Chocolate Chips Muffins



I made a lot of muffins last time because are so good to school lunch (and to every time really) and are absolutely more healthy that we can find in Super or stores, without preserves, and we know how we make them. You know..



I adapted this recipe from http://www.hersheykitchens.com/ .


The kids really love and Im sharing with you this new recipe.







Ingredients (12 servings)



2 cups all purpose flour



2 teaspoon of baking powder



1/2 cup of sugar



2 tablespoon of vegetable oil



1 egg slightly beaten



2/3 cup of milk



1 cup of Hershey's chocolate chips or



chopped chocolate






Method



Preheat the oven at 180° C and greased or paperline 12 muffins cups.





In a a bowl combine flour, baking powder,sugar oil and milk until moistened.



Add the chocolate chips or chopped chocolate.And join well.


Spoon batter evenly into prepared muffin cups.





Bake 18 minutes or until muffin tops are browned.Cool slightly, remove from pan. Serve warm with butter or alone.

Muffins con chips de chocolate

He hecho diversas recetas de muffins, cupcakes o magdalenas el último tiempo, en especial las hago porque son muy buenos para mandarselos a los niños de merienda al colegio, (además que los compañeros siempre me piden que les mande algo)

De hecho los muffins o magdalenas que hagamos en casa son infinitamente más saludables y menos calóricos que los que venden en el Super o en negocios.

De hecho los que uno hacen no tienen preservantes (les ponen para que duren más tiempo)
no tienen grasas saturadas ,y el chocolate es auténtico, sabían que existen diversos productos con "sabor a chocolate", aroma de chocolate o "sucedáneo del chocolate"??? yo lo he descubierto el último tiempo porque es impresionante la cantidad de productos que no contienen cacao pero se llaman "sucedáneos del chocolate"

Esta receta está adaptada de http://www.hersheykitchens.com/ la página es muy bonita y tiene buenas recetas.
No es necesario hacer los muffins con los chips de chocolate Hershey's se puede hacer con chocolate picado (así lo hice) y quedan muy buenos.






Ingredientes (12 muffins)



2 tazas de harina normal



2 cucharaditas colmadas de polvos de hornear



1/2 taza de azúcar



2 cucharadas de aceite vegetal sin sabor



1 huevo batido



2/3 taza de leche



1 taza de chispas de chocolate Hershey's o chocolate picado en trocitos.



Método



Precalentar el horno a 180° C, Enmantequillar moldes de muffins o poner las cápsulas de papel. (para 12)



En bowl combinar harina, azúcar,polvos de hornear,aceite, huevo,y leche, mezclar bien hasta que esté todo unido y la mezcla húmeda (debe quedar grumoso como es la textura de los muffins)



Con una cuchara ir rellenando los moldes o las cápsulas de muffins.



Cocinar en horno por 18 minutos o hasta que estén ligeramente tostados.



Dejar enfriar un poco.



Se pueden comer con mantequilla o solos.

2 ° Aniversario de Blog y un regalo para todos los que me visitan y dejan comentarios



Me encanta la primavera ya este mes que viene comienza pero ya está en el aire, en las flores, en las plantas, en los pajaritos recien nacidos, cuando hay sol (como hoy) ya es más cálido.

Justamente en este tiempo hace dos años comenzé este Blog de Recetas más que nada porque me pedían recetas que les tradujera del español al Inglés (Inglaterra,Usa, Canada, Australia, etc.) por eso es que al principio las recetas eran solo en Ingles, y despues pasé a postear en los dos idiomas.

Quiero agradecer a todos los que dejan sus comentarios, ya saben que los leo todos y trato de contestar siempre porque esto es así, interactivo, no podría postear si no estuvieran uds. y siempre me anima (aún en momentos difíciles) que a alguien le servirá la receta (lo sé por los mails que recibo y las preguntas que me hacen), a muchos que he conocido aquí los considero mis amigos más cercanos y eso es un regalo.
Como regalo rifaré o sortearé dos libros de de cocina chilena, uno en inglés y otro en español para los que comentan en español, aquí les pongo fotos de los dos libros que son preciosos (ni yo los tengo) fotos esupendas, estoy feliz de haberlos encontrado.

