Lemon squares by Nupur (Cuadrados de limón de Nupur)










This is my entry to TRIED & TASTE that hosted my friend Zlamushka of http://www.burntmouth.com/ and the recipe is from Nupur of http://www.onehotstove.blogspot.com/ she has many lovely recipes but I made two desserts by the simple reason I had the ingredients Im was sohurry with the date so I choose this two. But if you want to try others savoy recipes you may visit the Blog of Nupur, I hope to make in the future other recipes from her blog because are easy , nice and yummy.


These Lemon Squares are how Lemon Pie but is more yummy I think, the childs fight by them here really is not a joke. Thanks by share your recipes Nupur.










Ingredients

5oz. or 150 grs, of honey graham crackers

3 spoonful of melted butter

1 spoonful of sugar

pinch of salt

Dollop of molasses


Prepare a 8x8 inch square baking pan by lining it with foil (with some overhang) and lighttly oiling the pan.



Crush in a food processor the honey graham crackers, an place in a bowl with pinch of salt, the melted butter , the sugar and the molasses.Pulse until the mixture resembles breadcrumbs. Pour it into the prepared pan and pat it down evenly.

Bake the crust for about 20 minutes. Remove from the oven and let cool.



Ingredients to the filling



1 can of sweetened condensed milk

3 oz of cream cheese

2 egg yolk

pinch of salt

1/2 cup of fresh lemon juice

1 teaspoon of lemon zest



In a bowl place the condensed milk with the cream cheese and join , add the eggs yolk,pinch of salt and the fresh lemon juice and lemon zest.

Pour the filling into the bake crust and bake by other 20 minutes to medium heat. Cool for anhour,then chill throughly before slicing into squuares.

Taste so fine.



Some tips; I place two yolks and Nupur say one.

Wait to cut I have tocut to the pictures and is so fresh and difficlt to cut the squares. I garnish with lemon peel that I peel and place at the freeze for a while, look nice.

Cuadrados de Limòn de NupurEsta es mi entrada para el evento de mi amiga Zlamushka de http://www.burntmouth.com/ ella auspicia Tried & Taste que yo paticipè la otra vez con una receta de Cynthia (Barbados), ahora le tocò a Nupur de la India que tiene muy buenas recetas (me he vuelto un poco adicta a la comida de la India y sus deliciosas especias) yo hice dos postres aunque ella tiene mucha variedad porque estaba al filo del tiempo y tenìa los materiales para hacer los postres, que por lo demàs quedaron deliciosos (aunque la recomendaciòn viene de cerca) los niños literalmente pelearon por los pedazos de este postre y eso no pasa siempre.

Ingredientes

150 gramos de galletas Graham o similares
(Cuando me faltan galletas confieso que he ocupado cereales de los niños y ha quedado estupendo)
2 cucharadas de mantequilla derretida
1 cucharada de azùcar
1 pizca de sal
Una pequeña cantidad de melaza o miel de caña
Preparar un molde cuadrado de 24 x 20 cm màs o menos con papel alusa para colocar la mezcla de galletas

Precalentar el horno

Moler las galletas en el procesador, en un bowl agregar la pizca de sal,la mantequilla derretida, el azùcar y la melaza o miel.Unir bien los ingredientes y hacer una masa como de galleta y colocarla en el molde aplanandola.(puede ser con la parte de atràs de un vaso)
Llevar a horno esta masa por 20 minutos. Dejar enfriar al retirar.

Preparaciòn del relleno

1 bote o lata de leche condensada azucarada
3 onzas o 150 grs. de crema de queso tipo Philadelphia
2 yemas de huevo
1 pizca de sal
1/2 taza de jugo de limòn
1 cucharadita de ralladura de limòn

Unir todos los ingredientes en un bowl o cuenco unir bien el queso crema con la leche condensada, agregar las yemas,la sal, el jugo de limòn y la ralladura, unir esta mezcla y colocarla sobre la masa de galletas que ya estarà frìa. Llevar a horno por unos 20 minutos fuego medio.
Cuando se retire del horno, dejar enfriar antes de cortar los cuadrados y se pueden adornar con tiras de càscara de limòn yo los pongo en el Freezer y despues los uso para adornar. (yo no pude esperar mucho porque tenìa que sacar los fotos y se desmorona un poco pero cuando està frìo no hay problema.

Sheera (Semolina pudding)

Twice are from the lovely Nupur from http://www.onehotstove.blogspot.com/ .com that have a delicious and wonderful site with Indian recipes, love them.



She ha s many recipes savoy and sweet but I made two desserts by the simple reason I have all the ingredientes, I find the two recipes simple and delicious. But I hope to try other recipes of her in future.



Ingredients



1 cup of rava (cream of wheat/semolina/farina) (I used semolina2 tablespoon of ghee/butter

2 tablespoon of ghee/butter

1 cup water

1 cup milk

3 tablespoon of sugar (or to taste)

1/2 cup chopped mix nuts (almonds,pistachios,walnuts)

2 tablespoon raisins

1 teaspoon of cardamom powder

(Im in love of cardamom I use in many things)

few strands saffron (optional I dont used)



Method



Heat the ghee or butter in a saucepan and saute the rava (semolina) till it is toasty and fragant.



Meanwhile, heat the water and milk together still is simmering.



(add the saffron strands,if using)



Add the sugar to the toasted rava and stir together.



Add the nuts and raisins and saute for a minute more.



Pour in rthe hot water/milk carefully (will be bubble vigorously) and stir constantly for several minutes till the pudding is thick and creamy.



