Fig and raspberries Clafouti (Clafouti de frambuesas e higos)






This dessert or whatever has been called an uncovering for me, had always seen the Clafoutis on Blogs and I loved the fruits, of course (you know how I love the berries) until I decided to do it, loved it all, fortunately I took photos with time.



The Clafoutis is a classic French dessert. Basically it is a fruit in berries (and that is the lovely I think). This idea is echoed in traditional English cooking, although is not normally sweetened in English cooking.

You can make with any fruits, cherries, pears, apples, berries etc.
I fin this lovely recipe and adapted it in  "Enciclopedia de Repostería " (Lo mejor de Paula Cocina)
año 2009.




The recipe (serves 6)

Ingredients

10 fresh figs (in quarters)
1 cup fresh or frozen raspberries
1/2 cup  of flour (70 grs.)
1 1/4 cup heavy cream
100 grs. of sugar (or other sweetened  sugar like splenda)
3 eggs
pinch of salt

Method

Preheat the oven  medium heat (180° c) .
Buttered some ramekins or others  similars bowls (suitable for oven )
Distribute the raspberries and figs in the bowls.Reserve.
Process the flour, cream, sugar, eggs and sal. Procesar until the mixture is homogeneous.
Pour the mixture over the fruit bowls .
Baking by 20 to 25 minutes .The batter should be golden brown and well risen.
Serve warm as a dessert.
If you want sprinkle with caster sugar.

Este poste fue una grata sorpresa para mí. Por lo liviano y delicioso. Siempre lo veía en libros o en los blogs hasta que decidí bucar una receta que me tincara (me llamara la atención) y justo había comprado higos (es tan corta la época) no les miento que tuve que salvar los higos para el postre, resulta que ahora a todos les gustan.
Bueno en fin El Clafouti es una receta de procedencia francesa y  básicamente es un batido  con frutas pero el resultado es fantástico.
Se dice que la idea viene de un postre inglés (y puede ser) pero normalmente  no lo endulzan, en todo caso es muy poca la cantidad de azúcar y se puede reemplazar por Splenda o similar.
Esta receta está adaptada de una colección de libros  "Enciclopedia de la Repostería" de Lo mejor de Paula Cocina, año 2009.

Se puede hacer con fresas o frutillas, cerezas, peras, o manzanas.





Ingredientes  (6 porciones)


10 higos frescos cortados en cuartos
1 taza de frambuesas frescas o congeladas
1/2 tza de harina (70 gr.)
1 1/4 taza de crema o nata espesa
100 grs. de azúcar
3 huevos
1 pizca de sal

Método

Precalentar el horno a temperatura media (180° C) .
Enmantequillar 6 cuencos o bowls de cerámica o de vidrio para horno (pyrex)
Y distribuir en estos los higos ya cortados y las fram buesas. Reservar.

En la procesadora (o batir bien a mano) colocar la harina,crema, azúcar, huevos y sal.
Procesar hasta que se logre una consistencia homogénea.
Verter la mezcla en los moldes reservados, sobre la fruta.
Hornear por 20 a 25 minutos o hasta que la mezcla esté firme.
Debe quedar dorado y firme y se verá la fruta.
Retirar del horno y dejar entibiar.
Se puede servir tibio o caliente y si se quiere se puede espolvorear con azúcar flor o azucar glass.

Cheese and tomato eggplant pudding (budìn de berenjenas con queso)








Exotic in taste and texture, eggplant can be prepared in a variety of different ways. From ovenroasting to grilling eggplant can be a staple in any diet.
 Eggplant is largely made from water, so some care in properly preparing it for the cooking method of choice definitely comes into play.


Eggplant is perfect for simple, creative, delicious dishes. Eggplant is wonderful in salads, soups, main courses, casseroles and side dishes.

This recipe is adapted from "La cocina Popular" book from Mariana Bravo Walker. An antique food book from Chile, I ve' had mine by many years.


The recipe







Ingredients (6 serve)

5 eggplants or aubergines
6 tomatoes in slices
3 eggs
salt and pepper
2 onions minced
oil
3 tablespoon og grated cheese or
150 grs. gouda or mozarella cheese
2 tablespoons of breadcrumbs

Method
Wash the eggsplants and cut into slices unpeeled .
Place  in salted water for 1 hour .
Remove and dry with a clean cloth,

 In a skillet, saute the eggplant with oil and seasoning it well with salt and pepper Reseve.
Sauté the onions.
Prepare a large dish or pyrex place a layer of aubergines, an then a layer of chopped onions.
Then place a layer of tomatoes,  put the  cheese (grated or other)and repeat the layers.
Beat the eggs and empty over the stew,  and cover with the breadcrumbs.
Place in the oven by  30 minutes medium heat (180° c)until is deep golden.

