde vivo (Calera de Tango) hay muchas personas que hacen empanadas los fines de semana, cuando puedo a mi me gusta hacerlas. Mi abuelita las hacìa siempre, y una amiga que tengo La Nona Mery (mamà de mi cuñada) siempre las hace. Cocina fantàstico.

Dedico esta receta a todos los chilenos con nostalgia que estan fuera y aman las empanadas y tambièn a todos esos que han vivido en Chile y en el extranjero añoran comer estas cosas, lo sè porque me lo han dicho.

Las empanadas se pueden comer con un buen vino tinto o rojo (cabernet saugvignon o Merlot) o con buen vino blanco helado como a mi me gusta (saugvignon blanc o Chardonnay) Salud.!

Importante: Esta receta es de Revista Paula Cocina, año 1992, editora de cocina Rosario Valdes Chadwick, una estupensa investigadora y que tiene muy buenas recetas.(Rosario trabajò muchos años en Revista Paula)


Arriba puse cuatro fotos pequeñas para explicar un poco el proceso. En la primera a la derecha arriba, la masa està lista empezar a preparar las empanadas. Se ha dividido la masa en 12 porciones aprox.

En la segunda foto a la derecha, està el plato de tè sobre la masa para poder cortar la masa por el borde del plato.

En la tercera està la masa con una porciòn de relleno lista para cerrarla.
Y en la ùltima està lista la empanada, cerrada con los bordes ya doblados.



Ingredientes para la masa

1 kilo de harina
1 cucharada de polvos de hornear
100 grs. de manteca (vegetal)
150 grs. de margarina vegetal
1 y 1/2 taza de leche
1 taza de agua caliente
1 cucharada de sal
2 huevos


Ingredientes para el relleno
100 grs. de mantequilla
3 cucharadas de aceite sin sabor
1 cucharada de paprika molida
3 cebollas cortadas en pluma o fina
500 grs. de carne molida (posta o tàrtaro)
1 cucharada de harina
1/2 taza de agua frìa para disolver la harina
1 taza de agua caliente
sal y pimienta
1 cucharadita de comino molido

Si se quieren picantes se les puede agregar ajì.


Preparaciòn masa

Colocar sobre una mesa la harina con los polvos de hornear en forma de corona. En una olla colocar la margarina, manteca, leche, agua y sal ,calentar suave para que se mezcle..

Verter esta mezcla sobre la harina con polvos de hornear y unir bien, agregar los huevos de a uno amasando.Sobar la masa de 3 a 4 minutos.

Dejar reposar la masa unos 5 minutos tapada por un paño de cocina.

Si se piensa que se necesita un poco màs harina agregar pero no mucha.La masa debe ser suave pero no pegarse en las manos.
Precalentar el horno a fuego medio/suave.

Uslerear la masa y cortar los circulos con el plato. Rellenar cada empanada con dos cucharadas de carne,un pedazo de huevo duro y unas pasas (optativo). Doblar la empanada en dos, mojar los bordes y sellar.

Con una brocha pintar las empanadas con una mezcla de yemas con leche para que queden doradas.Llevar a hornos por unos 20 minutos, servir calientes.

Preparaciòn relleno de carne molida

Picar la cebolla y dejarla unos 10 minutos en gua caliente (queda màs suave )
luego secarla con un colador.


Calentar el aceite y la mantequilla en un sartèn con el pimentòn o paprika molida y freir la cebolla hasta que estè transparente.

Agregar la carne molida revolviendo hasta que cambie de color, (no se debe sobrecocer)

En un pocillo disolver la harina en un poco de agua frìa, agregar el agua caliente y verter sobre la carne.

Retirar del fuego y agregar la sal, pimienta y comino. Dejar enfriar ante de rellenar las empanadas.

Llevar a horno por unos 20 minutos.Servir calientes.

Nota

Para los que de frentòn no comen carne hacer una excepciòn y rellenar con un buen queso tambièn quedan ricas.

