Tangerinas Mousse







I arrive again! If you dont knw I was with a internet problem by a week, but I come back thanks God!! and Thanks to all loveliest friends that asked by me, you are so sweet, I miss you all a lot!!

Before I had my internet problem I had this recipe ready but I cannot made the Post.

This Tangerinas Mousse is to my friend Ruth of http://justaddeggs.blogspot.com/ to Bookmarked recipes.

And this recipe is from Paula Cocina (año 1990) Rosario Valdes Chadwick (she is and cook editor and teacher cook)

Here we enjoy the last tangerinas (I love them) but in the N.H. are in time is how oranges and apples a delicious fruit to eat and make some desserts.

Ingredients
Mousse

6 eggs

1/2 cup of sugar

1 cup of whipped cream




Ingredients Syrup

1 cup and half of tangerina juice

1 tablespoon of grated tangerina peel

1 tablespoon of Orange Liqueur (optative)

1 cup and half of sugar

Method

1.Place the tangerine juice in a pot with the sugar,liqueur and grated peel, heat to medium heat until is boil (a few minutes) to make a thicken syrup.


2. Meanwhile beat the yolks with 1/2 cup of sugar until the batter is foamy.Add the middle of the tangerinas syrup to the yolks and beat until is chill. Reserve the other part of the syrup.



3. In a bowl whipp the whites with a pinch of salt until are firm.

Incorporate the meringue to the yolks mix, add carefully the whipped cream to the mix. Mix well and empty in a large pyrex to mold or in little silicone pans.

Place in the Freeze and let buy 2 hours.

Desmold and serve in plates with the tangerines syrup and garnish with mint.

Mousse de tangerinas

Para los que preguntaban por mì muchas gracias, la verdad como dije estuve sin internet y esta receta la tenía lista justo el día que se cortò la conección.

La preparè para Ruth de http://justaddeggs.blogspot.com/ para Bookmarked recipes y la tomè de Paula Cocina (revista chilena) año 1990 de Rosario Valdes Chadwick que era la Editora de cocina en ese tiempo y que tiene excelentes recetas. L admiro mucho.


Ingredientes

Mousse

6 huevos separados

1/2 taza de azùcar

1 taza de crema o nata batida

Almìbar de mandarinas o tangerinas


1 taza y 1/2 de jugo de mandarinas


1 cucharada de ralladura de mandarinas


1 taza y1/2 de azùcar


1 cucharada de licor de naranja o mandarinas




1. En una olla colocar el jugo de mandarinas, azùcar y licor.Llevar a ebullición y hervir hasta que el almìbar estè de pelo.


2.Mientras se prepara el almìbar batir las yemas con 1/2 taza de azùcar hasta que la mezcla estè espumosa. Agregar la mitad del almìbar de mandarinas a las yemas y batir hasta enfriar.Reservar el resto del almìbar


En un Bowl batir las claras hasta que estèn firmes con una pizca de sal, e incorporarlas a la mezcla de yemas,añadir cuidadosamente la nata o crema batida. Verter la mezcla en moldes individuales o un molde grande y congelar en el freezer por 2 horas.


Despues desmoldar y servir acompañado del resto del almìbar de mandarinas. Adornar con hojas de menta.

Ricotta Pie with raisins (Küchen de Ricotta)


Here we have Pies and küchen really I dont know the difference but all are yummy, Pies normally come from recipes from USA and UK (lemon Pie,apple pie raspeberries pie etc.) and Küchen come from the south of Chile where many years ago arrive alot of german people and made the South their home and life.
Really the best Küchen I tasted are from the South Valdivia, Puerto Montt, Puerto Varas etc.
So I have a Label called : Küchen if you want to see more.
To my friends Kako in Suiza and Daziano in Canada this Küchen for you.



Ingredients
Dough:

1 egg
5 tablespoons of sugar
1 cup of flour
60 grs. butter
1 teaspoon of baking powder

In a bowl mix the butter and sugar, stir and add the baking powder, the flour and finally the egg.Join weel making a smooth dough.
Place the dough with a plastic wrap by 10 minutes in the fridge.
Later place the dough in a Tart or Pie mold (24 or 26 cm. diameter)
Preheat the oven to medium heat.


Ingredients
Ricotta Stuffed

300 grs. Ricotta cream cheese
1 tin condensed milk (sweetened)
2 eggs
1 teaspoon liquid vanilla
1 teaspoon grated lemon peel
1/3 cup of flour
2 tablespoon of corinto raisins

Mix the Ricotta cheese with the yolks eggs and add the condensed milk, vanilla and grated lemon peel.
Add the flour slowly and mix well. Beat the whites and add to the batter, finally add the corinto raisins.

Empty the batter over the dough in the mold.

Place in the oven to medium heat by 40 minutes until the ricotta mix is firm and little golden. Let cool by a while and you may place in fridge until you will serve.