La textura y el color de la berenjena son deliciosas, y hay muchas formas de prepararlas, ya sea al horno, guisadas o al grill son sabrosas.
Esta receta es al horno y está adaptada del libro "La cocina popular"de Mariana Bravo Walker, un libro de recetas muy antiguo aquí en Chile, su primera versión es del año 1961 y de ahí en adelante se han hecho numerosas versiones. De hecho lo tengo desde que me casé porque es como para tenerlo a mano siempre.

La receta (6 porciones)

5 berenjenas medianas
6 tomates en rodajas
3 huevos
sal y pimienta
2 cebollas trozadas a lo largo (pluma)
aceite
3 cucharadas de queso rallado parmesano
o 100 grs. queso gauda o mozarella
2 cucharadas de pan rallado

Preparación

Lavar las berenjenas y cortarla en rodajas sin pelar.
Colocar en agua con sal por una hora.
Destilar y secar con un paño limpio.
Saltear en aceite por un rato.  Sazonar con sal y pimienta.Reservar.
Saltear las cebollas.
Preparar una fuente de arcilla o pyrex (para horno) y colocar por capas, las berenjenas, las cebollas y los tomates y luego el  queso, repetir las capas nuevamente.
Batir los huevos y vaciarlos sobre el guiso de berenjenas.
Finalmente espolvorear con el pan rallado. Llevar a horo medio  a 180° C. por unos 30 minutos o hasta que esté dorado.

Suspiro Limeño (with sweet potatoes) A Peruvian delicious recipe...

One of my first recipes in this Blog was Suspiro Limeño, the typical peruvian delicious dessert, I have to say Susupiro Limeño is really one of my favorites desserts.
The peruvian cuisine is famous around the world  and have delicious dishes and dessert.

Now I find this awesome  recipe with sweet potatoes and believe me is one of the best recipes I never tasted. The swwet potatoes give thsi dessert a really special touch I think.

About sweet potatoes I want to put here a link with a blogger  friend Anabella who has a wonderful blog (CocinArte Chile) about chilean recipes and others and their history, about how many time begin the sweet potatoes history in our country.





THE RECIPE

Ingredients

1 tin evaporated milk
1 tin condensed milk (sweetened)
5 eggs
200 grs. sweet potatoes puree
(boiled and mashed)
3/4 cup of sugar
1 teaspoon of vanilla
125 ml port wine (red)

Method
Put in a sauce pot  the  condensed milk and the evaporated milk,  and  cook  slow heat stirring all the time with a woodspoon until begin turn in caramel or dulce de leche (beige colour).
Add the sweet potatoes  puree mix well and cook by a while until is thickness
Cut the fire.Add  the vanilla and the yolks eggs one by one, stir well .
Divide the cream in six glasses and reserve.

Merengue

In a pot place the sugar and cover with the port wine, heat and wait begin boil and look as  golden caramel. Whipp the whites with a pinch of salt beat as merengue and add the caramel to whipped whites.
Divide the merengue over the glases with sweet potatos cream. Garnish with cinnamon powder and let chill on  fridge until serve.

Suspiro Limeño  con crema de camotes (o batatas)




Una de mis primeras recetas en este blog fue el Suspiro Limeño uno de los postres màs conocidos de la deliciosa comida peruana. Si quieren ver esa receta està aquì .

Esta receta de ahora que va con camotes es una variaciòn del Suspiro. La encontrè en un recetario peruano de recetas de camotes. Es una de las màs ricas recetas que he probado en cuanto a postres.
Para los que conocen y han probado la lùcuma este postre tiene una textura similar.
Ademàs quiero agregar un link de mi amiga Anabella que tiene un muy buen blog acerca de recetas de Chile y de Amèrica.
El blog de Anabella se llama CocinaArte y lo encuentran aquì, y asì pueden aprender  del camote ya que en nuestro paìs las generaciones  màs nuevas no lo conocen mucho. Y que importante es saber la historia de nuestras costumbres gastronòmicas y conservarlas.

Nota: los camotes se encuentran  en los supermercados Lìder y Jumbo.