Dulce de Leche Roll or (Brazo de gitano (Spain)or Brazo de Reina(Chile)


This is a typical sweet treat of Chile, Brazo de Reina, you know by Dulce de Leche's roll or roulade and in Spain they called Brazo de gitano, how all the rolls you may filling with a lot of thing and I have other yummy recipes but I know all die by Dulce de Leche and me too.


I filling with boiled tins of Dulce de Leche but I place here other recipe of Dulce de Leche of a nice friend of Spain Auro, you may see her recipes in http://lacocinadeauro.com/ she has many and delicious recipes and she has translator Spainsh/English.



And you may make too other recipes of Dulce de leche that I have in Labels "Dulce de Leche".

All are tested.



Ingredients


6 eggs

1 cup of caster sugar

1 and half teaspoon of baking powder

1 cup of flour

2 tins of boiled condensed Milk or the Auro's Recipe that I place here.

If you prefer the tins see the method at Labels "Dulce de Leche"

Caster sugar to powder

Method


Beat the whites with a pinch of salt how to merengue add the caster sugar slowly and add the yolks with carefully, join well, add the flour with the baking powder.




Preheat the oven to slow heat.


Empty the dough in a greased paper over a baking tray spread well.



Cook at Medium heat in oven by 8 to 10 minutes. This dough cook so fast, not have to be golden.


Moist a kitchen towel and turn up the dough over it, moist with a brush to take out the paper most easy.


Wraped the roll carefully and let by a while.





Open the roll and filling spread with the dulce de leche and roll again to mold. Take by 1 to 2 hours to normal temperature.


Place in a large dish and powder with caster sugar.

Dulce de Leche Auro's Recipe


Ingredients

1 liter whole milk

200 cc of double cream

100 grs. golden sugar

200 grs. granulated white sugar

Vanilla zest

a pinch of bicarbonate


Method


In a pot heat the milk and vanilla zest to medium heat, stir with a woodespoon, when is boiling add the double cream,the two sugars and bicarbonate .

Was taken a cinnamon color. Continue stirring, about 1 hour and half begin to thicken,continue stirring is ready when you look the bottom of the pot, let chill and place in jar as a jam or use to filling treats or you may eat with a teaspoon!!!

Brazo de reina (Chile) o brazo gitano (España)



El Brazo de reina o Brazo gitano relleno con Dulce de Leche es un tìpico dulce de aquì en Chile, desgraciadamente lo estàn haciendo mucho en los Supermercados pero su masa no tiene nada que ver con la que uno hace en casa, sè por què es usan premezcla para todo, es cierto que es màs barato pero la consistencia es màs seca.

Mucha gente los compra porque Chile està pasando por una etapa en que en las casas no se cocina mucho. Bueno esa es la idea de los Blogs tambièn que generaciones màs jòvenes (que hay muchos) se entusiasmen por la cocina y rescaten antiguas recetas y hagan otras nuevas.

Muchas de mis amigas encuentran como raro que yo cocine pero cada uno con sus gustos.

Ahora vamos a la receta.

El brazo de reina tiene otras variantes y se puede rellenar con frutas o crema etc. pero el tìpico es este con Dulce de Leche o manjar, arriba se le puede espolvorear azùcar impalpable pero tambièn se puede cubrir con Dulce de Leche y espolvorear nueces o coco rallado por ejemplo, son variantes.

Yo rellenè este con tarro o bote de leche condensada hecho dulce de leche. Pero encontrè estupenda una receta de mi amiga Auro de España y la coloco aquì con su autorizaciòn, es una bella persona, ademàs pueden ver otras recetas de Dulce de Leche en Labels que ya he puesto antes todas son buenas, pero esta de Auro me encantò.

Ella en su blog tiene estupendas recetas para las que no la conozcan aùn.Su blog es http://lacocinadeauro.com/ y realmente se los recomiendo me encantan sus recetas.