Stir in the cardamom.Serve warm and topped with ripe banana slices, if desired (I dont have any)



Is a lovely dessert and so yummy.



EN ESPAÑOL

Budìn de semola de Nupur (India)

Esta es mi entrada para el evento de T&T que organiza mi amiga Zlamushka de http://www.burntmouth.com/ y que este mes habìa que elegir alguna receta de la encantadora Nupur de http://www.onehotstove.blogspot.com/ que tiene deliciosa recetas de la India saladas y dulces. Yo hice dos postres por la simple razón que tenìa todos los materiales ademàs que este es el ùltimo dìa para el post. (Cocinè ayer los dos postres) pero son simples y deliciosos.



Ingredientes


1 taza de rava (o semolina)


2 cucharadas de ghee o mantequilla


1 taza de agua


1 taza de leche


3 cucharadas de azùcar (o se puede poner màs segùn el gusto)


1/2 taza de nueces surtidas (pueden ser nueces, almendras o pistachios)

2 cucharadas de pasas de uva

1 cucharadita de Cardamom en polvo (es delicioso)

hilos de azafràn (opcional)


Mètodo


Calentar el Ghee o mantequilla en una olla o sartèn y agregar la semolina, hasta que estè fragante y tostada.

Mientras tanto, calentar el agua y la leche juntos hasta que hierva.

Agregar el azafràn i se va a usar.

Agregar el azùcar ala mezcla de semolina y revolver bien.

Agregar las nueces y las pasas a la mezcla y revolver bien por un minuto más.

Poner sobre la mezcla de agua/leche caliente la mezcla de semolina(cuidadosamente porque a veces borbotea un poco) y revolver constantemente por varios minutos hasta que el budìn estè espeso y cremoso.

Agregar el cardamomo en polvo. Servir tibio o caliente, con unas rebanadas de bananas encima. (no le puse porque no tenìa) pero igual quedo delicioso, debe ir bien el cardamomo con las bananas.

Oriental chicken wings (Alitas de pollo orientales)

This dish is really nice to eat at any time, and that the people that are in summer you may eat how appetizer while you wait in a BBQ by the meat or a lovely roasted fish.
You may eat too (how us today) with white rice and some green salads or tomatoes slices.
The childs really love this dish.


Ingredients

800 grs. or more of chicken wings
2 spoonful of french mustard
2 spoonful of liquid Honey
3 spoonfuls of soy sauce
1 teaspoon of ginger powder
salt and pepper
2 spoonfuls of sesamo seeds .
2 spoonfuls of oil .


Method
In a bowl place the french mustard, honey,soy sauce,ginger powder,salt and pepper. Mix well and reserve.

Clean the wings and wash and dry. Put the wings inside the sauce and keep at the fridge by 1 hour.

Heat a frying-pan with 3 spoonfuls of oil and fry the wings , turn up until be golden(10 minutes aprox) If you think is a little dry add more soy sauce. When almost are ready add the sesamo seeds.
Serve with the foil to wrap and can take the wings.
Serve with white rice or green salads.

EN ESPAÑOL

Este plato es muy rico para comer en cualquier tiempo per especialmente los que estàn en época de verano porque se puede servir como un aperitivo antes de una carne al grill o BBQ o como plato principal con arroz o/y ensaladas verdes.

Ingredientes

800 grs. de alitas de pollo o màs
2 cucharadas de mostaza francesa
2 cucharadas de miel lìquida
3 cucharadas de salsa de soya
1 cucharadita de jengibre en polvo
sal y pimienta (a gusto)
2 cucharadas de semillas de sésamo
2 cucharadas de aceite para freir sin sabor

Mètodo
En un bowl colocar la mostaza,miel, salsa de soya, jengibre,sal y pimienta.
Mezclar bien y reservar.
Limpiar las alitas de esceso de grasas , lavar y secar . Poner las alitas a marinar en la salsa ya preparada y llevar al refrigerador por lo menos 1 hora para que se impregnen bien.
Calentar en un sartén el aceite y freir las alitas para que se vayan dorando, si estàn un pco secas se puede agregar un poco màs de salsa de soya.
Esto lleva unos 10 minutos. Cuando estàn casi listas (bien doradas) agregar espolvoreando las semillas de sésamo.
Servir con papel alusa de aluminio enrollado y acompañado de arroz o ensaladas.

Tomates and Basil's Quiche

















Maybe you know I love Quiches, every time every season, and I made other one!!
Most of you are in summert but we are in winter, but the other they how a littel miracle I discover Fresh Basil when I was shopping, tomatoes we always have but when arrive the cold weather the basil is not easy to find.
So This same day I made a quiche with tomatoes and basil. In an antique post I made a Crostata de tomates, (similar) but this dough recipe is lovely so Im making almost all the quiches with this recipe.
Is easy and nice to every time specially if you have fresh basil .

Ingredients Dough

2 cups of flour
1 teaspoon of salt
100 grs. margarine or butter
1 egg

A quiche mold about 26cm


Mix the flour, the salt and margarine in a bowl making crumbles. Add the egg and join well. Make a dough. place at the fridge by 20 minutes.
Greased a quiche mold.
Take out the fridge and extend in a quiche mold or a tarte mold (I use the same to pies,quiches etc.)
Preheat the oven.