Küchen o Pie de Ricotta

Realmente como decía arriba no sé bien la diferencia entre Pies, o Küchen pero aquí tenemos los dos y son más bien típicos del Sur de nuestro país, aunque ahora se ven en todas partes.
Pienso que los Pies (de limón, de manzanas, de frambuesas etc.) viene más de Inglaterra y USA, y los Küchen son más típicos del Sur de Chile, de hecho los más ricos Küchen los he comido en el Sur de Chile, Puerto Montt,Puerto Varas,Valdivia etc.
Esto sucede porque muchos años atrás llegaron muchos alemanes vivir en el Sur y de ahí que nos encante la repostería y pastelería del sur.
Si tu vas al sur en el Verano, en muchas casas (por lo demás preciosas) tienen un letrerito que dice "Se vende Küchen" y es tipico el alojamiento con desayuno y ...con küchen.

Esta recetas va con mucho cariño para la Kako (chilena en Suiza) y Daziano (chileno/Italiano) en Canadá.Para que recuerden los típicos Küchen.

Ingredientes masa

1 huevo

5 cucharadas de azúcar

1 taza de harina normal

60 grs. de mantequilla

1 cucharadita de polvos de hornear

En un bowl unir la mantequilla y el azúcar y batir uniendo bien, agregar los polvos de hornear, despues agregar la harina y el huevo. Hacer una masa suave.

Colocar esta masa envuelta en un film plásticos por 10 minutos en el refrigerador.

Despues sacarla y colocar en un molde de tarta,pie o Kuchen (24 o 26 cm diámetro yo uso los dos tamaños, la unica diferencia que uno será más pequeño.

Pre calentar el horno a temperatura media.

Relleno de Ricotta

Ingredientes

300 grs. de ricotta (o 200 grs. y un yogurt natural)

1 lata o bote de leche condensada

2 huevos

1 cucharadita de vainilla líquida

1 cucharadita de ralladura de limón

1/3 taza de harina normal

2 cucharadas de pasas corinto

En un bowl mezcle la ricotta con la leche condensada (si se va a ocupar la ricotta de 200 agregar el yogurt natural también)y las 2 yemas, agregar la vainilla y la ralladura de limón.

Agregar la harina uniendo bien a la mezcla, batir las dos claras y agregarlas a la mezcla en forma suave y luego las pasas corinto, cuando esté lista vaciar sobre el molde con la masa de pie o küchen y llevar a horno medio por aproximadamente 40 minutos hasta que la mezcla se vea firme y dorada, dejar reposar afuera del horno y luego dejar un rato en el refrigerador y servir frío.

Lemon Muffins with Poppy seeds




Really many of you knowI live at country so when I haven't bread sometimes I made muffins or soma cake, so this muffins to this ocassions that we sont have bread and need some to breakfast and is excellent to send to the child's school how a little lunch.

This is my entry to this week to Bookmarked recipes of Ruth in http://justaddeggs.blogspot.com/ and this recipe is from a Chef of my country so good and her name is Noelle Haddad and she said this muffins are so healthy.

Ingredients

(12 servings)
2 cups of all purpose flour

3/4 cup of sugar

3 teaspoon of baking powder

1/2 teaspoon of salt

1/2 cup of Poopy seeds

3/4 cup of low fat milk

3 tablespoon of vegetal oil

1 whipped egg

1 tablespoon of grated lemon peel


1. Preheat the oven at 200ºC and place paper cupcakes in muffins mold.

2.Mix the flour, poppy seeds.sugar and salt and baking powder and mix.

3.In othe small bowl beat the milk and the oil, and add the whipp egg and grated lemon peel. Join the two mix and mix well.

4. Empty the mix in the muffins molds and sprinkle with more poppy seeds.

5. Bake at oven by 20 minutes

6. Retire when are little golden and dry.

Muffins de limón con semillas de amapola (12 unidades)




Muchas veces cuando no tengo pan (ya que vivo como en el campo) hago muffins o algún cake, me sirven para el desayuno o para que los niños lleven al colegio. Esta receta muy buena es de una Chef de Chile Noelle Haddad y esta es mi entrada a Bookmarked recipes de Ruth en http://justaddeggs.blogspot.com/


Ingredientes
2 tazas de harina sin polvos de hornear

3/4 taza de azúcar

3 cucharaditas polvos de hornear

1/2 cucharadita de sal

1/2 taza semillas de amapola

3/4 taza de leche semi descremada

3 cucharadas aceite vegetal

1 huevo batido

1 cucharada ralladura de limón


1. Precalentar el horno a 200º C.

2.poner moldes o capirotes de papel en el molde de muffins.

3.Mezclar la harina con las semillas de amapola, azúcar,sal y polvos de hornear.

4.Aparte batir la leche con el aceite,huevo y ralladura de limón.Unir ambas mezclas revolviendo.

5.Verter en los moldes la masa y espolvorear encima con semillas de amapola y hornear unos 20 minutos hasta que esté dorados y secos.

Nota: las semillas de amapola se venden en supermercados y Centros de venta de comida natural, se encuentran con el sésamo y otras cosas del mismo tipo.