Healthy chocolate brownies




These yummy brownies (really) are the best and healthy (only 110 calories as and apple) so enjoy!! This lovely recipe is from Noelle Haddad a smart chilean Chef that make recipes to "Cocina" Ya Magazine http://www.emol.com/ .



Ingredients (15 servings)

1 cup of flour

1/2 cup of powder cacao

1/2 teaspoon of bicarbonate

1/2 teaspoon of salt

1 cup and half of golden sugar

1/4 cup of oil corn or vegetal oil

1/2 cup of greek or plain yogurt

1 egg

2 whites egg

1 tablespoon of vanilla

Method

Preheat the oven at 170° C (medium heat)

With oil spray moist a rectangle mold.(20 x 30 cm)

(Or moist with a oil paper towell)

Mix the flour with the cacao, bicarbonate and salt.

In other bowl mix the sugar, egg and whites,vanilla and yogurt and the oil , mix until is smooth.

Join the two mix, and beat well. Empty in the mold the batter and bake by 25 minutes until when you prick with stick and is moist but cook.

Cool and cut in 15 rectangles.

Brownies saludables

Estos brownies son livianos y saludables, (tienen la misma cantidad de calorías de una manzana mediana 110 ca.)

Esta receta deliciosa es de una chef de acá Noelle Haddad que escribe y comparte recetas en la revista Cocina de Ya diario El Mercurio www.emol.com



Ingredientes (15 porciones)

1 taza de harina

1/2 taza de cacao en polvo

1/2 cucharadita de bicarbonato de sodio

1/2 cucharadita de sal

1 y 1/2 taza de azúcar rubia

1/4 taza de aceite de maiz

1/2 taza de yogurt normal

1 huevo

2 claras de huevo

1 cucharada de vainilla

Precalentar el horno a 170 ° C, (horno medio) Con un aceite en spray humedecer un molde rectángular ( 20 x 30 cm.)

Mezclar la harina con el cacao, bicarbonato y sal.

En otro bowl batir el huevo con las dos claras,vainilla,yogurt y el aceite hasta que esté suave y el azúcar disuelta.

Unir las dos mezclas anteriores, sólo hasta que esté todo bien combinado.

Verter en el molde y hornear por 25 minutos hasta que al pincharlo con un palito salga húmedo,sin resto de brownies

Enfriar y cortar en 15 cuadrados.

Tex-Mex Chicken Quesadillas








I think a lot of us really love quesadillas, tacos or burritos.


Mexican food arrived here a few years ago, all depend that you stuffed them.


One of my kid love only veggies and other with chicken or chopped meat.


I prefer with some chicken, jalapeño chopped, and cheese of course.


These are so tasty because you heat at oven and they are so crunch, love them because is a fast dinner or a lunch, I made someones yesterday at lunch and when kids arrived from school ate all the remaining quesadillas!!


I adapted this recipe from Good Housekeeping Magazine, September 2009 one of my favorites american magazines.(you can see too at http://goodhousekeeping.com/ )




The quesadilla filling...




Ingredients



(4-5 servings)


2 green onions

2 cups chopped chicken meat(boiled)

1 and 1/2 cup shereded mozarella or parmesan cheese

1 jalapeño chile
3/4 taza salsa verde

finely chopped

1/4 fresh cilantro leaves chopped

5 or 6 burrito flour tortillas

1/2 cup reduce fat sour cream(optative

(I made mine with plain yogurt or greek with some fat free cream and a pinch of salt)(keep at fridge)


1. Preheat oven at 180° C (medium heat)

Thinly slice green onions and reserve 2 tablespoons dark green tops for garnish.
Evenly dive chicken, chees,jalapeño,cilantro and remaining green onion on one side of each tortilla;fold other half over.
In single layer on foil lined toaster oven tray toast quesadillas 8 to 10 minutes or until tortillas are golden brown and cheese is melted.
Cut each quesadilla in half.Serve with salsa verde,plus sour cream if you like; sprinkle with reserved green onions.

Quesadillas tel mex con pollo

Pienso que a la mayoría nos gustan las quesadillas, tacos o burritos. Se pueden rellenar con lo que uno quiera y son una comida sana y deliciosa.

La comida mexicana (en su apogeo) llegó hace algunos años acá y para quedarse es internacionalmente conocida y deliciosa, la cantidad de picante o jalapeño depende de nosotros y de lo que le queramos colocar.