Ingredientes (6 porciones)
1 lata de leche condensada
1 lata de leche evaporada
5 huevos
1 pizca de sal
200 grs.de purè de camote
1 cucharadita de vainilla
125 ml. de vino oporto

Preparaciòn

Verter en una olla la leche condensada y la leche evaporada y cocinar a fuego lento. Revolviendo siempre hasta que tome una textura màs espesa  color cafè con leche. Agregar el purè de camotes y seguir revolviendo a fuego lento con una cuchara de madera hasta que tenga la consistencia de un manjar espeso.
Retirar del fuego y agregar las yemas de huevo de a una y agregar la vainilla. Revolver bien y dejar reposar.
Servir en copas repartiendo la crema de camotes con leche.
Aparte en una olla màs pequeña poner el azùcar con el oporto y a fuego bajo hervir hasta que tome punto de almìbar.
En un bowl batir las claras  con la pizca de sal a punto de nieve  e incorporar de a poco el almìbar aun caliente, siempre batiendo hasta que se vaya enfriando. Rellenar las copas con el merengue y espolvorear encima canela molida.
Guardar en el refrigerador hasta que se vayan a servir.

Lavender Panacotta with raspberries sauce (Panacotta de lavanda con salsa de frambuesas)



Really love lavender, and cooking with it.
 Fortunately I have an English lavender bush in my  house, anda lot of time I wanna make this panacotta recipe
With lavender . you can make muffins and cakes too  and I have a Honey and lavender ice cream really delicious, see here if you want to see the recipe.


Well and raspberry sauce gives it a delicious touch. A fresh and delicious dessert for any of time of year.







The recipe

Ingredients

1 1/2 cup of milk
1 1/2 cup of cream
3/4 cup of granulated sugar
2 tablespoons of lavender flowers
1 tablespoon  of grated orange peel
2 teaspoon of gelatin powder
2 tablespoon of cold water
1 1/2 cup of raspberries
lemon juice
1 1/2 teaspoon of caster sugar





Method

1. Place   the milk, cream and sugar in a medium pot. Cook until boil and the sugar is dissolved.

2.Cut the fire and add the lavender flowers. Cover and set aside  until   be cool.
With a fine strainer strain the milk into a bowl. Then pour the orange peel.



In a bowl, combine the gelatin with with water andy cook for 30 seconds in the microwave. It should be transparent.


Allow gelatin respir for a minute. Add  to  lavander milk prepared and  integrate with a wooden spoon.

Divide into six individual ramekins.

Cool to room temperature and then refrigerate for 3-4 hours.

Raspberries sauce
Processing  raspberries in a blender, add a few drops of lemon juice and sugar. stir and set aside.
Unmold panacotta molds in  warm  water and serve with raspberry sauce  and garnish qith mint leaves and lavender flowers.
Refrigerate until serve.

Panacotta de Lavanda con salsa de frambuesas


Siempre me ha gustado cocinar con lavanda, se pueden hacer muffins, cakes e incluso tengo una deliciosa receta de helados de lavanda con miel la pueden ver aquì.
Tengo la suerte de que tengo lavanda aquì en la casa, la plantè muy pequeña y ahora es un arbusto muy lindo.

Ingredientes (6 porciones)

1 y1/2 taza de leche
1 y 1/2 taza de crema o nata
3/4 taza de azúcar
2 cucharadas de flores de lavanda
3/4 cucharada de ralladura de naranja
2 cucharaditas gelatina sin sabor
3 cucharadas de agua fría
1  1/2 taza de frambuesas(frescas o congeladas)
jugo de limón
1 y 1/2 cucharada de azúcar flor o azúcar glass

Preparación

En una olla poner la leche, la crema y el azúcar. Cocinar a fuego medio hasta que hierva y se disuelva completamente el azúcar.

Retirar del fuego y agregar las flores de lavanda. Tapar y dejar reposar y enfriar.

Con un colador fino, filtrar la mezcla en un bowl, luego agregar la ralladura de naranja.
En una fuente pequeña o jarro pyrex mezclar la gelatina con el agua fría y cocinar en el horno microondas por 30 segundos a máxima potencia.
Debe quedar transparente.
Dejar reposar la gelatina por un minuto.
Añadir la leche saborizada con la lavanda.Revolver para integrar y verter la mezcla en los bols.
Enfriar a temperatura ambiente y luego refrigerar por 3 a 4 horas.
En la licuadora porcesar las frambuesas hasta formar una pasta.
Agregar las gotas de limón y el azúcar flor o azúcar glass.
Revolver y reservar.
Poner los moldes de panacotta en gua tibia para poder desmoldar Desprender con el borde de un cuchillo y ponerlos en un plato. Decorar con la salsa de frambuesas y algunas hojas de menta y lavanda.

