Lemon blueberry muffins(muffins de limón con arándanos)


I really love this recipe of lemon-blueberry muffins (and the childs too) is adapted from a recipe of Better Homes and Gardens is so easy and nice.


You may use freeze blueberry or fresh if you have. Now we in Summer and when I saw (and I can ) blueberries boxes I freeze them, are so good to freeze and you may have blueberry all the time. Raspberries is the same.


That really love of the Better and Homes recipes and others if they say 12 servings really is!! I use the large mold of 12 muffins and you see dont have problem.


I have to say in all my recipes I try the same because I hate these recipes that say 8 servings and when you make , finally maybe 5 or 6, anyway here is the recipe.



Ingredients

Nonstick spray coating

or a little oil to the molds

2 cups all purpose flour

3/4 cup of sugar

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

3/4 cup plain yogurt

2 eggs

1/4 cup milk

2 tablespoon cooking oil

1 teaspoon finely sheredded lemon peel

1 cup frozen or fresh blueberries

Directions
1. Spray twelve muffins cups with nonstick spray coating:set aside.

2.In a large mixing bowl stir together flour,sugar,baking powder and baking soda.
Make a well in the center of dry mixture.

3.In a medium bowl combine yogurt, eggs,milk,oil and lemon peel.Add yogurt mixture all at once to dry mixture.Stir just until moistened (batter sould be lumpy) Fold in blueberries.

4.Spoon batter into the prepared muffin cups,filling each 2/3 full. Bake in medium oven heat for 20 to 25 minutes until be little golden. or with a wooden toothpick inserted in center comes out clean.Cool in muffin cups on a wire rack for 5 minutes.
Then remove muffins from muffins cups and serve warm.

Muffins de limón con arándanos

Esta es una receta que me ha encantado, no es difícil, rápida, y además si te dice que salen 12 muffins son 12 muffins. Eso me encanta.

La adapté de una receta de Better Homes and gardens una revista america que es muy buena.

Los arándanos pueden ser congelados o frescos, de hecho la receta estaba hecha con congelados.

Lo que hago en este tiempo y lo pueden hacer cuando sea la época es congelar las bandejitas de arándanos que venden en el verano, entonces se pueden tener casi todo el año, yo cuando puedo compro, no siempre se puede.

Estos muffins son deliciosos de merienda o al desayuno o cuando uno quiera,aquí no duraron nada en la casa.

Ingredientes

Spray para los moldes de muffins o un poco de aceite (salen 12 muffins)

2 tazas de harina normal

3/4 taza de azúcar granulada

1 y 1/2 cucharadita de polvos de hornear

1/2 cucharadita de bicarbonato en polvo

1 taza de yogurt normal

2 huevos

1/4 taza de leche

2 cucharadas de aceite vegetal sin sabor

1 cucharada de cascara de limón picado fino

1 taza de aràndanos congelados o frescos

Método

1.Colocar el spray en aceite o engrasar los moldes de muffins. Reservar.

2.En un bowl grande unit la harina,azúcar,polvos de hornear, bicarbonato de soda. Unir bien y dejar un hueco para los demñás ingredientes

3.En otro bowl combinar el yogurt, los huevos,leche,aceite y cáscara de limón rallada.Agregar esta mezcla a los ingredientes secos y unir bien con una cucharad de madera. Agregar los arándanos y mezclar.

4.Rellenar los moldes de muffins con una cuchara (la mezcla debe quedar pastosa no muy cremosa) Cocinar en horno afuego medio de 20 a 25minutos hasta que estén dorados . O con un palito o pincho de madera verificar si están cocidos, son bastante rápidos. Dejar enfriar en los moldes y despues retirar, se pueden servir tibios o fríos.

PD: Si me demoro en colocar la proxima receta no se preocupen es que estoy con una lesión en el brazo izquierdo y es muy difícil cocinar con un sólo brazo, es una lesión que al principio no parecía muy grave pero se ha ido poniendo cada vez más dolorosa.Espero mejorar pronto. Besoss.