Ingredientes

6 huevos

1 taza de azùcar impalpable

1 cucharadita y media de polvos de hornear

1 taza de harina normal

Dulce de Leche

azùcar impalpable para espolvorear



Mètodo



Batir las claras con una pizca de sal como para merengue, bien firmes, agregar suavemente elazùcar impalpable y luego las yemas de a poco, unir bien, entonces agregar la harina con los polvos de hornear.Unir todo bien

Precalentar el horno a calor suave.



Vaciar en una lata de horno cubierta por un papel enmantequillado o engrasado y llevar a horno Mediano por 8 a 10 minutos.

No debe quedar dorado solamente cocido. (es màs fácil para enrollar)



Humedecer una toalla de cocina y darlo vuelta encima, humedecer el papel con una brocha para desprender màs fàcilmente. enrollar en la toalla y dejar un rato

.

Despues abrir y cubrir con el Dulce de leche y enrollar nuevamente.

Dejar por una o dos horas enrollado a temperatura ambiente para que se amolde bien .

Cuando estè listo colocar en un plato y espolvorear encima con azùcar impalpable.

Receta de Auro de Dulce de Leche

Ingredientes



1 litro de leche entera

200 grs. de crema espesa

100 grs, azùcar rubia

200 grs. azùcar blanca granulada

1 vainilla

1 pizca de bicarbonato



Mètodo

En una olla a fuego medio poner la leche con la vanilla, se puede abrir para poner las semillas. Se mezcla bien con una cuchara de palo. Cuando hierve se le agrega la crema, las dos azùcar y el bicarbonato.Seguir revolviendo .


Se demora en espesar màs o menos 1 hora y 1/2, se nota que ya està listo cuando empieza a verse el fondo de la olla.


Se puede probar en un plato para ver si està espeso pero se espesa màs cuando se enfrìa.


Se pueden rellenar diversos dulces, tostadas o comer con cuchara!!!

Beef meat roulade with waltnuts and mozarella at Microwaves(rollo de carne con nueces y mozarella)



Think this is my first post about food in microwaves, normally I have a few of recipes that I make at microwaves. About 3 years ago I take some microwaves class, and I will share with you some of them. This dish I prepare usually.
The importante of the cook to Microwaves is the times of cook if is Low,medium or high power.
My microwaves is normal, nothing special and is so good.











I place three little pictures that you may se how I prepare this roulade.



At first picture is themeat with ingredientes over the aluminium paper (Only to make the roulade remember you cannot use aluminium paper at microwaves) is only to roll it.

.









At the second picture the roulade is ready to cook at microwaves.



Look is over the aluminium paper because we only use to form the roll.





But in the last picture at right we brush the roulade with a mix of butter and paprika's powder because you know normally the microwaves when cook not give colour, with this mix will be golden.

You may melted the butter with paprika at microwaves too but about 50 seg and mix.(High power)








Ingredients


800 grs. grind beef meat
3 eggs
3/4 cup of breadcrumbs
2 spoonfuls of english sauce (Worcesteshire or oother)

1 red pepper in little cubes

100 grs. mozarella

1 spoonful of chives chopped
1 spoonful of French Mustar
130 grs. of grind waltnuts

60 grs. of some chicken pate
1 garlic clove chopped

salt and pepper
1 pieces of aluminium paper to make the roulade




To cover the roulade

2 spoonfuls of melted butter
1 teaspoon of paprika powder











Method

In a large bowl mix the grind beef meat,English sauce,the middle of the waltnuts chopped, mustard,eggs,chives,chopped garlic,salt,pepper , pate and breadcrumbs.
Mix so well and let rest by 10 minutes






Cut a piece of aluminium paper (remember this is only to help make the roulade) and place over it the grind meat with the ingredients and place inside pieces of nozarella and red pepper and roll on with the aluminium paper helped you. Roll on how is in the picture and moist with water your finger to finish and mold well the roulade.


Garnish with pepper cubes over the roulade.