S' mores Cheescake with strawberries

For the people is going to say me: But we dont have strawberries at this time!! I have to say I used freeze berries and some.......fresh strawberries, we have someones now but so cost of course! I adapted this recipe from Bonn Appetit magazine, July 2008.
Ingredients

Crust

1 1/2 cups graham cracker crumbs (1 packet)

3 tablespoon of sugar

6 tablespoon unsalted butter melted

Filling

9 ounces high quality milk chocolate chopped

2 packages cream cheese room temperature(8 ounces c/u)

3/4 cup sugar

1/2 teaspoon of salt

3/4 cup heavy whipping cream

3 eggs

Topping

1 cup sugar

2 large egg whites

3 tablespoon water


1 teaspoon cream of tartar

1/2 teaspoon salt

12 large marshamallows cut into quarters

1/2 teaspoon vanilla extract

1 1/2 cups of strawberries or raspberries (fresh or freeze)

METHOD

Crust: Preheat the oven at 190º C . Mix crumbs and sugar in medium bowl.Add melted butter, stir until mixture is evely moistened.Press onto bottomof 9 inch diameter springform pan. Bake until set,about 12 minutes.Remove from oven, cool. Reduce oven temperature to 170º aprox.

Filling: Stir chocolate in top of double boiler set over barely simmering water until smooth.Remove from over water and cool to lukewarm,stirring occasionaly.

Combine cream cheese,sugar and salt in a processor and blend until smooth.With motor running, add whipping cream through feed tube and process just until blended. With motor running add melted chocolate,then add eggs 1 at a time,blending and scraping down side after each addition until mixture is smooth.Pour batter over crust in pan.


Bake cake until outer edge is slightly puffed and cake is barely set in center about 50 minutes. Transfer cake to rack. Chill uncovered until cold, 4 to 5 hours. Cover and keep refrigerated.


Topping: Whisk sugar,egg whites, 2 tablespoons of water,cream of tartar and 1/2 teaspoon of salt to blend in a large metal bowl.


Set bowl over saucepan of simmering water,whisk constantly until sugar dissolves and mixture thickens and is hot to touch,about tres minutes. Remove bowl from over water and stir in marshmallows (keep water simmering in saucepan). Let stand until marshmallows soften, about 3 minutes . Set bowl with mixture over simmering water, using handheld electric mixer, beat until stiff shiny peaks form,about 4 minutes.Beat in vanilla.


Scrape topping onto cheesecake.Using metal spatula,spread topping ti edges of cake.Let stand until set about 15 minutes.


Using kitchen torch,lightly brown topping in spots. (or preheat broiler about 2 minutes) Chill cake until cold. Serve with berry mixture alongside.

Cheescake the fresas con topping de marshmallows

Decía que seguramente me diràn pero no tenemos fresas, pues yo ocupé unas congeladas que tenía y unas poquitas frescas porque aún estàn muy caras, ahora como estàn las cosas muy baratas no van a estar.

Esta receta la adapté de una de Bone Appetit de Julio/2008 y realmente es deliciosa, como para hacerla para algo especial, digo yo.

Ingredientes

Masa base:

1 y 1/2 taza de galletas tipo cracker molidas (un paquete)

3 cucharadas de azúcar

6 cucharadas de mantequilla sin sal derretida

Relleno:

1 chocolate de 9 oz (como Lindt) cortado en trozos

2 paquetes de queso crema a temperatura ambiente

3/4 taza de azúcar

1/2 cucharadita de sal

3/4 taza de nata o crema batida

3 huevos

Topping o cubierta:

1 taza de azúcar

2 claras de huevo

3 cucharadas de agua

1 cucharadita de cremor tértaro

1/2 cucharadita de sal

12 malvaviscos cortados en cuartos

1/2 cucharadita de vainilla

1 taza y 1/2 de fresas o frambuesas (congeladas o frescas)

Masa: Precalentar el horno a temperatura media a 190º C. Mezclar las galletas molidas con el azúcar en un bowl mediano. Agregar mantequilla derretida, batir hasta que la mezcla este suave. Colocar en un molde para tarta de aproximadamente 26 cm de diámetro. Cocinar por 12 minutos. Retirar del horno,dejar enfriar. bajas el calor del horno a 170ºC.

Relleno; Colocar el chocolate trozado en un bowl a baño maría, con agua caliente hasta que esté suave. Retirar del agua caliente y dejar entibiar, revolver ocasionalmente.

Mezclar el queso crema.azúcar y salen un procesador o similar para suavizar la mezcla, Con el motor funcionando agregar la nata o crema hata que esté todo bien unido. Agregar el chocolate derretido con el motor del procesador andando, con cuidado. entonces agregar los huevos de a uno. mezclando bien hasta que la mezcla esté suave.

Colocar sobre la masa del cheescake.

Llevar a horno hata que esté compacto, cerca de 50 minutos.Retirar y dejar enfriar. Dejar de 4 a 5 horas. Dejar por mnientras en el refriogerador.

Topping o cubierta;Batir el azúcar,las claras de huevo, las cucharadas de agua y el cremor tártaro y la 1/2 cucharadita de sal y colocar en un bowl de metal a baño maría . Colocar el bowl sobre un sartèn con agua caliente, revolver constantemente hasta que el azúcar se disuelva y la mezcla se ponga espesa, cerca de tres minutos. Retirar del agua y agregar los malvaviscos (mantener el agua caliente del sartèn) Dejar hasta que los malvaviscos se suavizen, cerca de tres minutos, batir con batidora elèctrica, batir hasta que elmerengue se vea firme,cerca de 4 minutos, agregar la vainilla.