Filling Ingredients

4 or 5 beauty tomatoes
1 onion (chopped)
salt and pepper
garlic (optative)
Fresh basil
1 cup of double cream
4 eggs


Beat the eggs with salt and pepper, add the double cream, Cut the tomates, chopped onion and basill and add to the mix, empty to the mold with dough and garnish with somes pieces of tomatoes and fresh basil, Place at the oven by 30 minutes to medium heat, the mixture will be firm (how flan). When take out the oven you may add some chopped basil over the quiche if you like.

Amo los quiches, de veras y los hago siempre en cualquier època, son estupendos tambien para los que estàn en època de verano, no son difìciles, ricos y ...rapidos.
Muchos de ustedes estàn en verano pero nosotros en invierno, pero el otro dìa encontrè como un pequeño milagro Albahaca fresca (para mì es como el sìmbolo del verano) asì que hice este quiche de tomates y albahaca.
Tengo en las recetas tambièn una Crostata de tomates, es parecida y muy buena tambièn, pero la masa de este quiche es muy rica.

Ingredientes masa

2 tazas de harina
1 cucharadita de sal
100 grs. de margarina o mantequilla
1 huevo
1 molde tarta o quiche de unos 26 cm

En un cuenco o bowl mezclar la harina,sal y la margarina haciendo migajas, incoporar el huevo y unir bien, formar una masa uniforme y llevar al refrigerador por unos 20 minutos.
Engrasar el molde de quiche y cuando la masa estè lista cubrir todo el fondo y los lados, reservar.
Precalentar el horno a fuego medio/suave.

Ingredientes relleno
4 o 5 preciosos tomates maduros
1 cebolla cortada fina
ajo a ghusto
albhaca fresca
1 taza de crema fresca o nata
4huevos
sal y pimienta

Batir los huevos en un cuenco o bowl agregar sal y pimienta y la crema o nata espesa, agregar los tomates cortados a lo largo, la albahaca y la cebolla picada fina, vaciar esta mezcla en el molde con la masa del quiche, colocar arriba tomates cortados y albahaca picada y llevar a horno medio por 30 minutos, hasta que este dorado y con la consistencia firme como de flan. Servir.

Other special Birthday´s Party!!


The last weekend was the Birthday's of Gerardo's Dad, that I love so much!

We celebrated him his 90 years and you may see at the Cake (I dont make this cake) my sister in law asked the Cake in other part but was so nice an delicious cake (similar that I made for the childs but filling with Dulce de Leche). And I make this post because I love he so much and 90 years... is special I think.

The Dad's family come from Palestine and arrive many years ago, and he married with his wife Nelly here and her family come from Libanon. (you know some recipes that I made from her)





Here is Ananìas (Dad's name) in his house in a cold day with a lovely fire of the chimenney in the living, with his daughters,sons, grand childs, He had 9 childs, my hubby is the 3er and the first son , he married many years ago with Nelly (who pass away 3 years ago and he miss her a lot) and they have 9 childs, Cecilia, Verònica, Gerardo (hubby), Patricio, Marìa Angèlica,Fernando, Eugenio,Marcelo y Rodrigo, so he has many grandchilds too .



Was a lovely day, we have a Mass (Catholic family) and the Church is nearby the house so is easy go, and after we have a dinner, with the cake and the gifts etc.





Well I place this picture first because Im the mother of these childs. Here Gerardo Jr. and Marìa Esperanza give our present to their Grandad. Marìa Esperanza is hunged him.








Here is Ananìas with the Father Paolo (he is italian) and live nearby him and he make the Mass this day, the Father laughed a lot with many things that the family made this day.



He is so gentle with Ananìas and a very nice person.



In this picture I fight with hubby because I don't wanna take this picture. I look how was drunk and is not!!!


Was a little late and all these bottles!!! but I dont drink really!!! believe me!!











The following day; the hard ; We have to say good bye until other weekend, he lives in Los Angeles a city is 500 km. from Santiago, if you look his eyes he is sad and the childs too, well all wre sad, but was a lovely weekend.









I like this picture, he looks happy with his son, my hubby, Gerardo and his Dad Ananìas. before we have to return to Santiago.



Well you know, 90 years is not all days, so was a nice time and lovely weekend and the childs enjoy a lot because they love so much their cousins.



Happy birthday Dear Dad in Law again and alot of Blessings my dearest Ananìas!!!


EN ESPAÑOL


Aunque no hay receta por hoy voy a traducir igual para contarles que el fin de semana recièn pasado fue el compleaños de mi suegro, el papà de mi marido, cumplìa 90 años por lo que fue una ocasiòn muy especial.


En la primera foto se ve la Tarta que era enorme, (no la hice yo) mi cuñada la mandò a hacer a una parte especial en la ciudad de Los Angeles donde vive mi suegro. Estaba muy rica, era similar a la que le hice a los niños para el cumpleaños pero rellena con Dulce de Leche en ves de chocolate, muy buena.


La familia del Papà vino de Palestina muchos años atràs yllegaron primero a Santiago y despues se fueron instalando en el Sur de Chile, en Los Angeles.


En Los Angeles conociò a Nelly cuyo papà (abuelito Jorge) venìa del Lìbano, se casaron y tuvieron 9 hijos. Nelly muriò hace unos 3 años y el la echa mucho de menos porque eran muy unidos y llevaban muchos años casados.


Mi marido es el tercero de los hijos y el primero de los hombre. La primera es Cecilia. despuès Verònica, ahì viene Gerardo, despues Patricio, Angèlica, Fernando y luego Eugenio, Marcelo y Rodrigo. Ademàs tiene muchos nietos que le han dado sus hijos.