Little mango cream tarts




Remember my Mango's Cake, well Im really in love of Mangos (when Im in love is notorius!!)

anyway the other day at the Supermarket I discover again Mangos tins!! other type! So I bring to home and voilá!! Little mangos Tart and how this is an recipe of my own I m sending to Lore to Culinarty round up.Lore Blog is http://culinarty.sapiensworks.com/






Ingredients


Pastry


200 grs. of flour


90 grs. ice butter

2 tablespoon of sugar

1 egg yolk

1 tablespoon of ice water

1/8 of teaspoon of salt



Filling cream


2 cups of whole milk


2 tablespoons of corn flour
2 eggs
3/4 cup of sugar
2 teaspoon of vanilla
To cover
1 mango tin (400 grs. aprox)
or fresh mangos if you have

Method Pastry:
Make the pastry in a processor or in a bowl, join all the ingredientes, flour, butter,sugar,yolk, water and salt. Make as a ball and wrap in a plastic paper and let at the fridge by 1 hour. (you may freeze too if you like).
Use 6 little molds or a large mold. Greased with butter the molds and make 6 circles of pastry,roll the pastry and make 6 little tarts, place a piece of waxed paper over them and little rice to make the tarts dough..
Preheat the oven.Medium Heat.
Place the molds with the pastry by 10 minutes. Take out the paper and the rice and let by 5 minutes more to a little gold.Let chill.
Cream Filling: In a pot boil the milk, vanilla and sugar. Dissolve the corn flour in cold water and empty over the boiled milk and stir well while cook.Cook by 5 minutes and stir always.

Beat the yolks with a little milk and add to the mis. Heat without boil.

Whipp the whites and add to the mix always stirring, will be thickness.
Let chill for a while.
Place the little tarts and filling each one with the vanilla cream, cut in slices the mangos and place over the tarts, garnish with mint if you like.

Tartas de mangoAlgunos vieron el otro día que hice una Tarta de mango o Cake bueno me encnata y quería hacer un helado de mango (me está dando vuelta la idea hace tiempo) cuando me enamoro de algo es total.La cosa es que encontré unos botes de mangos o tarros de mangos en el supermercado e hice estas pequeñas tartas de mango.


Ingredientes Masa:


200 grs. de harina normal
90 grs. de mantequilla helada
2 cucharadas de azúcar
1 yema de huevo
1 cucharada de agua helada
1/8 cucharadita sal
1.Preparar la masa en un bowl o la procesadora, colocar la harina,mantequilla,azúcar,yema, agua y sal. Procesar durante unos 15 a 20 segundos.Hacer una bola de masa y envolver en film plástico,colocar en el refrigerador por 1 hora.
Cuando esté lista uslerear la masa con el rodillo y cortar 6 círculos de masa, poner en moldes pequeños ( o si se quiere uno grande) colocar papel mantequilla y colopcar un poco de arroz en cada uno para que no se levante la masa.Cocinar 10 minutos a temperatura media, retirar el papel y el arroz y cocinar unos minutos más hasta que estén ligeramente dorados. Retirar y dejar enfriar.


Crema para rellenar

Ingredientes:

2 tazas de leche

dos cucharadas de harina de maiz

2 huevos
3/4 Taza de azúcar
2 cucharadas vainilla líquida
Colocar a hervir la leche en una olla pequeña, con el azúcar y la vainilla.
La maicena se disuelve en agua fría y se vierte sobre la leche,cuidando de revolver para que no se formen grumos.Se deja hervir durante 5 minutos.

Las yemas se baten con un poco de leche y se agregan a la mezcla. Se pone de nuevo al fuego evitando que hierva.
Las claras se baten a nieve y se ponen con el resto durante unos minutos a fuego muy lento,revolviendo constantemente.Debe quedar más bien espesa.

Dejar enfriar.
Rellenar las tartas con la crema, colocar encima los mangos cortados en lonjas o trozos y llevar al refrigerador por un rato.

beans with grinded corn and basil (porotos granados con mazamorra)





This dish is typical of my country and  is REALLY tasty, if you dont know, is a mix of beans, grated corn, basil and pumpkin puree.

Is typical of the summer but  I make around the year and freeze. you can make with dry beans (white ) or fresh beans .
I serve in  clay dish because is special to this time, is the same dishes I use to corn pies.



Ingredients


1 kilo of white beans or other.
2 cup of grated corn freeze or fresh
1/2 chopped onion
1/2 kilo of pumpkin cut in little squares
3 tablespoon of corn oil or other
1/2 teaspoon of paprika powder and salt
basil leaves chopped (about 8 leaves)
1/2 cup of milk
1 tablespoon of double cream (optative)

Method


Put  the beans jn a large pot  with cold water and let rest all night to cook the following day (this is important to have a smooth stew) 
In the same pot add salt and a pinch of bicarbonate and cook about 40 minutes. Add pumpkin squares and wait pumpkin and beans are cooked.
 Set aside.
In a frying skillet place the oil, and add the chopped onion, with the paprika powder. Fry by some  minutes.
Add this mix to the cooked beans.