Pumpkin souflee (Souflée de zapallo o calabaza)










First of all I love the souflle although I know they are not so easy, it should be borne in mind that whenever they get off a little to get them out of the oven, the first time that I left them a long time, only a few minutes should be left and serve immediately, as the soufflé has much lower air about 20 minutes later, the idea is to make and serve still hot.
Some souflee history

 A soufflé is a light, fluffy, baked cake made with egg yolks and beaten egg whites combined with various other ingredients and served as a savory main dish or sweetened as a dessert. The word soufflé is the past participle of the French verb souffler which means "to blow up" or more loosely "puff up" — an apt description of what happens to this combination of custard and egg whites.
I prefer make the souffles in these little ramekins rather than one large (although it can be fine) because this is one for each guest and served quickly.
I have to  say that I loved the recipe and Espe (my daughter) also, almost salty is delicious but could be a dessert, it's an entry, but can be served on any occasion.

This recipe is adapted from a collection of books called "Chef at Home" Trident Press International , USA.

Pumpkin souffle (5-6 servings)

Ingredients
1 tablespoon of butter
2 tablespoon of plain flour
1 and 1/2 cup of milk
4 eggs (separated)
1 and 1/2 cup of pumpkin puree
salt
pepper

Method

1. Melted the butter in a pot, add the flour and stir
cook by a minute and add the milk slowly,
and mix well. Cut the fire.
2.Add the yolks slowly and then the pumpkin puree, mix slowly, add salt and peper tasted.
3. In a bowl whipp the whites with a pinch of  salt and make a  firm meringue and add to the ready mix with slow  movements.

Preheat the oven at 190° c and greased with some butter the ramekins.


Bake by 20 o 25 minutes
Will be  fluffy and  golden. Allow 1 minute and carefully remove (be hot) and serve immediately with green salad can be or alone.




EN ESPAÑOL

Soufflé de zapallo o calabaza





Primero que nada adoro los souffles de cualquier tipo, eramos muy chicos cuando mi mamá (que ya saben es una experta cocinera) nos hacía souflé de queso (ya lo haremos aqui) o sea nos encantaba.
Despues he probado diversas recetas. Ya saben que se pueden hacer dulces o salados (me encantan los salados) aunque aparentemente son un poco engorrosos no es así, lo que hay que tener cuidado cuando se retira del horno, ojalá servirlo inmediatamente, despues de 20 minutos se baja un poco porque el souflee  tiene mucho aire, por eso es además liviano y delicioso.

Para hacer estos souffles prefería hacerlos en estos cuencos de cerámica (ramekins) porque como son individuales son más fáciles de servir pero tambien se pueden hacer en un molde de souflé grande y repartir las porciones. (Se pueden usar tambien cuencos de pyrex que son especiales para el horno)









Ingredientes (5 a 6 porciones)

1 cucharada de mantequilla
2 cucharadas de harina normal
1 1/2 taza de leche
4 huevos separados
1 y 1/2 taza de puré de calabaza o zapallo
sal y pimienta a gusto


Preparación

Derretir la mantequilla en una ollita, agregar la harina y revolver.Cocinar 1 minuto.Verter gradualmente la leche y mezclar.Cocinar  hasta que la salsa se espese. Retirar del fuego.Incoporar las yemas a la salsa blanca batiendo, unir con el puré de calabaza o zapallo y sazonar con sal y pimienta.

Batir las claras a punto de nieve y agregar a la mezcla en movientos envolventes.
Precalentar el horno a 190° C y engrasar con un poco de mantequilla los cuencos.

Distribuir la mezcla en los moldes y hornear por unos 20 a 25 minutos hasta que los souflés estén dorados y suban. Retirar con cuidado (estarán calientes) y servir inmediatamente con ensaladas verdes o solos.

Blackberries Tarta (Tarta de moras)



I made this blackberriesTarte a few weeks  ago when we went to the house of a friend to spend the afternoon.

In fact it was a recipe that had never seemed simple and delicious. Well and all of you know I really love berries!
This recipe is adapted from  special Issue (Cakes and Kuchenes) from Revista Paula año 2009.