Fue un hermoso dìa, primero fuimos a Misa a la Catedral, que es la Iglesia que està al lado de la Casa, son vecinos.


Despues tuvimos una comida en la casa y despues los regalos y felicitaciones.


En la primera foto que se ve estan los niños (los mìos) saludando a su Tata en la entrega de regalos.


En la foto que sigue està el papà en la comida con el Padre Paolo al lado que fue èl que hizo la Misa ese dìa.


El Padre Paolo o Pablo viene de Italia y es muy buena gente y amable con Ananìas. Ese dìa se riò mucho con las historias que contaban los hermanos de todos estos años.


Despuyes hay una foto mìa, no estoy enojada ni aburrida, no querìa que Gerardo me sacara una foto a esa altura de la noche y miren todas esas botellas quien va a creer que no tomè nada????


Bueno y la sacò no màs.


Al otro dìa lo difìcil emperzar a despedirse pra volver a Santiago.


El ya estaba un poquito triste y los niños tambièn, todos estabamos un poco tristes pero fue un hermoso fin de semana.


En la ùltima foto està Gerardo (mi marido) y es una bonita foto, el papà se ve contento y Gerardo tambièn esta fue poco antes de que nos vinieramos a Santiago.


Los niños lo pasaron muy bien porque adoran a su tata y a sus primos y se reiron mucho tambièn.

Chocolate panqueke' s Torte (Torta de panqueques de chocolate)





Here is a nice panquekes chocolate 's recipe that I made to the Twin's birthday the last Sunday, they celebrate 14 years, and come some of family and their Grandparents, so was a little but nice party, because to this age the childs don't like big parties.









I make a recipe to the Cake I had and I make sometimes, of a good chef David Calquin from Chile (lovely pastries and Desserts) and for chocolate cover I made a lovely recipe of my friend Harry of I-Recipes that is in my favorites and you find some lovelies recipes of Cakes,treats and savoy he is a master I know, well I add some things (you will see) to the cover but is a wonderful recipe to Cakes and Desserts.







Here you can know some of my lovely family. In the picture begin to the left of PC, first is Gerardo Jr. my son (one of twins) and just nearby the lovely Soledad (Sole) the most little of my sister, have 12, continue is Constanza the older daughter of my sister, have 24 and is Psicologist, and down with her Marìa Esperanza, my daughter (othe other twin), behind Constanza is my Mom and the Grand mom of their crazy people, nearby is Angeles other lovely nice of mine and right her is Matìas the son of my sister.


My brother didn't come with his family because he lives near the sea, two hours from Santiago, he has two boys .


Maybe you say where is me?? I think I was at the kitchen probably! where more???? and Gerardo Dad take this picture.





Ingredients to Panquekes


2 cups of Caster sugar


2 cups of plain flour


6 eggs


400 grs. of smooth butter


Parchment paper to cut circles of a mold (I use how pattern a mold of 26 cm. the 24 cm is good too)





Method

In a bowl beat the butter and caster sugar until be smooth, add the eggs one by one and stir all.

Add the flour and mix well.

Cut aprox- 12 to 14 circles of parchment paper using a mold of 26 cm. and 24 cm. is Ok if you want a torte more little.

(this torte is Ok until 20/25 people)

Preheat the oven medium heat.

With a spatula spread the panquekes mix over the parchment paper how make a crepe or panqueke, one by one, depends of your oven I cook two panquekes by time. (But is fast)

Place at the oven by 7 minutes aprox. not more. Take out the oven turn up over a large dish and moist the paper with abrush with water to separate mor easy the parchment paper.

I m separating the layers ready with a towel paper beetwen each one.

When all layers is Ok. reserve.



Filling Torte

300 grs. solid chocolate (70% cacao)

1/2 liter of double cream

3 spoonful of caster sugar

2 spoonful of coñac



Cut in pieces the chocolate, in a pot place the double cream and caster sugar and heat, when boil, cut the fire and add the chocolate's pieces and stir well to dissolved when is chill add the coñac, stir again. Join well and when is how a cream spread at the panquekes making the layers.



Cover Torte

120 grs. sugar

80 grs. double cream

90 ml. water

2 gelatin leaf or 1 evelope and half of gelatine powder

60 grs. cacao powder

150 grs. solid chocolate



Moist in cold water the gealtin leaf of the envelopes of gelatin powder. Place a pot at the heat with the double cream, sugar and water. Stir and dissolve, add the cacao powder and heat by a while (103ºc). Cut the fire and add the solid chocolate and stir again, join well.

Wait the temperature down until 60º c. Empty the gelatin leaf or the mix of powder gelatin, remove slowly with a spatula mix well. Use when the texture is nice to cover, you may reheat again to slow heat.

(I add the solid chocolate to Harry's recipe and place the possibility to use gelatin envelopes)

Cover the cake with the chocolate mix and garnish. I garnish with chocolate's pieces and mini marshmallows over and powder with cacao's powder, you may garnish with mint leaves too is so nice.

Hice esta receta de Tarta de panquekes de chocolate para el cumpleaños de mis niños, mellizos un hombre y una mujer, que cumplieron 14 años el Domingo pasado, sòlo familia, sobrinos, mi hermana y cuñado y los abuelos porque a esta edad no son de grandes fiestas.