In a blender machine or processor work the corn and basil with 1/2 cup of milk and grind well. 
Add to the beans and cook to so slow heat (the corn paste stick sometimes I prefer a teflon pot)  stir and cook by 20 minutes more until the beans and all the ingredients are cooked,
Taste  the seasoning. Stir well and  before to serve, add the double cream if you like.

They will be creamy and smooth is you is needed add some water but normally with the cream is OK.
Look if is needed some salt. I serve with tomatoes slices or in cubes.


EN ESPAÑOL
Guiso de porotos granados con mazamorra (Chile)
o judías con albahaca y maiz molido
Este guiso de porotos o judías es típico de Chile y especialmente en verano porque se hace con los porotos frescos, pero si no también se hacen con los de guarda, es muy sabroso y queda muy bueno acompañado de tomates frescos cortados en rodajas o picados.

Ingredientes
1 kilo y 1/2 de porotos
2 tazas de maiz congelado o fresco
1/2 cebolla picada fina
1/2 kilo de calabaza o zapallo cortado en cuadrados y sin cáscara
sal y 1/2 cucharadita paprika en polvo (ají de color)
3 cucharadas de aceite de maiz
8 hojas de albahaca picadas fina
1cucharada de nata o crema espesa.

Desgranar los porotos o judías y cocer en agua fría c0n sal por unos 20 a 25 minutos, agregar también el zapallo o calabaza en cuadrados.
Cocer hasta que los porotos o judías estàn blandos y suaves y el zapallo casi deshecho.Reservar.
En un sartèn colocar el aceite y freir la cebolla por un rato. Agregar la paprika y si le falta sal.
Vacias esto a los porotos y unir bien.
Moler los choclos o maiz en una procesadora con las hojas de albahaca como para formar una pasta y agregar a los porotos, cocinar con esta mezcla a fuego muy lento (para que no se pegue) hasta que se vaya uniendo todo revolver con cuchara de palo.
Cocinar siempre a fuego lento (es preferible una olla de teflón porque no se pegan) hasta que la mezcla esté cremosa y suave, cocinar por unos 15 minutos más,finalmente antes de servir agregar la cucharada de crema o nata y revolver bien.
Si se necesita agregar un poco de agua caliente.
Servir con tomates en rodajas o cortados en cuadritos.

Tea Mousse with blueberry

A nice and smooth dessert that as I like tea with a little blueberries, really I think you have to try, is to every season. And is so light!! You may serve at little molds (silicona or glass) or in a large mold.

Ingredients (6 servings)

5 tablespoons of Tea (as you make to breakfast
so a normal tea)

2 cups of milk

6 yolks

240 grs. of sugar

4 teaspoon of unsaborized gelatin

1/4 cup of boiled water

1 cup of heavy cream

2 cups of blueberry (freeze or natural)




METHOD


In a medium pot heat the milk with the tablepooons of tea until boiled.Cut the fire. Whipp the yolks with the sugar with an electric beater until are creamy.


Add the tea mix with carefully over the yolks and continue whipping.


Now place all the mix in a medium pot to slow heat and stir all the time until the mix is thickness.


Dissolve the gealtine in a little of boiled water and incorporate to the mix, let chill by a while, stir time on time.


Whipp the heavy cream until firm and add carefully to the mix.


Oil 6 little molds , refrigerate by 1 hour and half, (if you need rapidly place in the frezer by 1 hour) Retire and desmold in dessert dishes

Blueberry sauce


Heat in a pot to slow heat the blueberries with one tablespoon of sugar heat by 2 minutes, cut the heat and stir. Garnish with the blueberry mix and mint leaves in each plate.

Mousse de Té con arándanos




Este es un postre delicioso y liviano se puede hacer con arándanos congelados o naturales y se puede servir en estos moldes chicos tipo silicona (para darle forma) o en un molde grande.

Ingredientes

5 cucharadas de té preparado (como para desayuno)

2 tazas de leche

6 yemas

240 grs. de azúcar

4 cucharaditas de gelatina en polvo sin sabor

1/4 taza de agua caliente para disolver

1 taza de nata o crema para batir

2 tazas de arándanos (frescos o congelados)