Hay para todos los gustos. Uno de mis niños le gustan sólo con verduras y el otro con pollo o carne.

El mío con pollo picado, ají verde y queso por supuesto, tambien me gusta con sour cream encima o crema ácida. me gusta más que la mayonesa.

Esta receta está adaptada de la revista Goodhousekeeping que es una de mis favoritas, esta es de Septiembre 2009.

Ingredientes

2 cebollines verdes picados fino
2 tazas de pollo picado cocido(sin piel)
1 y 1/2 taza de queso fresco rallado parmesano o mozarella
( o el tipo de queso que se desee)
1 ají verde jalapeño picado fino
1/4 taza de cilantro picado fino
5 a6 tortillas de harina o maiz tipo burritos
3/4 taza salsa verde (optativo)
1/2 taza de crema ácida o crema sour reducida en grasas
(yo la hago con un yogurt nomal bajo en calorías, unas cucharadas de crema y un poco de sal) (guardar en el refrigerador)

Preparación

1. Precalentar el horno a temperatura media (180° C)
Cortar en tiras finas el cebollín verde, rservar dos cucharadas para colocar sobre las quesadillas cuando se sirvan.
2.Dividir el pollo,queso, ají jalapeño,cilantro y parte del cebollín verde picado y colóquelas en un lado de cada tortilla, doblándolas en dos.
3. Colocar las quesadillas en una bandeja de horno con papel aluminio o en un molde grande.
Tostar las quesadillas en el horno de 8 a 10 minutos o hasta que las tortillas estén doradas y el queso derretido.
4. Cortar cad tortilla para servir con la salsa verde y la crema ácida, esparcir encima con cebollín picado verde ya reservado.

Strawberry and pears crumble with almonds and chocolate






I find this delicious crumble the other day I have to say was a success, really,I know this because the kids fight by the last piece!!



Im pleasure to share this, enjoy!!!

Ingredients (8 servings)

2 tablespoon of butter
50 grs. of strawberries in half

3 pears peel in slices

100 grs. bitter chocolate chopped


Crumble

100 grs. of flour

100grs. of butter

1/2 cup of sugar

100 grs almonds peel in slices

Vanilla Ice Cream (optative)




METHOD

Preheat the oven to medium heat (180°c)


In a frying pan place the butter to slow heat and add the pears and strawberries (let someones to garnish)


Cook by 7 to 8 minutes more.


Place in a oven fountain or a tart mold ( I use a ceramic tart mold)


Cover with the chopped chocolate. Reserve.


In a bowl place the crumble ingredients and with your hands make the crumbles..


Cover the fruits mix with the crumble.


Sprinkle with almonds and bake at oven by 20 to 25 minutes.


Or until is golden and look crunch.Let cool before serving and if you like keep at fridge before serve.


You can serve with Vanila Ice Cream if you like.

Crumble de fresas y peras con chocolate y almendras

El otro día descubrí este postre de fresas y peras en una antigua receta. Me encantó y debo decir que fue un éxito. Cómo me doy cuenta?? Cuando los niños se pelean el último pedazo, lo sé perfectamente que les gustó.


Hay gente que cree que hago postres todos los días, nada que ver sólo 2 o tres veces por semana, por muchas razones, materiales (no siempre tengo), los niños no siempre comen postre, les gusta mucho lo salado, a veces comen fruta o yogurt, así que cuando hago un postre si les gusta se lo pelean.


Bueno aquí lo comparto con ustedes.


Ingredientes (8 porciones)

2 cucharadas de mantequilla
500 grs de fresas en mitades
3 peras pelas en rodajas
100 grs. de chocolate bitter en barra picado

Para el crumble
100 grs. de harina
100 grs. de mantequilla
1/2 taza de azúcar
100 grs. de almendras peladas y en láminas
helado de vainilla para acompañar (optativo)

Método

Precalentar el horno a temperatura media (180 °c)

En un sartén colocar la mantequilla, calentar a fuego suave .
Agregar las frutas y cocinar 7 a 8 minutos más.
Retirar del fuego y transferir a una fuente del horno, de cerámica o de pyrex.O un molde para tartas.
Esparcir el chocolate encima de la fruta.Reserve.
En un bowl colocar todos los ingredientes para el crumble, y con la ayuda de las manos, mezclar hasta formar migas gruesas.
Agregar la mezcla sobre la fruta reservada y es parcir encima algunas almendras en láminas.
Hornear durante 20 o 25 minutos o hasta que esté dorado y crujiente.
Retirar del horno y dejar enfriar.
Se puede refrigerar hasta servir.
Se puede servir con helado de vainilla.