Hice esta receta que he hecho ya muchas veces de un chef muy bueno de aquì, David Calquin que tiene cosas deliciosas en Reposterìa y pastelerìa pero en la cubierta de la Tarta usè una receta de mi amigo Harry de I-recetas (que està en mis favoritos) que tiene estupendas recetas y es un verdadero maestro pienso yo sobre todo en pastelerìa. Le hice unos agregados a la receta, (èl es muy exacto para las cantidades) pero creo que quedò muy bien y la pedì perdòn por los cambios.

Arriba puse una foto que tomaron ese dìa y asì pueden conocer a algunos de mi querida familia: Empezando de izquierda a la derecha del PC en la foto de más arriba, está Gerardo mi hijo, uno de los mellizos,y justo al lado de él está la Sole, la más pequeña de los sobrinos, tiene 12, es un amor. Al lado la Constanza la hija mayor de mi hermana, sobre ella M. Esperanza mi otra hija que tambièn cumpliò 14.Detràs de la Constanza está mi mamà la abuela de todos estos nietos que la aman, al lado de mi mamà está María de los Angeles, mi Goyito, que está ya en la Universidad tambièn es como si fuera mi hija (y nos parecemos en todo) y al lado el Matìas, muy amigo de Gerardo que ama el fùtbol tambièn y tambien lo quiero mucho.

Ahora que miro la foto los amo a todos, pero la recomendaciòn viene muy de cerca. Los conozco a todos desde que nacieron.

Mi hermano Raúl no vino porque vive fuera de Santiago, en la playa a unas dos horas de aquì, el tiene dos hijos que tambièn quiero mucho Tomàs (ahijado mìo) y Felipe que tiene casi la edad de los mìos.

Si se preguntan donde estaba yo: en la cocina, dónde más además no sé en que momento tomaron la foto.

Ingredientes

2 tazas de azùcar glass o en polvo

2 tazas de harina normal sin polvos de hornear

6 huevos

400 grs. de mantequilla blanda.

Papel de mantequilla o similar para cortar círculos de papel para hacer los panquekes yo usè uno de 26 cm diàmetro pero se pouede usar uno de 24 si se quiere màs pequeña la tarta.

En un bowl o cuenco batir la mantequilla con la azùcar glass hasta que estè suave, entonces agregar los huevos de a uno, batiendo. Agregar la harina y mezclar bien.

Cortar 12 a 14 círculos de papel mantequilla del molde que se quiera.

Precalentar el horno.

Esparcir con una espátula la mezcla sobre los cìrculos e ir llevando al horno por unos 7 minutos, en mi horno yo puedo colocar de a dos pero si no estará bien poner de a uno. Para despegarlos cuando estén listo, darlos vueltas y humedecerlos con una brocha para retirar más fácilmente el papel. Cuando estèn listos reserve.Se van dejando en una fuente a plato grande y entremedio les coloco un pedazo de toalla de papel para que no se peguen.

Relleno Tarta

300 grs. chocolate sòlido (barra) (70% de cacao)

3 cucharadas de azúcar glass

1/2 litro de crema espesa o nata

2 cucharadas de coñac

Cortar en pedazos el chocolate,en una olla poner a calentarla crema espesa y azúcar glass y cuando hierva agregar el chocolate en pedazos, revolver hasta que se disuelva, enfriar un poco y agregar el coñac.Unir bien.

Con una espátula esparcir la crema entre las capas de panqueques para ir haciendo la torta.

Cubierta de chocolate

(La receta original de Harry no lleva chocolate sòlido y puse que se puede usar jalea sin sabor en polvo en vez de hojas de gelatina)

120 grs. de azùcar

80grs. de crema espesa

90 ml. de agua

2 hojas de gelatina o 1 sobre y 1/2 de jalea en polvo

150 grs. chocolate sòlido

60 grs. cacao en polvo

Hidratar las hojas de gelatina o la jalea en polvo en un poco de agua. En una olla poner al fuego la crema espesa o nata, azúcar y agua. Disolver y revolver, añadir el cacao en polvo y calentar a fuego fuerte hasta alcanzar los 103 ºC. Retirar del fuego y agregar el chocolate sòlido, mezclar bien disolviendo. Cuando baje la temperatura (a unos 60º c) verter las hojas de gelatina removiendo suavemente con una espátula mezclando para que no se hagan grumos. Usar cuando estè con una consistencia buena para cubrir la tarta. Si se quiere se puede calentar de nuevo a fuego suave.

Para adornar le puse chocolate en rama (tipo bariloche) encima mini marshmallows y espolvoreé un poco de cacao encima, tambièn queda linda con unas hojas de menta fresca.

Endives with cheese and waltnuts(Endivias con queso y nueces)


For these people that are in Spring/summer in N.H. this recipe is so nice, we are in winter here but we eat always salads, this is a fresh and yummy salad that I like so.


Some people don't like the endives, but well seasoned are nice and to the oven too.


In this case the season is so nice I think and the cheese and the walnuts go well with endives.


I prepare the other this large dish and Marìa Esperanza (that have 14) eat almost all.


Ingredients


6 endives (aprox 500 grs.)


180 grs. Rochefort cheese or Camembert crumbled (I use Camembert)


2 tablespoon of lemon juice


1/4 teaspoon of salt


1/4 cup of Oliva oil


1 cup chopped waltnuts


Chives chopped to powder (ciboulette)


1. In a bowl mix the lemon juice and sal, mix well, add the Oliva oil and mix again. Taste the season and reserve.


2. Open the endives leafs and wash with cold water, dry well . Place the leaves in a large dish and empty the season you make before, now add the cumbreled cheese and the waltnuts. Powder with chopped ciboulette (chives).Serve.

