Baked pineapple with coconut and honey (Piña asada con coco y miel)








We are not a  tropical country but  all my life I have seen in Chile pineapples and  we eat them a lot, but mostly in a jar, but I love fresh pineapple, cut even more jobs, now here we find  pineapple everywhere. and the new type is really sweet.  A lot of pineapples come from Ecuador and other countries. 



I found   a nice and  simpl recipe  and this is  easy and delicious dessert with coconut, pineapple and honey. I must say it is delicious.


Is adapted from a recipe from another chilean  chef who travel to a lot of countries : Connie Hamilton  and this  recipe is from Vietnam 


Baked pineapple with coconut and honey




Ingredients

1 or two fresh pineapples slices round (not thin)
or two cans of pineapples in round cuts
3/4 cup of lemon juice
3/4 cup of liquid honey
1/4 golden sugar
3/4 cup grated coconut
Serve  with some  vanilla, lúcuma or coconut Ice cream.
(I place a link about lúcumas because soon I will make a lucuma dessert and know you can buy in many sites lucuma powder or lucuma pulp)

 Method

Into a bowl mix the honey, sugar with lemon juice and set aside by 10 minutes.
In a large dish for oven  place the round pineapples and then bain the pineapples with the honey and lemon juice mix, empty all.
Sprinkle with grated coconut  over the pineapples.
Preheat the oven at 190° c and bake the pineaples by 20 to 30 minutes or util look golden.
Serve warm or cool with some Ice Creams balls.
Garnish with mint leaves.

Piña asada con coco y miel

Me acuerdo de mucho tiempo haber visto piñas aquí en Chile, no siendo nosotros un país tropical, siempre hemos tenido fruta excelente pero las piñas y plátanos (bananas) vienen de Ecuador, Brasil y otros países.
Se consume harta piña aquí, para postre, dulces y tortas pero mayormente vienen en tarros o botes, o sea envasadas. Pero últimamente se ven piñas practicamente en todas partes.
Adoro la piña fresca tiene un  aroma y un sabor especial, además todas las piñas que llegan ahora a Chile son dulces. Así que no se preocupen de que sea ácida.
Encontré esta receta de otra chef chilena viajera y justamente esta receta es de Vietnam.
Es una piña asada con una mezcla de miel, coco y azúcar rubia.


Ingredientes

1 o 2 piñas frescas (o 2 tarros de piña en conserva en rodajas)
La piña fresca se debe cortar en rodajas sacandoles cuidadosamente la cáscara.
En algunos super las dan ya peladas en el momento.
Se deben cortar no muy delgadas.
3/4 taza de jugo de limón
3/4 taza de miel líquida
1/4 taza de azucar rubia
3/4 taza de coco rallado
Helados para acompañar. de vanilla, lúcuma o coco








En un bol mezclar la miel, jugo de limón, y azúcar rubia.
Dejar reposar por 10 minutos.

En una fuente para horno poner las piñas en rodajas y bañar con el jugo de limón,, miel y azúcar.
Esparcir el coco rallado sobre la fuente con piñas.
Precalentar el horno a 190° C.
Llevar a horno por unos 20 a 30 minutos o hasta que las piñas estén doradas.
Servir tibio o frio acompañado de helado .
Adornar con hojas de menta.

Oven stuffed potatoes (papas rellenas al horno)






This is a typical chilean dish but with a twist, normally they are fry but I find this recipe at Oven  but if you want to know the other stuff potato see here.

I adapted this recipe from a recipe of the chilean chef Carolina Correa


Ingredients

1 kilo potatoes
salt
3 yolks
3 tablespoons of flour
1 tablespoon of chopped chives
200 grs. grinded turkey meat (cooked)(or turkey jam)
200 grs. chopped spinachs boiled
grated parmesan cheese
1 egg beaten

Method

First, boiled the potatoes like you will puree, mashed the potatoes and  add  the eggs yolks, flour, salt and chives chopped, mix well like a dough. Make balls like oval or round. Reserve.


Process the cooked turkey meat and spinach, forming a paste. add salt.


With this mixture fill the potatoes giving an oval shape.


Pass the potatoes in  the beaten egg and then by the grated cheese.


Place in a baking oven (190 ° c) for about 20-30 minutes or until browned.

Serve with green salads  or tomatoes.

Papas rellenas al horno

Este es un típico plato de nuestro país pero con un cambio, normalmente las papas rellenas van fritas (que son deliciosas) pero esta receta se hace al horno.

Esta receta está adaptada de una receta de la chef Carolina Correa.