The recipe

1ngredients

150 grs. butter
2 large eggs
3/4 cup of sugar
1 teaspoon of vanilla
1 cup of plain flour
1 1/2 teaspoon of baking powder
300 grs. blackberries of raspberries
or apples, plums,peaches.
Caster sugar to sprinkle


Preheat the oven at  180° (medium)
In a bowl beat the butte and sugarr until is smooth and add the eggs one for one.
Add the vanilla.
Stir well.
Finally add the flour and the baking powder mixing all.
The dough will be soft .
Greased a spring form  cake  pan  about 28 cm. round.
With a tablespoon spread the dough over the mold. Over the dough put the blackberries or other fruits.
and sprinkle with caster sugar.
Bake by 10 minutes until the dough to rise.and cover part of the fruits.An then bake by 15 minutes.
Retire from the oven  and let cool.

Esta es una tarta fácil y rápida además queda riquísima. La hice hace unas semanas cuando fuimos donde una amiga para pasar la tarde, busqué algo para llevar y hacer, rápido y delicioso y encontré esta receta.
No la había hecho nunca pero me gustó mucho la receta.
Está adaptada de un libro de recetas (queques y küchenes) del año 2009, que  es parte de una colección.


Ingredientes

150 grs. de mantequilla
2 huevos grandes
3/4 taza de azúcar
1 cucharadita de vainilla
1 taza de harina normal
1 y 1/2 cucharadita de polvos de hornear
300 grs. de moras o frambuesas
o manzanas,duraznos o ciruelas
azúcar impalpable para espolvorear

Método

Precalentar el horno a 180 ° C,En un bol  batir la mantequilla con el azucar, agregar los huevos de auno batiendo suavemente,Agregar la vainilla.
De a poco agregar la harina y los polvos de hornear a la mezcla anterior, unir bien.
La masa debe quedar blanda.
En un molde de fondo removible (de unos 28 cm) distribuir la masa.
Reparir sobre la masa las moras o frambuesas o la fruta que se va a ocupar.
Espolvorear con azúcar impalpable para que se forme una costra.
Hornearpor unos 10 mts. hasta que la masa suba y cubra la fruta.
reducir un poco la temperatura y cocinar por unos 15 minutos más. Cuidar que no se seque.
Queda ligeramente dorado.
Retirar y dejar enfriar.
Se pueden usar moras o frambuesas congeladas.

Orange Polenta Cake and Happy Mom's day!!





As a mom that I wanted to do something special for Mother's Day, but something simple and from home, like those recipes that mothers made us earlier and also say hello to my mom, which is the best mother in the world.


I love you mommy. !!
Happy day Mom and happy day to all Moms!
I found this recipe for a polenta cake with orange, it was a success I did yesterday and had other children visit and who were not or crumbs.

This recipe is adapted from BBC Good Food


















Orange Polenta Cake
The recipe

Ingredients

250 grs. butter
250 grs. golden sugar
4 large eggs
150 grs.polenta
250 grs.plain flour
2 tablespoon of baking powder
zest and juice of two oranges
(less 100 ml juice for the glaze)

For the orange glaze

100 ml orange juice
100 g caster sugar

Method

Heat oven at 160° C.
Greased or line with a baking parchment. a roun tine or a rectangular tin (about 24 cm).
Cream the butter and sugar together until light and fluffy.
Add the eggs one at a time and mix thoroughly.
Once the mixtures is cmbined, add al the dry ingredients and the zest and juice  after you have meaured off 100 ml for the glaze.
Transfer the mixture to the tin , spread evenly , then cook about 45 minutes or until a skewer inserted into the centre of the cake comes out clean.
Remove from the oven  and turn out onto a wire rack to cool.

To make the glaze

Put the juice and sugar in a medium saucepan and bring to the boil. Let it simmer for 5 mns. then remove from the heat and allow to cool.Drizzle the orange glaze over the top of the cooled cake .
Serve with whipped cream or lemon Ice cream.

Como mamá en estos días quería  hacer algo especial pero a la vez simple, algo hogareño, como esas recetas antiguas que hacian nuestras mamás, y  ala vez saludar a mi mamá que es la mejor mamá del mundo(je)  Te quiero mucho mamá!! y Feliz día a todas las mamás!

Encontré esta receta de un cake de polenta con naranja, que fue un éxito, absolutamente delicioso porque la polenta le da una textura especial y la nara nja le da humedad.Le encantó a todos.Y no quedaron ni las migas literalmente.