Esparcir sobre el cheescake. Dejar reposar unos 15 minutos.

Se puede dorar con un soplete o al horno por unos 10 minutos. Retirar y dejar enfriar. Colocar en un plato, servir con las fresas o frambuesas.

Sesame Glazed Chicken


This nice recipe I adapted from Martita Serani (Chef and Cook teach from here) in "Soy an sesame recipes" Childs love chicken but I like to make of different forms, I weren't sure if they could like this but really love, is really so tasty.



Ingredients (4 to 5 servings)

4 or 5 thighs chicken
salt and pepper
Glaze:
1 tablespoon of mustard
1 tablespoon of liquid honey
2 tablespoon of toasted
sesame seeds
2 tablespoons of fresh Orange juice
1 tablespoon of soy sauce
1 teaspoon of ginger powder

1. Preheat the oven (medium to high), seasoned the chicken thighs with some lemon juice and salt and pepper and place ina pyrex.

2.Join all the glaze ingredients in a glass jar (Mustard,honey,sesame seeds,orange juice,soy sauce and ginger) stir and heat at the microwaves by 1 minute and 15 seg. to high level until the mix is smooth.

3. With this glaze brush all the chicken and place at the oven by 30 minutes.

After 30 minutes retire the pyrex with the chicken and brush again with the glaze and place at oven by 15 minutes more or until is golden dark.

Serve the chicken in a large dish with the glaze juice. Serve with white rice or green salads.

Pollo glaseados con sésamo

(4 a 5 porciones)

Ingredientes

4 a 5 tutos de pollo

sal y pimienta

Glaseado:

1 cucharada de mostaza

1 cucharada de miel líquida

2 cucharadas de sésamo tostado

2 cucharadas de jugo de naranja

1 cucharada de salsa de soya

1 cucharadita de jengibre en polvo

1.Precalentar el horno, a temperatura media/alta. Aliñas el pollo con sal, pimienta y un poco de jugo de limón, si está con piel aliñando bien la carne.Yo le saco la piel antes)

2.Combinar en una jarro pyrex los ingredientes para el glaseado, (mostada,miel,sésamo, jugo de naranja,salsa de soya,jengibre en polvo) revolver bien y poner en microondas a 1 minuto y 15 seg, potencia alta, hasta que la mezcla esté homogénea y suave.

3.Pincelar el pollo con esta mezcla por todos lados y llevar a horno por 30 minutos. Transcurrido este tiempo, retirar el pollo del horno, pincelar de nuevo con la mezcla y llevar 15 minutos más o hasta que el pollo esté còmpletamente dorado.

Poner el pollo en una fuente de servir, con los jugos del glaseado y servir con arroz blanco o ensaladas verdes.

Rum Raisin Applesauce Cake


This time is special to make these Cakes specially the most of you that are in Autumn! This lovely Rum raisin cake Is from Good Housekeeping magazine, February 2002 in Pounds Cakes and is my entry to Bookmarked Recipes of Ruth in http://justaddeggs.blogspot.com/

Ingredients


2 1/2 cups all purpose flour

1 1/2 teaspoon grounds cinnamon

1 teaspoon of baking soda

1/2 teaspoon salt


3/4 cup brown sugar


1/2 cup granulated sugar

1/2 cup butter or margarine

2 large eggs

1/3 cup dark Jamaican rum

2 teaspoon vanilla extract

1 1/4 cups applesauce

1 cup dark seedless raisins


1. Preheat the oven to 190º C Grease a baking pan (such as a Bundt) dust with flour.

2. In a bowl combine flour, cinnamon,baking soda,salt and allspice, set aside.

3. In large bowl, with mixer at low speed,beat sugars with butter until blended,scraping bowl often with rubber spatula. Increase speed to medium-high, beat until creamy, about 3 minutes,occasionally scrapping bowl.

4. Reduce speed to low, add eggs, 1 at time,beating well after each addition.Beat in rum and vanilla.Alternately add flour mixture and applesauce.begining and ending with flour mixture. Stir in raisins.

5. Spoon batter into pan and spread evenly.Bake 50 to 55 minutes or until toothpick inserted in center of cake comes out clean.

6 Cool cake in pan by 15 minutes. For flutted pan, loosen cake from pan. Invert cake directly onto wire rack to cool completely. For tube pan with small metal spaputa,loosen cake from side and center tube of pan.

Invert cake onto plate, immediately invert again.Glaze cooled cake with Brown sugar rum glaze.


Brown sugar rum glaze

Ingredients

1/4 cup brown sugar

3 tablespoon of butter (no substitutions)

1 tablespoon dark Jamaican rum

1/3 cup confectioners sugar

1. In a glass measure Jar,heat brown sugar and butter in microwave on High, by 1 minute and 15 seconds to 1 minute and 45 seconds until bubbly,stirring twice during cooking. With wire whisk,beat in rum,then confectioners' sugar until mixture is smooth.