When is ready place the roulade over a large dish to microwaves and over the roll brush with a mix of melted butter and paprika powder, now powder with the rest of chopped waltnuts and cook at the microwaves by 20 minutes en High power.
When is ready let rest by 5 minutes inside the microwaves.

You may serve with salads or white rice.

Roulade o Rollo de carne con nueces y mozarella(al microondas)




Yo creo que es la primera vez que coloco una receta hecha en microondas.
Se que a muchos no les gusta mucho el microondas. Pero hace unos 3 años hice un curso de cocina en Microondas y aprendì mucho y buenas recetas, les dirè que lo importante son los tiempos y las potencias, si es potencia baja, media o alta eso es todo, ahora mi microondas no es nada especial, no tiene grill y es muy bueno para todo, a veces la gente cree que tiene que tener un super microondas y no es asì.



Para este rollo he colocado tres fotos màs pequeñas(ver arriba) para que vean el proceso, la primera la carne està sobre el papel aluminio (que solo se ocupa para enrollar, el papel aluminio NO se puede poner dentro del microondas) està con unos pedazos de m0zarella y pimiento casi enrollado.

En la foto dos a la derecha el rollo està practicamente listo.


Y en la ùltima foto , antes de llevarlo al microondas se cubre con una mezcla de mantequilla derretida (derretir en potencia baja en el microondas) y paprika en polvo, esto le da un poco màs de color porque el horno microondas no dora normalmente.

<Ingredientes

800 grs. carne de vacuno molida (posta o tàrtaro)

3 huevos

3/4 taza de pan rallado

2 cucharadas de salsa inglesa (Worcesteshire u otra)

100 grs. de queso mozarella

1 pimiento rojo narural o en lata cortado en cuadritos.

1 cucharada de ciboulette picado

1 cucharada de mostaza

130 grs. de nueces molidas

60 grs. de patè de pollo o pavo

sal y pimienta

1 diente de ajo picado

1 pedazo de papel aluminio (para enrollar la carne antes de ir al microondas)



Para pintar el rollo

2 cucharadas de mantequilla derretida

1 cucharadita de paprika o pimentòn en polvo (se puede derretir al microondas, 50 seg. potencia alta)

Preparaciòn


En un bol grande colocar la carne molida,los huevos,la salsa inglesa,la mitad de las nueces molidas,mostaza,ciboulette,ajo,pan rallado sal y pimienta.

Extender la mezcla sobre un rectàngulo de papel aluminio y sobre la carne ir colocando pedazos de pimiento y de queso cortado y enrollado el rollo con la ayuda del papel aluminio, para sellar el rollo, mojar los bordes con agua y presionar con los dedos.Colocar el rollo en un plato apto para microondas.

Derretir la mantequilla con el pimiento en polvo o paprika y pincelar con esto la carne, colocar pedacitos de pimiento para decorar y espolvorear las nueces que quedaban sobre el rollo.

Cocinar en microondas por 20 minutos en potencia alta.Dejar reposar 5 minutos dentro del microondas antes de servir.


Se puede acompañar de arroz o de ensaladas.
Si queda para el otro dìa se puede calentar en el microondas pero es mejor previamente cortarlo en trozos.

Nice food at Blogs...(Look what I made!!!)

The last Friday was a complete day with blog's recipes and I have to say so nice and yummy recipes. Always I said I would like to have more time to make all delicious recipes that we saw at Blogs. Really I feel as a Gourmet, tasting all, really enjoy

Rancho Salad from Peter of Kalofagas






The idea was to try some recipes of 2 or three blogs, I try 3, But only have pictures of two because I don`t have camera the first day Im Make a delicious salmon from Margot http://www.coffeeandvanilla.com/ but I comment too.

1) Rancho Salad from Peter of Kalofagas (delicious food from Greece and other he live at Canada) This was sooo yummy so I made twice in weekend because when Mom know about this recipe she want to the Mother's day, the mix delicious and tasted and go so well with the oven salmon of Margot.
I have to said the twinds love it, I think Gerardo Jr. doesn't by the chopped onion but he eat a lot. You may find this recipe in http://kalofagas.blogspot.com/ May 5.