Cake de polenta con naranja

Ingredientes

250 grs, mantequilla ablandada
250 grs. azúcar rubia
4 huevos
150 grs.polenta
250 grs. harina normal
2 cucharaditas de polvos de hornear
el jugo y la ralladura de 2 naranjas grandes
(menos 100 ml que se dejan para el glace)

Glace de naranja

100 ml, jugo de naranja
100 grs. azúcar glass


Preparación

Calentar el horno a temperatura  de 160° C.
Enmantequillar un molde redondo o rectangular de 24 cm.aproximadamente o colocarle
papel mantequilla.
Batir la mantequilla y el azúcar hasta que esté cremoso.
Agregar los huevos de a uno y mezclar bien.
Una vez que la mezcla está combinada agregar la ralladura y el jugo de naranja  dejando aparte los 100 ml
para el glace.

Colocar la mezcla en el molde, esparciendo bien.
Llevar a horno por 45 minutos o hasta que al introducir un palito este salga seco y limpio.
La textura debe estar dorada.
Dejar enfriar por un rato.

Para hacer el glace poner el jugo de naranja y el azúcar en un sartén hasta que empieza a hervir.
Cocinar por unos 5 minutos.Retirar del calor y dejar enfriar
Hacer dibujos con el glace sobre el cake y dejar enfriar.
Se puede servir con nata o crema batida o helado de limón..

Palta Reina (Queen avocado stuffed with tuna)




I think this is other amazing and nice recipe of our country. We love alot avocado (palta), in all forms a like salads, entrees or with  toasted bread (mashed aguacate with bread) or hot dogs with mashed aguacate, or with seafood, and these are some I can remember.
Anyay you know the the beneficial effects  of the aguacate and is delicious taste.




Ingredients

4 avocados
1 tuna tin (about 300 grs.)
Mayonnaise
lemon juice
salt and pepper
1/ 2 chopped onion
chopped lettuce
red pepper
some black olives

Preparation

Peel the avocados and cut them in half, lengthwise, removing the avocado seed. . Add salt and lemon inside.

Prepare a paste with chopped onion, tuna and mixed with mayonnaise.Add some lemon juice.
Fill the avocado with this mixture and cover with mayonnaise, and decorate with  slices of  red pepper or basil leaves or  sliced black olives.

Place each  stuffed avocado on lettuce leaves.


Note:

A friend of mine told me about the name of this dish:

usually said, "queen avocado" that is  avocado stuffed with ground chicken and mayonnaise, and "York avocado"  stuffed with tuna avocado,and "Cardenal avocado" when is fill with prawns,  this dish was created at a restaurant in Chile around 1920 and adopted in our country in different ways besides is now filled with salmon or with corn but all versions stem from the first recipe ..




 



Esta es otra receta de nuestra tierra, demàs està decir que nos fascina la palta (aguacate), en sandwich o en pan de hot dogs, o con pan tostado, una marraqueta con palta molida, etc.etc. Esta palta reina se puede hacer rellena con atùn o con pollo molido, tambien con gambas o camarones (deliciosa) y bueno ya saben todos los beneficios para la salud que tiene la palta o aguacate, de hecho cuando podemos la comemos al desayuno con pan tostado.

Palta Reina rellena con atùn (aguacate con atùn)


Ingredientes

4 paltas o aguacates
1 o 2 tarros o botes de atùn (300 grs.)
1/2 cebolla picada fina
Mayonesa
jugo de limòn
sal y pimienta
lechuga picada
pimiento rojo
pedazos de aceitunas u olivas para decorar



Preparaciòn

Cortar los aguacates o paltas a lo largo y sacarles la semilla.
Aliñar con limòn y sal.
Reservar

En un bowl mezclar la cebolla picada, el atùn, y mayonesa. Hasta hacer una pasta. agregarle jugo de limòn.
Rellenar los aguacates o paltas con esta mezcla de atùn.
Decorar con mayonesa, trozos de pimentòn rojo o pedazos de aceitunas negras.
Servir en cada plato sobre la lechuga picada y aliñada.


Nota

Una amiga me ha señalado que el nombre inicial de esta receta "Palta Reina" se le llama principalmente cuando va rellena con pollo y mayonesa,  "Palta York" cuando va rellena con atun y mayonesa, y" Palta Cardenal "cuando va rellena con camarones,  pero tambien existen las versiones ahora rellenas con salmón, con choclo picado etc.
La primera receta nace de un Restaurant famoso en Santiago alrededor del 1920 y de ahí las diferentes versiones que ya conocemos.)