2.Inmediately pour claze over top of cooled cake. Let cake at least 20 minutes to set before serving.

Notes: If you dont have applesauce you may made cook two green apples with a little sugar by a while, to make as a puree.(I made it)

This day I made I dont have cofectionary sugar, is importante the glaze is so good with it but I hadn't.

Cake de Ron y pasas con salsa de manzana

Para la mayoría de ustedes que están en Otoño es un muy buen tiempo para hacer este tipo de Cakes (aunque salvo pleno verano los hago igual) , porque es más agradable hacerlos en esta época. Este cake delicioso de rom y pasas lo saqué de la revista Goodhousekeeping de Febrero del 2002 y es mi entrada para Bookmarked recipes de Ruth en http://justaddeggs.blogspot.com/

Ingredientes

2 y1/2 taza de harina normal

1 y 1/2 cucharadita de canela en polvo

1 cucharadita bicarbonato de soda

3/4 taza de azúcar rubia

1/2 taza de azucar granulada normal

1/2 taza de margarina o mantequilla

2 huevos

1/3 taza de Ron de Jamaica u otro

2 cucharaditas de extracto de vainilla

1 1/4 taza de salsa de manzanas


1 taza de pasas negras sin semillas



1. Precalentar el horno a 190º C (horno medio). Enmantequillar un molde apto puede ser con anillo u otro, espolvorear con harina.

2.En un papel mantequilla o bowl combinar harina,canela,bicarbonato de soda y sal, reservar.

3.En un bowl grande, con una batidora a velocidad lenta.batir el azúcar con la mantequilla hata que esté mezclado, con una espátula junte lo que quede en los bordes.Aumente la velocidad a mediano/alto, batir hasta que esté cremoso. cerca de 3 minutos.

4.Reducir la velocidad a suave,agregar los huevos de a uno cada vez, batir bien. Agregar el ron y la vainilla. Alternar con la mezcla de harina y agregar la salsa de manzana, agregar las pasas.

Poner el batido en el molde. Cocinar de 50 a 55 minutos o hasta (probando con un palito o similar) .

Enfriar el cake en el molde al menos durante 15 minutos. Despues sacarlo cuidadosamnete del molde dejarlo enfriar y traspasarlo a un plato. Cubrir con el glaseado de azucar rubia y ron .

Glaseado de azúcar rubia y ron

Ingredientes

1/4 taza azúcar rubia
3 cucharadas de mantequilla
1 cucharada de ron de Jamaica o similar
1/3 taza de azúcar glass o impalpable

1. En un jarro de vidrio tipo pyrex (para microondas) calentar el azúcar rubia con la mantequilla en potencia alta durante 1 minuto y
15 segundos hasta 1 minutos y 45 segundos, hasta que comienze a burbujear, durante la cocción revolver unas dos veces, agregar el ron y el azúcar glass hasta que se forme una textura cremosa.
Cubrir con este glacé el Cake dejando escurrir por los lados, dejar secar unos 20 minutos antes de servir.
Nota: En el momento no tenía azúcar glass, es importante para esta receta queda más sólida la cubierta.
Si no tienen puré o salsa de manzanas, se cocinan dos manzanas verdes con 1/2 taza de agua fría y un poco de azúcar hasta que esten blandas,así lo hice yo.

Poached eggs and parmesan cheese over toasted bread with pistou

You dont believe this: I saw the pictures and Im hungry with this and dont happens a lot, we see a lot of recipes in the blower world and magazines,books etc. I like to imagine the recipe but not always I feel hungry.

This recipe is from Bon Apéttit of August 2008 and I love it. Is fantastic too all of you cook only to one or two persons. Normally I make recipe to 4 or 6 and tell you make the middle of the recipe but to this you will not problem.

Ingredients (2 servings)

1/3 cup fresh or dry basil leaves

1/2 small garlic clove

6 tablespoons of oliva oil

4 large eggs


2 slices of bread brioches or other,toasted

Parmesan cheese shavings

Puree basil,garlic and oil in mini processor until very smooth. Season pistou to taste with salt and pepper.

Add enough water to medium skillet to measure 1 1/4 inches.Sprinkle salt generousley into water.Bring water to simmer over medium heat.Crack eggs 1 at a time and gently sleep into water. Cook until egg whites are just set and eggs yolks are still runny,about 3 minutes,

Place hot toast on plates.Top each with parmesan.Using slotted spoon,transfer 2 eggs,well drained to each piece of bread. Sprinkle eggs with salt.Drizzle with some of pistou and serve. Perfect to a lunch. Enjoy.

Huevos pochados con queso parmesano sobre pan tostado con pesto (2 porciones)

Uds. no van a creer pero miraba las fotos ahora y me daba hambre.

Y esto no me pasa mucho con las recetas, es tanto la cantidad de recetas que uno ve en los Blogs (deliciosas), revistas y libros pero con esta me pasó.

Esta receta es de la revista Bon Appetit de Agosto, 2008 y es fantástica para esos amigos que tienen cocinar sólo para uno o dos personas, en la mayoría de las recetas viene para 4 o 6 y aconsejo calcular la mitad de la receta, pero en este caso no hay problema, está pensado para dos personas.