2) Baked salmon with seaweed and Lemon thyme from Margot of http://www.coffeeandvanilla.com/ a delicious dish simple and nice. I always make salmon but I love this so fast and yummy, I dont have picture because don't have camera this day. But you find in Margot's blog in her Archives in fish (March7) She has nice and delicious recipes.

3)Finally Lemon and Poppyseed's cake from Leslie in http://definitelynotmartha.blogspot.com/ This delicious cake that you may see at the picture, fast, easy and delicious I love poppyseeds to make desserts but never before used in Cakes, I only have it by one day because everybody love it.
I don't know Leslie but I love her Blog now and I will happy to make other recipes from her blog. Leslie I love the cover of this cake, so yummy. You may find in her blog in recipes(April 30).

Perdòn ,perdòn mis lindos preciosos de habla española. He estado tan como loca que se me habìa olvidado comentar en español lo que dice arriba.

Sè que muchos saben inglès pero otros no, nunca pienso que algo es obvio.

Bueno se trata de una persona que quiero harto y que me mandò un Tag muy entretenido que la idea era probar recetas de los blogs y comentarlos.Muchas veces he probado recetas de los blogs pero no se me ocurre comentar. La que me lo mandò fue Amy de FamiliaBencomo que es una bellìsima persona y la idea es de Farida de otro sitio de USA, si quieren ver estos blogs estàn arriba las direcciones son muy buenos blogs.

1) la primera receta es de Peter de Kalofagas que tiene recetas exquisitas, vive en Canadà pero es de Grecia, hice una ensalda que se llama Rancho Salad se las recomiendo de todas maneras.

2)Hice un salmòn delicioso de Margot de Coffe&Vanilla, exquisito, no està la foto porque mi marido se habìa llevado la càmara, pero es una muy buena receta.

3) Y por ultimo un Cake de limòn y semillas de amapolas que realmente lo encontrè delicioso de Leslie de DefinitelynotMartha que yo no conocìa mucho pero tiene unas recetas estupendas.

Resumen, todas las recetas buenas, es fantàstico tener la tranquilidad de hacer una receta y confiar que te va a quedar bien. Me encantò la experiencia y se los recomiendo, pienso hacerlo de nuevo. Stuffed potatoes with cheese or meat (Papas rellenas con queso o carne)


this is a typical chilean food, "papas rellenas" or stuffed potatoes, you may find with cheese or grind meat, I love with cheese and many people eat them powdered with caster sugar that I show at the pictures, Im sure the chileans people at far away remember this how a childhood dish and is comfort food too.










Ingredients

1 Kilog. and half of potatoes

2 yolks eggs

1/2 cup of flour

1/2 cup of warm milk

salt

to fry 1/2 liter of unsaborized oil

Peel the potatoes and boiled in a pot, when are ready mashed the potatoes how a puree, add the yolks,milk flour and salt, mix well to make a smooth paste, if you look need more flour add a little. (Some potatoes have more water)

To filling

1/4 mozarella cheese in pieces or

to filling with grind meat

1/4 grind beef meat

1 chopped onion

salt,pepper

1 spoonfuls of oil

METHOD: To the meat filling fry the chopped onion first in a frying pan,add the meat,salt and pepper. Cook and reserve.

To make the potatoes how the picture, take a portion of dough in the hand and filling inside with a piece of cheese or 1 spoonful of the mix of meat, close the potatoes and mold making a potato, passy by flour and fry in the hot oil.They will be golden.


When take out the fire place in a dish with a
paper towel.
You may serve with salads, or alone.
A lot of people like to eat with caster sugar over them how you see at the picture.