Preparación

En una olla mediana a fuego moderado calentar el té y la leche casi a punto de hervir.
Batir las yemas junto con el azúcar con batidora eléctrica hasta que estén espesas y cremosas,
Verter el té con leche ya preparado con cuidado sobre las yemas con azúcar mientras se continúa batiendo.
Poner de nuevo la mezcla en la olla y revolver constantemente sobre fuego lento hasta que espese,.
Disolver la gelatina en agua caliente e incoporarla a la crema, dejar enfriar a temperatura ambiente, revolviendo de vez en cuando , Batir la crema hasta que esté aireada y firme. y añadir en forma envolvente a la crema.
Aceitar ligeramemente 6 moldes pequeños o uno grande y vaciar la mezcla. refrigerar 1 hora y 1/2 hasta servir. Si se necesitan más rápido poner en el congelador una hora. Tienen que estar firmes para darlos vuelta.
Desmoldar sobre platos de postres.
Servir con los arándanos y unas hojas de menta
Salsa de arándanos
En Una olla pequeña calentar los arándanos con una cucharada de azúcar, calentar a fuego bajo por un rato. Mezclar bien para que se disuelva el azúcar y dejar enfriar un poco.
Servir con los postres de los platos y adornar con hojas de menta.

A little tour by Providencia Ave. Santiago de Chile

You know sometimes I made some posts about
differents places or cities inside Chile, Isla Negra, Valparaíso,Punta Arenas,Los Angeles etc. and now I made a little tour by Providencia Ave. near Santiago downtown because have lovely places and is a warm and kind part of the City.



Santiago downtown is as all the big cities, with many cars, smock and a lot of people, but Providencia is lovely.



Normally I go one or two times at week because by the childs doctors or others things. We go first in Bus and after in subway that let you exactly in Providencia. From my home to there is about 1 hour (I live at countryside)

Providencia is a so antique place that had many old and beauty houses, but now these house are now, restaurants, little Cafés,Bookstores, and many others stores, of course have buildings too and Banks but they dont like specially to me.




All the year and specially at now is summer, some restaurants or little caffés have tables in the footpath where you can take some Capuccino with some treats or sandwichs, many people work here so to the lunch time the tables are full.



Is a Startbrucks too but I dont take coffe there I will show you where go when we go there.











These pictures were taken early in the morning a nice time here with not many people, later is more full of cars and people of course. And Summer is special time that people enjoy in the little tables of the footpath to talk and take some coffe.

Are many bookstores near of the Coffes stores so you may see a lot of book but are so cost, to us. When I can I buy some books I love them




This flowers store is in the street I know it many years, all the year have lovely roses, sunflowers and many types of flowers.




Here one of the most beautiful things of Providencia, the little stores where sell differents type of fruits and veggis. Here lovely peaches, really nice. (this is the most beautiful time to peaches and others )









In the same place we find lovely cherries and strawberries. We bought to eat at home, some strawberries and cherries, so delicious.

Later I fin a little blueberries boxes and I bought two, so who guess what Iam going to make soon??????





In the Cafetto,german beer machine!





And I have the plasure to show you "The Cafetto" a lovely place where you may take Capuccino or eat some treats or lunch. This day we lunch, have little tables inside and out of the store and the food is absolutely nice.


To the wright Mom tasty the bread, delicious.





Here some delicious treats they have to desserts or when you take the Coffe.Lemon Pie, croissants, blueberries muffins and some kücken that I post some recipes.



The bar where they made the drinks and natural juice (only natural) these day I drink a pineapple juice, but my favorite is raspberries, but all the juices are nice.



Mom drink a Pisco Sour, some of you know it is so nice, Pisco, lemon and ice, delicious.

Un pequeño tour en Avda, Providencia, Santiago de Chile.




Ustedes saben que varias veces he posteado acerca de lugares aquí en Chile, me gusta hacerlo porque hay mucha gente afuera que me pregunta por Chile, ni se imaginan como es o se imaginan mal.


He hecho posts acerca de Isla Negra,Valparíso, Punta Arenas, Los Angeles es lo que me acuerdo.


Ahora hago este de Providencia que es muy lina en esta época de verano.


Providencia es una comuna(casi como un pequeño pueblo) en que antes habían casas muy antiguas lindas pero ahora están llenas de restaurants, hoteles, locales comerciales, Café literarios y Cafés normales donde te puedes tomar un Capucchino con algo rico, un croissant, un sandwhich, un pie de limón etc.



No es dificil de llegar, para los que conocen Santiago, está cerca del cnetro de Santiago, uno se puede ir en Metro y llega ahí mismo al corazón de Providencia.



Normalmente voy 1 o 2 veces a la semana popr diferentes cosas o por los niños a veces los llevo al doctor o cuando necesitamos algo, acuerdense que vivo en el campo.


Lo hago así, caminamos hasta una parte en que pasan buses, tomamos uno hasta el Metro, ahí en el Metro atravesamos parte de Santiago hasta Providencia y ahí hay varias estaciones del Metro depende a donde una vaya.


Todo dura como 1 hora y un poco más.