Ingredientes

1/3 taza de albahaca fresca o seca

1/2 diente de ajo

6 cucharadas de aceite de oliva

4 huevos

2 panes tostados tipo brioche u otro

queso parmesano en tajadas pequeñas


Moler la albahaca,ajo y aceite con un mini procesador u otro similar.

Sazonar el pesto con sal y pimienta al gusto

Poner a calentar agua en una olla mediana. Colocarle sal al agua.Hacerla hervir a fuego mediano. Colocar en la olla cuando el agua esté hirviendo los huevos de a uno. Cocine hasta que la clara del huevo esté lista y la yema aún se mueva, es cerca de tres minutos.

Ponga las tostadas en platos, agregue encima pedazos de queso parmesano y usando una espumadera, coloque dos huevos en cada tostada. Aliñe con sal los huevos,coloque encima un poco de pesto y sirva. Perfecto para un almuerzo o merienda. >

Chicken Pot Pie and ..& Spring in the South H.

Here in this part or world the Spring is coming soon, but we have yet so cold nights and hot in the morning, some days is cloudy and others rain a little, but the weather is not normal now.

But when I saw my garden and little plants grow up is amazing me the little miracle of each season, when we arrived at this home 4 years ago, you dont believe but all here was stones
, herbs, so we haven't trees, flowers or plants.
Well here is my camelias that I love so, and my mint. Always want to have camelias because in the South in my Grand Ma House she had three camelias so beautiful because there the weather is better to this, more rain and moist, here is most dry, but my little camelia is grow up.
An this mint is that I use to my desserts and others things, is so healthy, thanks to my auntie Manuela that said me to plant near water.

Chicken Pot Pie

(6 servings)

Ingredients

Crust

1 and half cup of all purpose flour

1/2 teaspoon of salt

1/2 cup of chilled unsalted butter cut into cubes

3 tablespoons (or more) of ice water

1 egg yolk whisked to blend with one tablespoon water(for glaze)

Filling

6 tablespoon of butter room temperature divided

5 tablespoon of allpurpose flour

2 tablespoon of olive oil

200 grs. mushrooms sliced

1 cup chopped onion

1 cup cubes celery

1 cup cubes peeled carrots

1 1/2 tablespoon chopped fresh thyme

1 garlic clove minced

1 cup dry white wine

2 1/2 cups of chicken (or more) broth

5 cups coarseley chopped or torn roast chicken, skin and bones removed

1 1/2 cups frozen green peas

1/2 cup whipping cream

1/2 cup chopped fresh italian parsley



Crust

Blend flour and salt in processor. Add butter and blend, using on/off turns, until mixture resembles coarse meal. Add 3 tablespoons ice water, blend until moist clumps form,adding more ice water by teaspoon if the dough is dry. (I made this dough without the processor and was so good)

Gather dough into ball. flatten into rectangle.Wrap in plastic film, chill at least 1 hour in the fridge.

Preheat the oven to 220 º C.Line baking sheet with parchment.Roll out crust on floured surface to 12x8 inch rectangle. Cut into 6 equalrectangles. Transfer to prepared sheet,spacing apart.Pierce crusts with fork, then brush with egg glaze.Bake until light golden, about 15 minutes.Carefully run long sharp knife under crusts. Cool on sheet.

Do ahead: Can be 8 hours ahead.Let stand uncovered at room temperature.



Filling

Mix 4 tablespoon of butter and flour in a small bowl until smooth.

Melt 2 tablespoons butter with oil in large wide pot over medium/high heat. Add mushrooms,onion,celery, and carrots, sauté until vegetables start to soften and brown, about 10 minutes.

Add thyme and garlic, stir 3 minutes. Add wine boil until almost evaporated, about 3 minutes. Add 2 1/2 cups chicken broth, bring to simmer. Add butter flour mixture, 1 tablespoon at a time, whisk until incorporated and mixture boils. Reduce heat,simmer until sauce thickens,often,about 5 minutes. Stir in chicken, peas, cream and parsley. bring to simmer .Season with salt and pepper .

Do ahead: Can be made 8 hours ahead.

Preheat the oven. Transfer filling to baking dish.Carefully place crust stop filling. Bake until heated through,about 20 minutes:let rest 5 minutes.



EN ESPAÑOL

En esta parte del mundo la primavera está comenzando a llegar y yo lo noto más que nada en mi jardín. Porque el clima como todos saben está medio raro, frìo en la noche, calor en la mañana, algunos dìas nublados, otros con viento etc.



Siempre cuando esta brotando todo pienso que es como un pequeño milagro el que todo comienza de nuevo, plantas que a veces no tenían mucho futuro estàn con brotes.

Cuando llegamos a vivir aquì hace 4 años, mirè y me deprimì de inmediato, puras piedras,malezas, tierra por donde se mirara (y basura aunque sea increible) la casa ya se habìa arreglado (vidrios rotos, paredes rayadas etc.) pero el jardìn, nunca se habìa hecho nada, de hecho primero se pasó un arado con un caballo para acomodar la tierra y sacar piedras.