Las papas rellenas con queso o carne molida son una tìpica comida de aquì y especialmente de nuestra niñez, en general a todos los niños les gusta.Muchos chilenos que estàn fuera recordaran este plato que comian cuando eran niños, incluso se venden en el Supermercado en porciones individuales pero no son tan ricas como las que uno hace en casa.

Ingredientes

1Kilo y medio de papas

2 yemas

1/2 taza de leche tibia

1/2 taza de harina

1/2 litro de aceite

sal

Pele las papas y pòngalas a cocer, enseguida cuando estèn listas haga con ellas un purè. A este purè añada las yemas, la leche y la harina y la sal.Mezcle todo muy bien hasta formar una pasta suave, si estuviera muy hùmeda agregar un poco màs de harina (algunas papas tienen mucha agua).

Relleno de queso: 1/4 queso mozarella cortado en trozos

Relleno de carne: 1/4 de posta molida (u otra carne molida)

1 cebolla picada fina

1 cucharada de aceite

sal

Para el relleno de la carne, en un sartèn coloque el aceite con la cebolla picada fina,agregue la carne molida y la sal cuando estè lista reserve.

Para hacer las papas rellenas tome una porciòn de masa como para hacer una papa de regular tamaño, extiendala en la palma de la mano y coloque dentro o el queso o la carne molida, doble la masa y dele forma como de una papa, pàsela por harina y llevela a freir hasta que estè dorada. Vaya colocàndolas en un plato en un papel absorbente para que se sequen. Servir solas o con ensaladas y los que quieren con azùcar flor o azùcar impalpable.

Berrie's Catalan Cream (Berries con crema catalana)





This is an other dessert with berries so nice and light by the mixing of Catalan Cream and berries.




Ingredients
6 portions

2 cups of berries (blueberries,strawberries or raspberries)

I use one cup blueberries and one cup of strawberries

1 liter of wholemilk

8 yolks

3 spoonfuls of cornstarch

250 grs. granulated sugar

2 cinnamon wood


Method

Place the berries in a pot with 50 grs. of sugar, and warm to slow heat by 5 minutes. Reserve.

In a bowl place one cup of the whole milk, the yolks and cornstarch and beat slowly. In a pot heat the rest of the milk, add the sugar and wood cinnamon to medium heat and when boiled slow the heat, and add the mixing of yolks and cornstarch, beat well with a wire whip (to mix well) until be thicken.Cook one minute more, always beat and take out the cinnamon woods.
In glasses or other mods place a part of the berries mix and then empty the cream over the glasses and finally put the rest of berries over it.
Take to chill at fridge.

EN ESPAÑOL

Este es un postre delicioso que mezcla los berries con la crema catalana lo cual hace una mezcla muy especial.

Ingredientes

6 porciones




2 tazas de cualquier mezcla de berries,(pueden ser aràndanos, frutillas o frambuesas) Yo usè una taza de frambuesas y una taza de aràndanos.
1 litro de leche
8 yemas de huevo
3 cucharadas de maicena o harina de maiz
250 grs. deazùcar granulada
2 palos de canela

Preparaciòn

Ponga las berries en una olla pequeña y caliente a fuego suave con 50 grs. de azùcar granulada. Reserve.

En un bowl ponga una taza de leche con las yemas y la harina de maiz o maicena y mezcle bien.

En otra olla caliente el resto de le leche con los palitos de canela y el resto del azùcar, caliente y cuando hierva baje el fuego y agregue la mezccla de yemas y maicena, mezclando bien con un batidor de alambre, batir enèrgicamente hasta que espese, cocinar un minuto màs siempre batiendo, retire del fuego y elimine los palos de canela.

En copas o moldes individuales distribuya una parte de la mezcla de berries, luego agregue la crema de maicena en cada copa y finalmente distribuya encima la mezcla de berries.

Lleve al refrigerador a enfriar. Sirva frìo.

Lettuce and Camembert cheese's salad with waltnuts(Ensalada de lechuga con queso camembert y nueces)















This salad is nice and fresh, special to the countries are in Spring/Summer but I love this all year!!