Estas fotos las tomamos el Jueves pasado en una hora temprano en la mañana (es ideal) por lo tanto no se ven autos ni tanto movimiento, pero más tarde si se llenan las calles y todo eso.


Por supuesto que en Providencia hay Bancos y grandes edificios, pero por las fotos verán que no me causan mayor curiosidad.

En la primera foto a la derecha una foto en la calle en pleno Providencia, tienes muchos árboles.




Despues también a la derecha hay muchas mesitas de estas en la vereda, afuera de los cafés donde se puede tomar un Cortado o un Capucchino con un sandwhich o algo dulce.



Tambièn hay muchas librerías aunque debo decirles que aquí los libros son caros, yo cuando puedo me compro libros porque me encantan igual miro todas las vitrinas para ver que libros hay, a veces hay rebajas.(muchos libros vienen de fuera España, México, o USA o Europa y eso lo encarece)



Despues este negocio de flores, hay varios pero este es uno de los más antiguos que conozco y tiene flores todo el año. Rosas, girasoles,claveles, todo precioso.



Ahh La fruta es maravillosa, hay varios pequeños negocios en la calle que venden frutas, estos son melocotones o duraznos y estaban preciosos, también habían fresas y cerezas, nosotros compramos una pocas para comer despues.



Más tarde en un pequeño negocio encontré un pequeño negocio que vendían cajitas de arándanos, así que adivinen que haré pronto



Andabamos con mi mamá y los niños, fuimos a almorzar a un lugar chiquito pero precioso El Cafetto, al que vamos muchos años incluso (tienen un menú) puedes pedir en vez de jugo o bebida,vino blanco o cerveza.



Yo tomo siempre jugos son fantasticos y naturales, ese día tomçe Jugo de Piña o Ananás, pero el que me encanta es el de frambuesa,la verdad que todos son ricos.



Los niños comieron de entrada un plato que tenía aguacate o palta, tomates y queso, dicen que estaba deliciosa, nosotros comimos fondos de alcachofas, despues se podía elegir pollo a la mostaza con calabacines al vapor o ensalada de lechuga con salmón. la Espe comió ensalada de salmón, nosotros pollo a la mostaza.

A veces almorzamos, otras veces pasamos a tomar café pero nos atienden siempre igual de bien.

Oven zucchini with cheese (calabacines rellenos con queso)






This time that we live now (summer) is lovely (only I hate the hot) because we have many fruits,veggis and other. One of my favorites is zucchini, really love them.



Now in many parts of the world have zucchini all year, here too, but in this times are more cheap and nice.



An is really one my favorites dish, Oven zucchini with cheese, I made last night if somebody find the pictures a little darkness, but many times I cook at night so If I want to take some pictures I have to do at night.






Some people made these with green bbef meat but I prefer how I show you but if you like you may add some grinded meat.

Ingredients



5 or 6 zucchinis


1/2 chopped onion


100 grs. parmesan cheese grated


Butter


salt and pepper


3 eggs


2 tablespoons of grated bread or panko


1/2 cup of cold milk


Method



Coook the zucchinis in a pot with the peel, whole, by 15 minutes with salt.

Strain de zucchinis and let chill for a while


Cut the zucchini in the middle to largely and with a spoon, take out the zucchini food and reserve.


In a frying pan, place a little oil and fry the chooped onion, add the zucchini food, add salt and pepper, add the eggs and cook, the grated brad or panko, the milk and stir all well, finally add 50 grs. of the parmesan cheese and stir again.


Preheat the oven to medium heat.


In the oven tray add a little butter and place the zucchini, filling with the zucchini mix, over them add the other parmesan cheese (50 grs. ).


Place in the oven about 20 minutes until are golde, serve warm or hot with some tomatoes slice.


You may hheat at microwave later.



EN ESPAÑOL


Calabacines rellenos al horno con queso (zapallitos italianos al horno)

Bueno lo delicioso del verano es que hay tanta fruta y verduras tan ricas. Me encantan los calabacines, normalmente ahora hay todo el año, pero su mejor época es el verano y son mucho más baratos.
Estos calabacines o zapallitos italianos al horno son típicos de acá.
Si alguien quiere le puede agregar carne molida como hacen algunas personas pero a mí me gustan así

Ingredientes

5 o 6 calabacines
1/2 cebolla picada fina
100 grs. de queso parmesano rallado
mantequilla
2 cucharadas de pan rallado o pank
3 huevos
sal y pimienta
1/2 taza de leche

Preparación
En una olla colocar los calabacines con agua y un poco de sal, colocarlos sin pelar y enteros, es para sancocharlos un poco.