Creamy Baked Custards with strawberry compote




I adapted this recipe from Healthy Living Recipes, Reader Digest Com. Magazine.

I love this recipe and the kids too.

The original recipe is with cherries compote. I made with strawberries compote.
You can use you have o you like. (je)
Take care not to overcook the custards -- they should be just set when you take them out of the oven. This dessert is perfect for dinner parties because the custards can be prepared ahead of time and refrigerated until serving.

Custards (4 servings)

2 cups low fat milk

1 vanilla bean, or two teaspoon of liquid vanilla

2 eggs


2 eggs yolks

3 tablespoon of sugar

1 teaspoon of flour

Compote

1 tablespoon sugar

300 grs. fresh cherries or strawberries or blueberries

2 teaspoons cornstarch



Method

Place the milk and vanilla in a medium saucepan and heat over medium-high heat until almost boiling.


Remove from the heat, cover, and set aside for 15 minutes.

Preheat the oven to 200° C.

Place the whole eggs, egg yolks, 3 tablespoons of sugar, and flour in a bowl and lightly whisk together.

Bring the milk back to a boil, then remove the vanilla bean, and slowly pour the hot milk over the egg mixture, whisking constantly.


Strain the mixture into a pitcher, then divide among six 4-ounce ramekin dishes that have been coated with oil.


Set the ramekins in a shallow roasting pan and pour enough hot water into the pan to come halfway up the sides of the ramekins.


Bake until the custards are lightly set, about 30 to 35 minutes.

The custards should be slightly wobbly in the center as they will continue to cook for a few minutes after being removed from the oven.

Lift the custards out of the pan of hot water and place on a wire rack to cool. After cooling, refrigerate until ready to serve



Compote

Place 1 tablespoon sugar and 6 tablespoons water in a medium saucepan and heat over medium-high heat until the sugar has dissolved.

Bring to a boil, then reduce the heat to low, and add the cherries.

Cover the pan and simmer gently, stirring occasionally, until the fruits are tender, 4 to 5 minutes.

Use a slotted spoon to remove the fruits and place them in a small serving bowl; set aside.

Mix the cornstarch with 1 tablespoon cold water and then stir mixture into the fruity juices in the saucepan.


Bring the mixture to a boil, then reduce the heat to low and simmer, stirring, until thickened and clear, about 1 minute. Allow to cool for a few minutes, then pour the sauce over the fruits

(The compote can be served warm or at room temperature.) Spoon a little of the fruitsy compote over the top of each custard, and serve the rest of the compote on the side.





EN ESPAÑOL


Crema al horno con compota de fresas

Este postre tiene la textura de un flan pero es más como un custard que es un poco más espeso.

Esta receta la adapté de Healthy Living de Readers Digest.

La receta original se hacía con una compota de cerezas pero yo la hice con fresas, se puede hacer con cerezas, arándanos, frambuesas o fresas.


El custard (la crema) no hay que sobrecocinarlo, solo debe estar firme al sacar del horno y se hace a baño maría.

Este postre es muy bueno para cenas de la noche o comidas porque se puede preparar con anterioridad.



Ingredientes ( 4 porciones)

2 tazas de leche semidescremada



o baja en grasas



2 huevos



2 yemas



1 vaina vanillla o 2 cucharaditas de vainilla líquida

3 cucharadas de azúcar
1 cucharadita de harina


Compota




1 cucharada de azúcar



300 grs- de fresas o arándanos o cerezas



2 cucharadas de harina de maiz



o maicena



Preparación del custard o crema






Colocar en una olla la leche y la vainilla y calentar a fuego medio,hasta que hierva.



Retirar del fuego y dejar por unos 15 minutos.



Precalentar el horno a unos 200º C.



En un bowl colocar los huevos, las yemas, el azùcar, y la harina y batir hasta mezclar bien.



Agregar la leche a la mezcla del bowl y retirar (Si es el caso la vaina de vainilla) unir suavemente y batiendo al mismo tiempo.