We eat today with daughter and we are in Atumnn but was a sunshine but a little cold day.











I find two types of Lettuces that I show here but you may make with any nice and good lettuce



This salad with cheese and wlatnuts you can eat how principal dish.






I find a normal and organic, I place the picture because I don't know the name in english of differents lettuces, any way all lettuces are delicious I think.


To caramel waltnuts

3/4 cup of waltnuts

1/4 cup of Honey

50 grs. granulated sugar

2 spoonfuls of water

a pinch of salt



Ingredients to salad



lettuce's leaves (different type)

1 red capsicum in slices

80 grs. Camembert's cheese in crumbles

(can be Brie too is so nice to this)

2 garlic cloves chopped

1 teaspoon of ginger podwer

2 spoonfuls of Soya sauce

1 spoonful of oil

Lemon's juice

salt

2 spoonfuls of vinager(optative)



In a pot place the waltnuts and cover them with boiled water, and place to the heat by 5 minutes.

Take out in a colander to dry and reserve. In a pot place the honey,two spoonfuls of water, sugar and a pinch of salt. To caramel the nuts stirring all the time and when the mix is thicken take out, this is about 5 minutes.

Empty the in a oil greased baking tray and carry to the oven to medium heat by 10 minutes, turn up once in a while to golden all.

When are ready let chill in other dish separated because with honey sometimes they stick.

Dressing to salad



In a beat Juice or similar, mix the garlic cloves,ginger podwer, the oil, lemon`s juice, soya sauce and salt, mix well.



In a large dish salad place the lettuce, red pepper, waltnuts and camembert and empty a little of the dressing and taste, if is OK you may serve and place in a little bowl the dressing if somebody want to add more. (To childs I only add, oil, salt and lemon)



EN ESPAÑOL



Ensalada de lechuga y queso camembert con nueces acarameladas



Esta ensalada es deliciosa y fresca especialmente para los que van camino al verano y ahora estan en primavera, pero la verdad es que yo la hago siempre.

Hoy dìa que era un dìa otoñal con sol pero frìo,la preparamos con mi hija, como lleva nueces y queso se puede comer perfectamente como un plato único.

Yo encontrè de dos tipos de lechuga pero puede ser de cualquier tipo.



Para caramelizar las nueces



3/4 taza de nueces partidas

1/4 taza de miel

50 grs. de azùcar granulada

2 cucharadas de agua

1 pizca de sal



Ingredientes para la ensalada


Hojas de lechuga (de dos tipos)

80 grs. de queso Camembert en pedacitos

(puede ser Brie tambièn, es delicioso)

1 pimentòn rojo cortado en tiras.

2 dientes de ajo picados

1 cucharadita de jengibre en polvo

2 cucharadas de salsa de soya

1 cucharada de aceite

jugo de limòn

sal

2 cucharadas de vinagre balsámico (optativo)



En una olla poner la nueces cubiertas con agua caliente, por 5 minutos a fuego medio.

Sacar fuera del agua en un colador y esperar que se sequen un poco.

En una olla, colocar las nueces, la miel, el agua,y una pizca de sal. Calentar a fuego medio.



Para caramelizar las nueces, revolver todo el tiempo hasta que la mezcla se espese, esto dura aproximadamente 5 minutos.

Vacìe las nueces en una lata de horno aceitada y lleve al horno por unos 10 minutos dandolas vuelta de vez en cuando para que se doren bien.

Cuando esten listas retirar y dejar enfriar un rato



Preparar el aliño



En una procesadora o similar, colocar los dientes de ajo,el jengibre, la soya,el aceite, limòn y sal.Mezclar bien y reservar.




En una fuente para ensaladas mezclar las lechugas, el pimentón, las nueces y el queso, agregar un poco del aliño y colocar en un bowl chico el resto por si alguien le quiere aliñar màs.(Yo a los niños sòlo le pongo limòn,aceite y sal)