Cocer por 15 minutos luego colocarlos y dejarlos enfriar un poco.
Cortarlos a lo largo y sacarle la pulpa con cuidado para no romperlos.Reservar esta pulpa.
En un sartèn freir con un poco de aceite la cebolla y dorarla, añadir la pulpa, sazonar con sal y pimienta, añadir los huevos batidos, el pan rallado y la leche,finalmente la mitad del queso rallado (50 grs) y unir bien.(si se necesita se puede agrear un poquito más de leche).
Precalentar el horno a fuego medio.
En la bandeja del horno poner un poco de mantequilla (para que no se peguen) y colocar las mitades de calabacines, rellenar con esta mezcla ya preparada, cubrir con el resto del queso rallado y llevar a gratinar al horno. Cocinar unos 20 minutos hasta que estén dorados.
Servir con rodajas de tomates.(Tambièn se puede servir con arroz blanco u otra ensalada)

Mango birthday cake




The last Sunday we celebrate Mom in her 79 Birthday, was so nice an quiet because only stay we with the childs and Mom and Dad.


I had a mangos tin and I want to do something with this, something nice (sometimes I have these ideas) I search to a Mango cake but I dont find, so I mae my on Mango Cake recipe and here is.


How many recipes I share with you this Cake may make with mangos tin or fresh mangos.




Ingredients
To make the cake
8 eggs

1 cup of granulated sugar

8 tablespoon of potatoes flour (chuño) or

corn flour

2 tablespoon of plain flour

3 teaspoon of baking powder

Greased paper


To filling and garnish:


1 large tin of mangos (800 grs.)

3/4 liter of whipped cream


1 cup of caster sugar

pieces of chocolate to garnish


Method


Make a syrup with the sugar in a pot and cover with a little water,.

Boil until is more thickeness and with a little teaspoon try and the syrup is how a

thread, not drops.

Whipp the whites with the pinch of salt on medium speed of an electric mixer untilsoft peaks form (tips curl) and add the syrup and stir all the time until is chill.

Continue stir slowly and add the yolks one by one. and incorporate the flour, chuño or corn flour.(If you dont find chuño or corn flour use normal flour)

In a Cake tin (about 26 cm diameter) place a circle of greased paper and empty the batter over it.

Preheat the oven to medium heat and place the tin about 20 minutes, try with a wood stick if is ready the cake, let buy a minutes at the oven and retire, cover with a towell kitchen and let chill.

When is ready, dive the cake in three layers and let in a large dish.

THE FILLING

Grind the 3/4 of the tin of mangos in a beater juice or other processor how puree, Reserve the juice of the tin and the other mangos.

Whipp the cream, add the caster sugar and to one part of this whipped cream add the puree mangos with carefully and slowly.

Other part is to cover the cake.

In a large cake dish place one layer of cake and moist with the mango juice, a little.

Spread the mango mix over the cake and cover with the other layer, moist with the juice and place the mango cream again (if you like may add some pieces of mangos over the cream)

With the last layer moist finally with the juice and cover all the cake with the other whipped cream and garnish with mangos and piece sof chocolates,let chill at Fridge by 1 hour.

Tarta de cumpleaños de mango

El domingo pasado estuvo de cumpleaños mi mamá y le celebramos aquí en casa, cumplió 79 años, fue tranquilo sólo estabsmos nosotros con los niños y mis papas, pero la pasamos muy bien.
Le hice una tarta o Cake de mangos, hace tiempo que tenía ganas de hacer algo con mangos,se puede hacer con mangos en bote o mangos frescos.
Ingredientes para el cake
8 huevos
1 taza de azúcar granulada
8 cucharadas de chuño o harina de papa o de maiz (sino ocupar harina normal)
2 cucharadas de harina normal
3 cucharaditas de polvos de hornear
papel de mantequilla o engrasado
Metódo
En una olla hacer un almíbar de pelo, hecho con el azúcar granulada y agua suficiente sólo para cubrir. Colocarlo afuego medio/bajo, se hace hervir hasta que al probar con una cuchara se ve como un hilo, no gotas, o sea está má espeso.
Mientras batir las claras a nieve con la pizca de sal y cuando estén bien firmes agregarle de apoco el almíbar de azñucar incoporando suavemente y batir hasta que enfría.
Revolviendo suavemente (sin batir, agregar de a poco las yemas de a una incorporando a la mezcla, luego se le agrega la harina y chuño o sólo la harina y las cucharaditas de polvos de hornear.
Precalentar el horno, a fuego medio.
Prepara un molde de unos 26 cm. cortar un círculo de papel mantequilla y vaciar la mezcla sobre este.
Llevar a horno medio durante unos 20 minutos, despues de este tiempoi abrir el horno y con un palito de bamboo ver si ests seco, está listo. de jar enfriar unos minutos en el horno y despues retirar, dejar enfriar tapado por un paño.
Cuando esté frío cortar en tres capas y reservar.