Colar la mezcla en un jarro de vidrio y dividir la mezcla en cuatro pocillos de horno.



Colocar los pocillos con la mezcla en un molde metàlico al que se le ha agregado agua caliente para llevar al horno a baño marìa.



Llevar a horno por uos 30 minutos o hasta que estèn firmes.



Deben estar blandos en el centro, no importa porque se terminaran de cocer cuando ya se retiren del horno.



Sacarlos del molde y dejarlos enfriar un rato antes de ponerlos al refrigerador.



Compota de fresas (o de otra fruta)



En una olla mediana colocar 1 cucharada de azùcar y 6 cucharadas de agua, calentar a fuego medio hasta que el azùcar se disuelva.


Cuando hierva agregar las frutas elegidas.


Calentar unos minutos suavemente, revolviendo hasta que las frutas esten tiernas unos 4 a 5 minutos, con una espumadera retirar las frutas y dejarlas aparte.


Mezclar la harina de maiz o maicena con una cucharada de agua , mezclar bien y agregar a l jugo de las frutas que está en la olla, calentar a fuego muy bajo, hasta que se vaya espesando.Dejar hervir por un minuto, bajar el fuego dejar unos dos minutos más y apagar.

Vaciar esta salsa sobre las frutas reservadas.

La compota se puede servir tibia o temperatura normal.

Al servir la crema agregar una cucharada o un poco más en cada pocillo.

spinach and cheese phyllo rolls


Really phillo dough is a pleasure to many things, to sweet and savoy dishes.


Is a very thin dough that always is lovely to work (with care because is fragil) and so tasty.


I made last week these spinachs phyllo rolls and were so nice.


Are Easy and tasty. what more??





Ingredients (8 phyllo rolls)

400 grs. boiled spinachs

2 eggs

1 onion chopped

salt

120 grs feta cheese crumbled (or other)

30 grs, parmesan cheese grated

30 ml. oil

/4 cup parsley chopped

Phyllo dough (300 gs.) (find in supermarkets)

90 grs. melted butter


Method


Heat the oil in a frying pan, add the chopped onion and cook until is smooth.


Add the spinach, stir well and cook by 3 minutes.


In a bowl mix the spinachs, with the eggs,feta cheese and parmesan cheese,and the pasrsley chopped. add salt is needed.



Phyllo dough: extend the dough and brush with melted butter, cut in rectangles to make the rolls.

Place a tablespoon of the spinach mix and rolling well and double the sides (as springs rolls)

Make all the rolls.

Place in a oven tray or other and brush with melted butter.

Bake at oven to medium heat /180º C by 20 minutes or until are golden.

Serve with some salads or alone. (I serve two by person)






EN ESPAÑOL

Rollos de masa phyllo con espinacas

Realmente es un placer hacer platos con masa Phyllo o filo

Es suave, fàcil de trabajar y sirve para salado o dulce.

Se adapta a muchas recetas.

He hecho varias recetas con esta masa (la venden en los Supermercados viene congelada o sin congelar, secciòn platos para preparar)

Ahora hice estos rollos rellenos con espinaca y queso, y de verdad quedan ricos, son fáciles y deliciosos.


Ingredientes (8 rollos)

400 grs, de espinaca cocida

1 cebolla picada fina

30 ml. de aceite

2 huevos

sal

120 grs de queso feta desmenuzado

30 grs. de queso parmesano rallado

1/4 taza de perejil picado

Hojas de masa phyllo

90 grs. de mantequilla derretida

Preparaciòn

Calentar el aceite en un sartèn, agregar la cebolla, revolver sobre el fuego hasta que estè tierna.Retirar.

En la misma sartèn unir la espinaca con la cebolla, agregar los huevos, sal, el queso feta , el queso parmesano y el perejil.

Pincelar con mantequilla derretida hojas de masa filo, poner dos hojas y cortar en cuadrados para hacer los rollos.

Colocar dentro de la masa una cucharada en cada rollo, enrrollar y doblar bien los extremos, ir colocando en la bandeja del horno u otro molde.

Hasta hacer los 8 rollos.

Pincelarlos con mantequilla y llevarlos a horno moderado (180º c) y dejarlos por 20 minutos o hasta que estèn dorados.