Para la gente que está casi ya en verano en el Hemisferio Norte esta es una receta rica y agradable para la época Primavera/Verano. Nosotros estamos en invierno pero en la casa preparamos ensaladas todo el año.

Hay gente que no le gustan mucho las endivias o endibias pero con un buen aliño son deliciosas y frescas, también son muy ricas al horno por ejemplo con un poco de queso y salsa blanca.

La gracia de este aliño y la mezcla de queso y nueces es que le quita mucho de esa acidez que tiene a veces la endivia, lo otro se den consumir dentro de unos dìas (3 a 4 dìas), no se echan a perder pero son más ricas frescas.

Yo preparè un plato grande y mi hija (M. Esperanza) se comió una buena parte.


Ingredientes


6 endivias (aprox. 500 grs.)

180 grs, queso Roquefort o Camembert desmenuzado

2 cucharadas de jugo de limón

1/4 cucharadita de sal

1/4 taza de aceite de oliva

1 taza de nueces picadas

Ciboulette o cebollín picado para espolvorear sobre la ensalada

Preparación

En un cuenco o bowl mezclar el jugo de limon con la sal, mezclar bien, agregar el aceite de oliva y mezclar nuevamente,pruebe el aliño y reserve.

Lavar las hojas de la endivias para preparar la ensalada, secar bien y colocarlas en una fuente o plato grande.

Sobre las endivias que están en la fuente o plato vaciar el aliño ya preparado. Agregar el queso desmenuzado y las nueces picadas.

Espolvorear con ciboulette picado y servir.

Mom English´s Cake






Heres is a nice and simple cake so lovely. Mom make it every time, she made the other day and I say I would like to post about this cake and she said OK.

You know many recipes I post are from her.


So I take pictures and here is. All I will say Mom made this cake all the times I can remember, to birthday, parties and others and we really enjoy.





Ingredients



200 grs. butter

200 grs. granulated sugar

5 yolks

5 whites

30 cc of Rhum

1 teaspoon of vanilla

400 grs. of flour

2 spoonfuls of baking powder

1 pinch of salt

130 grs. dry fruits (chopped)

100 grs. dark raisins

60 grs. golden raisins

1/2 cup of almonds peeled( chopped)

1/2 cup of walnuts (chopped)

1 bakeware Loaf mold (greased powder with flour)




METHOD





In a bowl beat the butter with the sugar making a smooth cream, add the yolks one by one and beat again, add the rhum and vanilla.

Add the flour, baking powder and pinch of salt, beat well with all the mixture. Add the dry fruits,raisins, almonds, walnuts (reserve someones) mix all and add the whites whipped well.


Preheat the oven to medium heat.

Empty slowly at the Loaf mold (greased and powder with flour)

Spread over the mix some chopped almonds and waltnuts

Place at oven to medium heat by 1 hour aprox, it be golden and dry.

Let chill before cut. You may powder with icing sugar.

Queque Inglés de mi Mamá

Aquí está otra rica receta de mi mamá. Este queque no es difìcil y es riquísimo, el otro dìa lo hizo acá en la casa y le pregunté si lo poníamos en el Blog y me dijo que sí.


Así que le saqué fotos y aquí está la receta para que la disfruten.

Mi mamá lo ha hecho desde siempre, para los cumpleaños, para las fiestas etc. Este y otroi queque que hace de chocolate son famosos. Cuando ella nos celebraba los cumpleaños en su casa sospecho que muchos venían más que nada por la comida, por lo demás era harto buena..


Ingredientes


200 grs. mantequilla


200 grs. azùcar granulada


5 yemas de huevo


5 claras


30 cc. de ron


1 cucharadita de vainilla


400 grs. de harina


2 cucharadas de polvos de hornear


1 pizca de sal


130 grs. de frutas confitadas picadas


100 grs pasas corrientes


60 grs, pasas rubias o golden


1/2 taza de almendras peladas


1/2 taza de nueces


1 molde largo para queque (engrasado y enharinado)


Mètodo

Batir en un bowl o cuenco el azúcar con la mantequilla hasta que tenga una consistencia cremosa, agregue las yemas una a una, bata bien y agregue el ron y la vanilla.

Agregar la harina mezclando con los polvos de hornear y la pizca de sal y las nueces, pasa y almendras.( Reservar unas pocas nueces y almendras)

Batir bien firme las claras, a nieves y agregar cuidadosamente a la mezcla ya preparada.

Precalentar el horno a fuego medio.

Colocar en el molde y esparcir encima las nueces y almendras picadas reservadas.

Cocinar en el horno a fuego medio durante 1 hora màs o menos. Debe quedar con la superficie seca y dorada.

Dejar enfriar. Se puede espolvorear con azúcar glass.o azúcar impalpable.

Passion Fruit's Pie (Pie de Maracuyá)

I love the smell of the Passion's fruit when I made this, I may smell in the kitchen the fruit parfum, is so nice and strong, we know how Maracuyà and you by Passion's fruit, in the North of Chile That have some tropical fruits (mangos, guayabas and others) we have too, but now we may find freeze in pulp or in juice, to this recipe you may use any of them or fresh fruits if you have.

I use a freeze pulp that I find in the Store and is from Perù, aahh Perù!! I dont have any problem to said you that in Perù are the most delicious desserts , I hope soon make others desserts from there and savoy dish too how Ajì de Gallina that is really delicious!

This recipe is from Colombia but I have to adapt some things and the oven times, so here is the recipe.