Para rellenar el bizcocho:

1 tarro o bote de mangos de 800 grs
(pueden ser naturales)
3/4 litro de crema o nata para batir.
1 tazade azúcar glass
Pedazos de chocolate para adornar.

Moler en la procesadora 3/4 de los mangos (reservar el jugo aparte) como puré y reservar, el resto de los mangos para adornar.
Batir la crema o nata firme, y agregarle de a poco el azúcar glass.Batir hasta que esté firm, divir la mezcla, y a la primera parte agregar el puré de mangos incorporando bien.
En una plato de torta grande colocar las capas de la torta para ir rellenando, poner entre medio la crema de mangos y si se quiere colocar trocitos de mangos cortados, Las capas de bizcocho humedecerlas con un poco de jugo de mango, bien antes de esparcir la crema o nata con mango.
Con el resto de la crema cubrirla bien y adornar con pedazos de mango y chocolate en trozos.

Sesame chicken and noodles



Finally something salad!!!! sorry, I had this dish many days but because I love soooo apricots you know,here a lovely that I adapted from Better Homes and gardens recipes and was really so tasty.

I love so sesame seeds and sesame oil and for this I try this recipe.







Ingredients



1/3 cup thinly sliced green onions

2 teaspoon honey

1 tablespoon reduced sodium soy sauce

1 teaspoon of ginger powder

1 tablespoon garlic chile sauce (optative)

2 (6 oz) refrigerated grilled chicken breast strips

12 oz dried noodles spaghetti

3 tablespoon toasted sesame

2 medium green and/or red sweet peppers, cut in bite size strips

a pich of salt (optative)

fresh cilantro



Method




In a bowl stir together green onios,honey sy sauce,ginger and garlic chile sauce. Add chicken , stir to coat.



Set aside to alow flavors to medl.



Meanwhile,in large saucepan cook noodles in boiling water about 8 minutes until just tender. Drain noodles well and return to sauce pan.



Add chicken mixtures and toss to combine.



Transfer to bowls o dishes.



Top each with pepper strips cilantro ans sesamo seeds.



Making 6 servings.



Note: I didn't cilantro so I add some chopped basil. is so nice too. If you need add some salt but is not neccessary because the soy sauce is enough.

Pollo con sésamo y fideos

Por fin algo salado!!!! La verdad es que estaba tan fascinada con los damascos, pero ahora ye me toca algo salado.

Esta receta la adapte de una de Better Homes and Gardens recipes, un sitio de recetas de una revista de USA muy buena, he hecho varias cosas de ahí.

Cuando leí la receta y decía pollo y sésamo pensé: tengo que hacerlo!! Me encantan las semillas de sésamo, saben tan bien y combinan con muchas cosas, puede ser sésamo tostado natural para este plato es lo mismo.

Como ustedes bien saben mi familia (especialmente los niños) son mis conejillos de indias, y a ellos les encantó. Es para seis personas pero se puede ajustar la receta a menos o al revés doblar la receta si tienen muchos niños como una encantadora amiga mí en España.

Ingredientes

1/3 taza cebollines verdes picados finamente

2 cucharaditas de miel

1 cucharada grande de salsa de soya ojalá reducida en sodio (sino puede ser la salsa normal)

1 cucharadita de jengibre en polvo

2 cucharaditas de salsa de ajo/ají(en negocios de Asia)

2 pechugas de pollo ya cocidas o doradas cortadas en tiras.

500 grs. de de fideos ya listos tipo spaguetti

3 cucharadas de semillas de sésamo natural o tostado

2 pimientos cortados en tiras, que pueden ser rojos o verdes o ambos

Cilantro fresco picado

Preparación

En un bowl unir los cebollines verdes,la miel, la salsa de soya,jengibre y salsa de ajo con chile, agregar el pollo ya cortado en tiras o pedazos, unir y dejar reposar un rato para que los sabores se mezclen.

Mientras tanto en una olla cocinar los fideos en agua hirviendo cerca de 8 minutos hasta que esten tiernos,cuele los fideos y déjelos despues en la olla..

Agregue la mezcla de pollo y otros ingredientes y mezcle bien.

Transfiera a pequeños bowls o platos. Sobre cada uno esparza semillas de sésamo y cilantro picado o albahaca picada y los pimientos cortados en tiras.