Se pueden servir con ensaladas o solos.

Ingredients

(6 servings)

1/2 cup of granulated sugar
(125 grs.)

2 cups of water

700grs. sorted berries

(blueberries,strawberries, raspberries

or blackberries)

14 loaf white bread crust removed

berries sauce

100 grs. berries

2 tablespoon of caster sugar

1 teaspoon of lemon juice

2 tablespoon of water

To garnish

chocolate pieces

whipped cream

mint leaves

METHOD


1. In a pot place the water add the sugar stirring to dissolve.To slow heat add the berries and cook to slow heat by 4 to 5 minutes.Strain berries mixture, reserving juices.

2.Line ramekins (or others) with plastic wrap and so it hangs over side.

Using a cookie cutter cut 12 rounds from bread slices.

Trim crusts from remaining slices and cut each in 4 squares.


2.To build the pudding dip 1 round slice into fruit juices and place in bottom of ramekin.

Spoon about 1/2 cup of berries into ramekin. Dip one more round into the juices, place in the tops of the berries and wrap with a plastic.


Repeat assembling all the ramekins with remainings breads rounds and squares , juices and berries assembling.




3.Place the puddings on a baking sheet. Top with another baking sheet.Place a heavy object on baking sheet to set the puddings. And chill at fridge overnight.


4.Combine the remaining berries, the lemon juice and sugar and set aside.


5.To serve anwrap the puddings. Turn on plates, remove plastic wraps and dress with some berries, mint leaves, whipped cream and some chocolate pieces.

Budines de verano con berries, Con amor para Dhanggit y Mayumi!

Cuando Dhanggit (http://dhanggitskitchen.blogspot.com/ ) me habló acerca de este evento me pareció super! pero además cuando dijo que Mayumi (su hijita) cumpliría 2 años me pareción indispensable hacer algo.


Conozco a Dhanggit hace dos años, (quien dice que no se puede tener amigas por internet??) la misma edad de Mayumi, fue cuando recien empezaba mi blog de recetas y ella comenzó a visitarme y yo a ella.

con Dhanggit nos queremos mucho y nos llamamos hermanas por lo que Mayumi es como mi sobrina (es adorable), Dhanggit y su familia viven en Francia en un hermoso lugar.Hice para Mayumi y Dhanggit unos pequeños budines de berries (frutos silvestres) con nata batida y chocolate (porque a Mayumi le encanta el chocolate)

He estado casi todo el día en este post pero es una alegría (además el plazo vence mañana) así que esta receta va para Weekend Herb Blogging y Mayumi birth.Feliz cumpleaños Mayumi eres un tesoro, que Dios te bendiga.






p>Ingredientes ( 6 porciones)

1/2 taza de azúcar



(125 grs.)



2 tazas de agua



700 grs. de berries o frutos rojos



(arándanos,fresas o frambuesas o moras)



14 rebanadas de pan blanco sin corteza



salsa de berries



100 grs. de frutos rojos



2 cucharadas de azúcar glass o impalpable



1 cucharada de limón fresco



2 cucharadas de agua



Preparación



1. Poner el azúcar y el agua en una olla calentar, revolviendo hasta disolver.Bajar el fuego y agregar las frutas y cocinar a fuego lento de 4 a 5 minutos, hasta que esten tiernas sin deshacerse.

2.Recortar 8 rebanadas de pan (sin la corteza) con un cortador redondo y con(primero si se quiere forrar con film plàstico los bowls asì serà màs fàcil para sacarlos despues) 4 discos tapizar el fondo de cazuelitas o pequeños bowls. Cortar las otras rebanadas de pan en bastones y forrar los costados de las cazuelitas.Llenar con la mezcla de frutas, y colocar otro pedazo de pan redondo y luego frutas de nuevo.

Asì hacerlo en cada bowl.Guardar el lìquido que quede. Tapar las cazuelitas con film plàstico, colocarle un peso encima y refrigerar toda la noche hasta el otro día.

Para la salsa procesar las frutas , el azùcar, el jugo de limòn y el agua hasta homogeneizar.

Desmoldar los budines sacandoles el plàstico, darlos vuelta y colocarlos en plato de postre, adornar con nata batida pedazos de chocolate, frutas y hojas de menta..Servir con la salsa.