Ingredients (dough)

70 grs. butter
250 grs. plain flour
90 grs. caster sugar
2 yolks eggs
3 spoonfulk of milk
1 pinch of salt
1/2 teaspoon of baking powder
Ingredients (filling)

4 eggs
200 grs. granulated sugar
200 cc. double cream
250 grs. passion fruit's pulp or juice
(aprox. 5 maracuya)
4 teaspoon lemon's juice

1 mold of 26 cm aprox.

METHOD: dough
Cut the butter in slices and join with the flour in a bowl, add the sugar, milk, baking powder and yolks and the pinch of salt.- Make a dough and let rest by 20 minutes.
Preheat the oven. (medium heat)
Method filling;
Beat the eggs with the sugar until be foamy, add the double cream and the Passion fruit pulp or juice. If you use freeze pulp, desfreeze before.And finally add the leomn juice, mix well. Reserve.
Extend the dough with a roll pin if are and place in a mold pie and place at the oven by 15 minutes to medium heat. (The mold greased with buttter and powder with flour)
After the 15 minutes retire and slow the heat, empty the Passion fruit mix at the pie and place at the oven again by 15 minutes more or until is the texture how a flan and little golden.
Let chill by a while and put at the Fridge by 2 hours.
You may serve with whipped cream too, and maybe with a little of vanilla Ice cream must be delicious!

PIE DE MARACUYA O FRUTA DE LA PASION

Amo el olor de esta fruta, cuando la hice toda la cocina tenìa este olor, es un olor dulce y fuerte que me encanta. Nosotros en Chile tenemos esta fruta en el Norte de Chile (tambièn hay guayabas,mangos y otras) es un clima màs seco y caluroso pero se dan muy bien estas frutas, en Chile hay tres tipos de clima, el norte seco y caluroso, la zona central verde y con màs humedad (por ejemplo Santiago y alrededores) y al sur muchas lluvias y harta humedad, en el zona centro estàn casi todas las Viñas (y tambièn muchas frutas y aguacates ahora estàn preciosas las naranjas,mandarinas etc,)
En el sur es màs zona de trigo, legumbres, castañas ahora y tambien otras frutas, y en el verano se dan fantàstico las frambuesas y aràndanos que yo traigo congeladas para ocupar despues en el año.
Yo usè una pulpa congelada de Maracuyà que viene de Perù, aahhh! Perù ahì algunos de los màs deliciosos postres espero màs delante hacer otros y tambièn algunos como el Ajì de gallina que es muy rico.A mì me encanta la cocina Peruana.
Esta receta viene de Colombia y yo la adaptè porque los tiempos de horno eran muy extensos. Y aquì està la receta






Ingredientes
4 huevos
200 grs. de azùcar
200 cc. de crema espesa o nata
250 cc. de pulpa o jugo de maracuyà o fruta de la Pasiòn
4 cucharadita de jugo de limòn


Ingredientes masa
70 grs. de mantequilla
250 grs. de harina
90 gramos azùcar glass o azùcar impalpable
2 yemas de huevo
3 cucharadas de leche

1/2 cucharadita de polvos de hornear
1 pizca de sal

1 molde de 26 cm
Mètodo masa
Cortar la mantequilla en trozos y unir bien con la harina deshaciendo, agregar el azùcar,leche,las yemas la cucharadita de polvos de hornear y la pizca de sal.
Unir bien haciendo una masa y dejar reposar por 15 minutos.
Precalentar el horno.
Despues de los 15 minutos engrasar el molde y espolvorear con harina.
Con un rodillo extender la masa y colocar en el molde de tarta o pie y llevar a horno por unos 15minutos afuego medio.
Retirar y vaciar la mezcla de maracuyà o fruta de la pasiòn y llevar nuevamente a horno medio suave durante unos 20 minutos hasta que la mezcla està como flan, consistente y dorada
Dejar enfriar y despues llevar al refrigerador por unas dos horas.
Se puede servir solo o con crema.Pienso que con helado de vainilla tambièn debe quedar espectacular.

Front Porch Party (June 5th)




Here we have something differente but I find a lovely idea, Rhondi of http://rhondisrosecoloredglasses.blogspot.com/ is hosted a Front Porch Party and the idea is show your Front Porch or you would like to have!! Here the first is the Porch I would like to have some day (with chairs or sofa) but with plants how this.

My house is beauty and is in the country but we bought it 4 years ago and dont have a porch how this is only an space to enter in front of the door, but I have plants too and bugambillias,yes to this ideal porch I add some bugambillias I love them.

This style is typical of CHILE in South America and add other pictures like this to show you how are the typical porch with a strong influence of spanish arquitecture of the Colonial age.








This is other Colonial house typical you may find at the countryside with the colonial roof (tejas) my house has this type of roof.

This house has some chairs to rest in the afternoon specially at Spring/Summer.
These house are so lovely at winter too because many of them have wood stove and the kitchen are so large to may stay inside.













And this is similar too by the roof is different you may see the wood are other type of colonial roof.

Por hoy tenemos algo diferente, pero me encantò esta idea. Rhondi del blog

http://rhondisrosecoloredglasses.blogspot.com/ que tiene un blog precioso, està organizando una especie de fiesta de Porches (Front porch)para el 5 de Junio en que todas muestran fotos de sus porches o los que les gustarìa tener, mi casa de ahora no tiene un porche propiamente tal, (pero tengo plantas bugambillias etc.) pero es pequeño para colocar sillas por ejemplo.

