The merengue red wine is other antique dessert of our country.
I remember when I was little and arrived Sunday at my grand Mom home (delicious cooked as I said) I liked to open fridge door and see what was for dessert, my fascination when she had made merengue red whine(turrón de vino) with nuts. simple and delicious dessert that came with the dishes perfect eating (usually fish or shellfish) other times she prepared quince jam who also ate dessert. I share with you this dessert as a happy memory from my childhood.
Ingredients (6 servings)
Merengue wine
1/2 cup of red wine like Merlot(or other)
3/4 cup sugar
3 whites egg
1 cinnamon stick
pinch of salt
6 or 7 waltnuts in halves
English cream
1 and half cup of milk
1/2 cup of heavy cream
1 tablespoon of cornstarch
3 yolks egg
1/2 cup of sugar
1 teaspoon liquid vanilla
Method
English cream
In a pot heat the milk and heavy cream and the vanilla teaspoon, in medium heat.
When is boiling, cut the fire. Dissolve the cornstarch in cold water and the to the milk, cook by a while. In a bowl mix the yolks and the sugar, mix well and add to boiled milk with corstarch dissolved ,stir constantly until well-integrated .
In the pot cook again(Slow heat) all the cream by 4 minutos or until is thicken
Cut the fire.Let cool.
Merengue red whine
syrup red wine
In a pot heat the red wine with the cinnamon stick and sugar and heat by 6 to 8 minutes stirring occasionally until have a heavy syrup .Cut the fire and remove the piece of cinnamon.
In a large bowl beat well the egg whites with pinch of salt,beat the egg whites until stiff .
Add whisking wine syrup gradually, beating until meringue is cool .
Prepare 6 cups for dessert. First divide the custard into the cups, an then cover with the wine merengue and garnish with some waltnuts and mint leaves.
Leave in the refrigerator until ready to serve .

Cuando yo era una niña me encantaba llegar a las casa de a mi abuelita los días Domingos donde generalmente ibamos a almorzar, y cuando hacía este postre el Turrón de vino (que es una receta muy antigua de la repostería en Chile) me fascinaba, ahora comparto este postre con ustedes.
Turrón de vino (merengue con vino)
Ingredientes Crema Inglesa
1 y 1/2 taza de leche
1/2 taza de crema o nata
3 yemas
1/2 taza de azúcar
1 cucharada de maicena
1 cucharadita de vainilla líquida
Turron de vino
1/2 taza de vino merlot u otro
1 palito de canela
3/4 taza de azúcar
3 claras de huevo a temperatura ambiente
1 pizca de sal
6 o 7 nueces partidas para adornar
Preparación
Crema Inglesa
En una olla colocar la leche,la crema y la vainilla, llevar a ebullición a fuego medio, retirar y dejar reposar un momento.En un poco de agua fría disolver la maicena y agregar a la mezcla.
En un bol colocar el azúcar con las yemas, batir hasta espesar ligeramente, verter de apoco esta mezcla sobre la mezcla de leche y crema. Unir bien.
Revolver constantemente hasta integrar.
Volver a la olla y cocinar revolver de 4 a 5 minutos hasta espesar.Co0cinar sin que hierva para que no se corte.Dejar enfriar.
Merengue o turrón con vino
En una olla colocar el vino con la canela, y azúcar, revolver, cocinar durante unos 8 minutos revolviendo siempre. Cocinar hasta que espese.
Como un almíbar espeso. Retirar la canela.
Para el merengue batir las claras con la pizca de sal hasta que esten firmes y luego agregar con cuidado de a poco el almíbar de vino, sin dejar de batir hasta que el merengue se enfrie.
Preparar 6 copas, repartir la crema inglesa en las copas y sobre estas agregar el merengue, adornar con nueces.
Dejar en la nevera hasta que se vaya a servir.