Bueno despues de 4 años e sun placer compartir con ustedes fotos de mis camelias y menta.

Adoro las camelias, mi abuelita en Concepciòn (al sur) tenìa tres maravillosos arboles de camelias (blanco y rosados) allà se dan espectaculares porque el clima es más hùmedo, llueve màs etc. aquì cerca de Santiago el clima es màs seco y no llueve tanto.

Pero mi pequeña camelia se ha defendido y cuando tiene algunos botones lindos le pongo a la Virgen. (Las rosas todavìa no brotan) bueno y la menta la han visto en los postres y otras cosas que hago.

Traje esta menta cuando llegué en un pequeño macetero y mirenla ahora, se aclimatò super bien,mi tìa Manuela me recomendò que la pusiera cerca de una llave de agua y asì ha sido. (Gracias tìa)

Pie de pollo


Ingredientes Masa


1 y 1/2 taza de harina normal


1/2 cucharadita de sal


1/2 taza de mantequilla sin sal en cubos


3 cucharadas de agua frìa


1 yema de huevo disuelta en una cucharada de agua


(para el glacè)


Ingredientes relleno


6 cucharadas de mantequilla atemperatura ambiente


6 cucharadas de harina normal


2 cucharadas de aceite de oliva


200 grs, de champiñones cortados en rodajas


1 taza de cebolla picada


1 taza 1/2 de apio en cubos


1 taza 1/2 zanahorias peladas y cortadas


1 y 1/2 cucharada de tomillo fresco


1 diente de ajo molido


1 taza de vino blanco seco


2 y 1/2 tazas de caldo de pollo


5 tazas de pollo cortado en trozos cocido sin huesos ni piel


1 y 1/2 tazas de arvejas o guisantes congelados


1/2 taza de crema o nata espesa


1/2 taza de perejil fresco picado


Masa: Unir en el procesador (se puede a mano tambièn) la harina y la sal. agregar la mantequilla y unir bien, si usa el procesador usando on/off para aprender y apagar. Hasta tener una textura cremosa.Agregar 3 cucharadas de agua helada, unir hasta que estè una masa hùmeda, si està seca agregar por cucharaditas. Hacer una bola con la masa y luego estirarla en forma de rectàngulo.Envolver en un film plástico, enfriar al menos por una hora en el refrigerador.


Precalentar el horno a 220º, forrar una bandeja de horno con papel mantequilla o similar. Estirar la masa sobre una superficie con harina haciendo un rectàngulo. Cortar en 6 partes iguales. Traspasar a la bandeja con el papel mantequilla dejando espacios entresí. Pinchar los rectàngulos con un tenedor y pintar con una brocha la mezcla de yema y agua.Cocinar hasta que estèn ligeramente dorados,cerca de 15 minutos. Cuidadosamente con un cuchillo soltar las masa. Dejar enfriar.


Nota: se pueden hacer hasta 8 horas de anticipaciòn, dejarlas sin cubrir a temperatura normal.


Relleno; Mezclar 4 cucharadas de mantequilla y harina en un bowl pequeño hasta que estè suave. Derretir dos cucharadas de mantequilla con el aceite en un sartèn u olla grande a fuego medio/alto. Agregar los champiñones cortados,cebolla, apio y zanahorias, sofreir hasta que los vegetales estèn suavemente tostados, cerca de 10 minutos. Agregar el tomillo y el ajo, revolver por tres minutos. Agregar vino,hervir hasta que estè evaporado, cerca de tres minutos, Agregar 2 y 1/2 tazas de caldo de pollo. Agregar la mezcla de mantequilla con harina de 1 cucharada a la vez, batir hasta que estè bien incorporado, y la mezcla hierva.Reducir el calor, calentar hasta que la salsa se espese, revolver de vez en cuando, cerca de 5 minutos. agregar el pollo picado,arvejas o frijoles,la crema y el perejil, calentar y sazonar con sal y pimienta.


Precalentar el horno a 220ºC, transferir el relleno a un molde cuadrado de hornear, colocar cuidadosamente sobre el relleno los pedazos de masa. Cocinar hasta que estè caliente y servir. Dejar reposar 5 minutos.

Little Lemon Meringues Pies

I adapted these cute Lemon Meringue Pies from FoodNetwork.com . Really love all with Lemon, except of course berries, you know how I love them. But I love lemon and oranges because are so tasty and you may make all year!! So here is the recipe


Little lemon Meringue Pies (6 servings)

Ingredients Crust

5 tablespoon unsalted butter,at room temperature

3 tablespoons sugar

Pinch of salt

1 large egg yolk

1 cup of all-purpose flour

1 teaspoon of sour cream or yogurt




Lemon filling


1/2 cup of sugar


1 and half tablespoon cornstarch


4 large egg yolks


3/4 cup of freshly squeezed lemon juice



1 tablespoon finaly grayed lemon zest



3 tablespoon cold unsalted butter, cubed


Meringue

3 egg whites

1/2 cup of sugar

1/4 teaspoon cream of tartar

Pinch of salt


strong>1 standard (6-cup) non stick muffin tin
Crust
Beat the butter in a medium bowl with an electric mixer to medium high until smooth (or with hand) Add the sugar and salt and continue beat until evenly combined. Scrape down the sides of the bowl, then beat and add the flour and the sour cream or yogurt, beating just until the dough is evenly moistened. Turn down onto a lighty floured work surface and knead lightly to bring it together.