Asì que estuve rescatando fotos del Porche que me encantarìa tener algùn dìa. Esta casa en que vivimos ahora es en el campo pero como ya estaba hecha nos hemos adaptado a ella y no tiene un porche grande, algún dìa espero hacerle una especie de galerìa como se ve en esta foto de arriba, poner plantas etc.bueno Dios dirà.

Aquì en Chile, especialmente en las casa del campo tenemos una fuerte influencia de la arquitectura español, que es muy linda que data del tiempo de la Colonia (1800) algunas casa son de ese tiempo pero son muy antiguas y otras son nuevas pero se construyen con ese estilo.

Bueno pasando a las fotos, la primera de arriba es el porche que me gustarìa tener, yo le agregarìa mis bugambilllias (ojalà fucsia y morada) y unas sillas para descansar especialmente en el verano.

La segunda tiene un techo precioso, o por lo menos a mì me encanta, con tejas coloniales, en la casa tengo esas mismas tejas.

En la tercera es un poco distinta con vigas a la vista que es un trabajo en madera precioso.(muy antigua)

Y la ultima es como elagantosa pero es preciosa, yo no pondrìa columnas pero el color me gusta, se llama rojo colonial.

Me acordè que arriba puse tambièn que estas casas son muy agradables para el invierno tambièn porque tienen normalmente estufas a leña o chimeneas, (conocí muchas casa de fundos o campo cuando era una niña, especialmente en el Sur) y las cocinas son preciosas grandes y acogedoras, se cocina y se come ahì mismo. Si les interesa este tema màs adelante voy a poner unas fotos de mi casa, es sencilla pero bonita, le falta el porche.

Le doy las gracias a Rhondi por este Post que me encantò por ser algo diferente y asì uno puede mostrar algo de la vida acà en Chile aunque sea un pedacito.

Prawn's quiche(Quiche de camarones)



 


What's you may say about a Prawn's quiche only : is delicious!! I had this yummy dough recipe (I made differents quiches with salads I love them) and I want to make something with prawns.


(I saw a lot of prawns in Kevin's Blog http:/closetcooking.blogspot.com/ If you don't know visit his recipes are to die for, seriously)


And the prawn's filling was my own idea that I had about other quiches I always made.




At the right a little mini quiche that María Esperanza (daugther )make with . I think is so cute.

Ingredients
To dough
2 cups of plain flour
1 teaspoon of salt
100 grs. of margarine or butter
1 egg
1 quiche tin about 26 cm. diameter
Method
Mix the flour, salt and margarine or butter making crumbs, add the egg and join all well, the dough be smooth (if you think is a little dry add 2 spoonfuls of water only to moist)
Let the dough rest to normal temperature by 20 minutes.
Whein is ready with a roll pin extend the dough, greased the tin and powder with flour. Place the dough over the tin.Reserve.
Preheat the oven to medium heat.
Ingredients to filling
300 grs. of prawns
3/4 cup of double cream
4 eggs
40 grs. of grated cheese
salt
pepper
Method to filling
Beat the eggs in a bowl, add the double cream and prawns (You can use prawns freeze or fresh)) salt,peper and grated cheese, mix well.You may reserve someones prawns to garnish the center of the quiche.
Empty this mix over the tin with dough and place at oven by 30 minutes to medium heat. Will be ready when is a little golden and the mixture is firm.
We serve with salad of chopped lettuce and was so fine. You may serve with others salads too.

Què se puede decir de un Quiche de camarones??? que es delicioso, por lo menos para los que nos gusta la comida del mar.
Para los que piensen que a veces no hago tantas cosas de mar, es un problema solamente de costos, aquì es muy caro pero cuando voy al Super siempre me traigo algo como salmòn o camarones o choritos etc.
Hace dìas que estaba con la idea de los camarones porque voy mucho al Blog de Kevin y ha hecho tantos camarones!!! (Vean su blog es fantàstico y con fotos preciosas es http://closetcooking.blogspot.com/)
Tenìa una receta de masa de quiche que hago siempre (con espinacas, champiñones etc.) y el invento del relleno fue mìo pero no es dificil.
Mi hija hizo un mini,mini quiche con masa que me sacò y ahì lo pongo por que lo encuentro lindo so cute como dicen nuestros amigos.
Ingredientes masa
2 tazas de harina
1 cucharadita de sal
100 grs. de margarina o mantequilla
1 huevo
Un molde para tarta o quiche
Método:
Unir mezclando la harina,sal y la margarina o mantequilla haciendo como granulado, agregar el huevo y unir bien. Formar una masa uniforme y dejar descansar a temperatura ambiente por 20 minutos.
Precalentar el horno a fuego medio.
Cubrir el molde con la masa que extendemos con un rodillo (el molde engrasado y con harina) y reservar.
Relleno para quiche
Ingredientes
300 grs. camarones
3/4 taza de crema espesa
4 huevos
40 grs. queso rallado
sal y pimienta
Mètodo
Batir bien los huevos en un bowl o cuenco y agregar la crema espesa,luego los camarones o gambas (si son congelados, descongelarlos previamente y secarlos un poco), agregar sal y pimienta y el queso rallado, mezclar bien.
Si se quiere se reservan algunos camarones para adornar el centro del quiche.
Vaciar esta mezcla sobre el molde forrado con la masa y llevar a horno por unos 30 minutos fuego medio, estarà listo cuando este ligeramente dorado y la mezcla cuajada.

Se puede servir con ensaladas, nosotros lo comimos con ensalada de lechuga y fue estupendo.