Apricots Jam (we continue with the apricots saga)

I really hope you are not tired to see apricots yet, je, but I promess this is one of the final, (only I hope to make a apricots tarta).
But Im proud of our Apricots trees and I really think are lovely, didn't, well this apricots love come many years ago when I was a little child (uuuhhh!!!) Mom said I love them always.
Some of you know the history when we arrive to this house that was ansolutely bad and homeless and not grass,not trees, really not nothing, when we arrive I was really sad because I need to see green (maybe because Im of the south that is so green) but to thanks of God and a lot of work we have now, apricots trees, apples,pears (are solittle yet),quinces (I love them), roses ( I really love too, always when I see I think is how a miracle, really is.


















We have three apricots trees but you know the season is so short!! you see these and know almost we dont have apricots right now.


For Christmas I made apricots Jam (I have to do!!) and the dessert you see and I hope to make a tarta that I saw in some place, I hope to find!!
Here is my house, I think is nice but is so warm too!! and these lovely trees are liquidambar, we love them and ate the Autumn are absolutely georgeous with red leaves. (I really love Autum)











For Christmas I had this little man with a lot of apricots.
And finally the Jam recipe!!!!

Apricots Jam
2 kgs. of fresh apricots with some seeds
1 kg. of granulated sugar
some glass jars (sterilized)
I know many people add more sugar but I made with not a lot of sugar.
In a large pot place the apricots and some seeds.(washing first) I dont use quimicals but some anties or others always are in the fruits.
Add the Kg. of sugar and let by 2 hours.
Place the pot to so slow heat and when you are cook stir time on time with a woodspoon, if you have I use and antique toaster under the pot. (So dont stick)
Cook by 1 hour and half.
To try, with a teaspoon place in a dish a little jam and wait if dont move and are thickness is OK.
let chill the jam.
When the jam is a little warm fill the glass jars without the lids, put a towell kitchen over them and let all the night to other day place the lids and keep at the fridge until you will use,

Mermelada de damascos o albaricoques

Espero que no se hayan cansado de los damascos o albaricoques, prometo que esto serà lo ùltimo, (me falta una tarta de damascos que quiero hacer)
Pero yo querìa honaradamente mostrarles mis arboles de albaricoques de los que estamos orgullosos y felices.
Algunos de ustedes conocen la historia de como lleguè a vivir aquì hace cuatro años en que no había nada, ni pasto, ni árboles, ni rosas, nada, la casa estuvo muchos años abandonada y en muy mal estado finalmente se la compramos al banco (todavìa la estamos pagando) y de a poco fuimos arreglandola, plantando arboles, rosas, pasto etc.
Veo todo esto hoy y es como un milagro, tenemos arboles de damascos, peras,manzanas,membrillos, duraznos y recièn este año estàn dando màs, la temporada de damascos es muy corta y si los sacas o cosechas se echan a perder, maduran muy ràpido, asì que para la Navidad hice of course mermelada de damascos, tambièn regalè, siempre regalo hay que compartir estos regalos que Dios nos da.

Las fotos de arriba son de los arboles de damascos cuando estaban en su esplendor, ahora casi no quedan, tengo algunos guardados pero en los arboles ya no hay.

Arriba para los que quieran conocerla está mi casa y salió entre medio de los liquidambar que son preciosos sobre todo en el Otoño que tienen ese color rojizo las hojas (amo el Otoño).


Mermelada de damascos

Ingredientes
2 k. de damascos o albaricoques y algunos cuescos (queda màs espesa)
1kg de azùcar ( si alguien quiere le pone màs pero a nosotros no nos gusta con tanta azùcar)
algunos jarros o botes de vidrio para guardarla
(esterilizados con agua hirviendo)

En una olla grand eponer los dos kilos de damascos partidos con algunos cuescos màs el kilo de azùcar y dejar reposar unas dos horas.

Prender el fuego muy suave y colocar la olla ojalá con un tostador de esos antiguos, se pone debajo para que no le de tan directo el calor, tiene que ser a fuego muy lento para que no se pegue., siempre revolver con una cuchara de madera de vez en cuando.
Esto será por lo menos 1 hora y 1/2, se saca un poco de mermelada y se prueba en un plato, si no se desliza està lista.

Dejar enfriar un poco y envasar cuando estè tibia, llenar los frascos y tapar con unpaño de cocina sin poner las tapas, al otro dìa colocarlas y conservar los frascos en el refrigerador.

En el refrigerador duran perfectamente 6 meses con esta cantidad de azùcar, si quieren se le agrega un poco màs.