Roll the dough between 2 generously floured sheets of waxed or parchment paper into a circle about 1/4 inch thcik with a rolling pin. Refrigerate by 1 hour.

Cut out 6 rounds using an inverted bowl or round cookie cutler. Place rounds in the muffins tins and using a small shot glass or fingers press into the corners and the sides (see photo) Freeze dough in the muffin tin for 30 minutes.


Preheat the oven to medium heat. (180º) Butter the muffins liner and place the crust.Fill with some beans or pie weights. Bake crusts until just brown round the edges, cook about 25 minutes.


Remove from the oven and cool about 1 minute,then carefully remove the muffins line and beans. Return pan to the oven and continue cookin until are cooked and little browned, about 15 minutes more.Cool. Then carefully remove crusts from the muffin and cool completely on a rack.


Lemon filling


Combine the sugar,cornstarch and yolks in a saucepan.Whisk constantly to medium-low heat until the mixture is smooth and sugar dissolves, about 1 minute. Add the lemon juice and zest and continue cook whisking constantly,until the mixture is as thick as a cream and simmer by 3 to 4 minutes.(Take care to stir into the sides of the pot so that all curd thickens evenly)

Add the butter and by a time until smooth. Stir ocassionaly until cooled.Fill each tartlet with 1 1/2 tablespoons of the lemon cream.

Meringue

Beat the whites with a pinch of salt at medium-high speed until they hold sof peaks add the cream of tartar and the sugar, increase speed to high and continue beat to make astiff,cool meringue. Dollop or pipe on top of the filling.

Just before serving, preheat the broiler to high. Set the pies in a baking sheet, and place under the broiler until the meringue is toasted or brown meringue with a blowtorch. Refrigerate until ready to serve.


EN ESPAÑOL

Mini Pies de limòn

Esta receta de mini Pies de Limòn la adaptè de Food Network.com ya que aparte de las berries me encanta el limòn. Me gustan el limòn y la naranja porque se pueden hacer todo el año.

Ingredientes Masa

>
5 cucharadas de mantequilla sin sal temperatura ambiente

3 cucharadas de azùcar

pizca de sal

1 yema de huevo

1 taza de harina normal
1 cucharada de yogurt o sour cream.

Un molde para muffins de 6 espacios.

Relleno de limòn
1/2 taza de azùcar
1 cucharada y 1/2 de maicena
4 yemas de huevo
3/4 taza de jugo de limòn fresco
1 cucharada de ralladura de limòn
3 cucharadas de mantequilla sin sal frìa

Merengue
3 claras de huevo
1/2 taza de azùcar
1/ cucharadita de cremor tàrtaro
1 pizca de sal

Masa:_ Batir la mantequilla en un bowl mediano con batidora elèctrica (si no batir a mano) hasta que estè cremosa. Agregar el azùcar y saly continuar batiendohasta que estè bien mezclado, Agregar la yema de huevo la harina y la crema o yogurt.Batir hasta que la masa estè humeda.Coloque la masa sobre una superficie enharinada y amase ligeramente para unir.
Amasze la masa entre dos hojas de papel mantequilla espolvoreada con harina. Refrigerar por 1 hora.
Cortar redondelas usando un bowl invertido o un cortador de galletas. Ponga las redondelas en los moldes de muffins y presione con los dedos al fondo y a los lados. Congele un poco la masa dentro del molde de muffins, aproximadamente por 30 minutos.
Precaliente el horno a temperatura media.

Enamantequille el molde de muffins y coloque las masita, rellene con judìas o legumbres para que no suban.Cocine en horno hasta que los bordes esten dorados. alrededor de 25 minutos.
Retire del horno y deje enfriar por un minuto, cuidadosamente saque las masas y retire las judìas o legumbres. Lleve a horno nuevamente y cocine hasta que la masa estè ligeramente dorada de 15 a 20 minutos. Deje enfriar para despues rellenar.
Relleno de limòn
Combinar el azùcar, maicena y yemas de huevo en un sartèn de teflòn.Revuelva constantemente a a fuego medio hasta que el azùcar se disuelve y la mezcla se vea suave. Agregar el jugo y ralladura de limòn y unir bien revolviendo constatemente cerca de 3 a 4 minutos.
Agregar la mantequilla en trozos y unir bien. Dejar endriar. Rellenar las tartaletas con 1 cucharada y1/2 de esta crema de limòn

Merengue
Batir las claras bien firmes con una pizca de sal a velocidad media, agregar el azùcar y el cremor tàrtaro hasta que quede un merengue consistente y firme. Poner en una manga para decorar o cubrir las tartaletas.
Se puede dorar con un soplete o en el horno prender el grill, poner los pies en una bandeja de horno hasta que estèn ligeramente tostados. Refrigerar hasta el momento de servir.