Ingredientes


1 kilo de papas
3 yemas de huevo
3 cucharadas de harina
sal
1 cucharada de ciboulette o cebollín picado.
250 grs de espinacas cocidas y picadas
250 grs. carne de pavo picada y cocida
queso rallado
1 huevo batido


Preparación

Moler las papas y agregarle las 3 yemas, la harina, sal y el ciboulette picado.
Aparte procesar junto las espinacas y la carne molida de pavo, sazonar con sal y formar una pasta con estos ingredientes.
Con esta pasta rellenar las papas haciendo una forma oval.
Luego pasar por el huevo batido y despues por el queso rallado.
Colocar al horno en una fuente  por unos 20 a 30 minutos o hasta que esten doradas.
(Horno 190° c)
Servir con enensaladas verdes o con tomates en rodajas.
Es un plato para toda época.

bluberries cake (queque de arándanos)










You heard this history before in his blog, I love berries all the time, all the year and everywhere, so here we have a bluberries cake, the other day I want make something  sweet to my kids  and find this recipe, specially for you that are in summer, try with fresh blueberries but I used my freeze blueberries from our summer.
I told you I cant live without berries so I freeze always berries at summer and I have all year and you know the blueberies are rich in antioxidants so are really healthy for you.... and yummy..
I adapted this recipe from  Paula Repostería año 2009.

THE RECIPE

Ingredients

 2 cups of plain flour
1 1/2 teaspoon of baking powder
1/4 teaspoon of salt
5 tablespoon of butter
1  1/3  cup of sugar
2 eggs                                                                          
2 teaspoon  of grated lemon
1/2 cup of milk
1 y 1/2 cup of blueberries
3 tablespoon   lemon juice






Method

1.Preheat the oven medium/high temperature (190° c)
Butter a rectangular pan  about 20 x 12 cm and reserve.

2.In a bowl mix the flour, baking powder and salt.


In another bowl mix the butter with  1 cup sugar, beat well until mixture is creamy (beat by machine or hand)

Add the eggs one for one and mix well.

Add the lemon zest and reserved dry ingredients, add slowly, alternating with the milk.
and then   the blueberries to the batter, mixing slowly .

3.In the reserved pan pour the mixture and bake by 45 mts. or until the cake golden and firm in the center

4. In a small saucepan, heat the remaining sugar(1/3 cup) and lemon juice over medium heat until the sugar has dissolved.

Remove cake from oven and prick the surface several times and on the lemon juice with sugar and leave to cool for 30 minutes  in the pan before serving.

Cake de arándanos (queuqe de arándanos)

Uds. han escuchado esta historia antes, adoro los berries (frutos rojos) tengo que tener siempre en toda época, en verano tuve buen cuidado de congelar lo que más pude frambuesas y arándanos para despues en esta época hacer algunas  recetas.
Los que están en verano pueden usar los arándanos frescos y si no congelados como yo lo hice.
Tenía ganas de hacer algo dulce para los niños y encontré esta receta de la colección Paula  Repostería año 2009.
Así que les dejo esta receta que creo les encantará.






Ingredientes

2 tazas de harina
1  1/2 cucharadita de polvos de hornear
1/4 cucharadita de sal
5 cucharadas de mantequilla
1 1/3 taza de azúcar
2 huevos
2 cucharaditas de ralladura de limón
1/2 taza de leche
1 1/2 taza de arándanos frescos o congelados
3 cucharadas jugo de limón

Método

1. Precalentar el horno a temperatura media/baja.(190° c)  Enmantequillar un molde rectangular de 20 x 12 aprox.

2.En un bol mezclar la harina, polvos de hornear y sal.
En otro bol mezlar la mantequilla con 1 taza de azúcar batir con batidora eléctrica
o a mano, debe quedar una mezcla cremosa. Agregar los huevos de a uno. Batiendo bien.
Añadir la ralladura de limón y ña mezcla de ingredientes secos reservada anteriormente.
Alternar con la leche.
Incorporar con movimientos envolventes los arándanos.

3.En el molde reservado vaciar la mezcla con los arándanos y hornear por 45 mts. o hasta que esté dorado y seco, se puede probarr al centro con una brocheta o mondadientes

4.En una olla colocar el resto de la azúcar (1/3 taza) y el jugo de limón cocinar revolviendo a fuego suave hasta disolver el azúcar. Apagar el fuego.

Pinchar la superficie del cake y verter encima la mezclade jugo de limón y azúcar. Dejar entibiar por unos 30 minutos antes de desmoldar..
Servir despues.

Pumpkin potage (crema de zapallo o calabaza)






I love soup and potages specially from vegetables,
Potage (from Old French pottage; "potted dish") is a category of thick soups, stews, or porridges, in some of which meat and vegetables are boiled together with water until they form into a thick mush.
Potage has its origins in the medieval cuisine of Northern France and increased in popularity from High Middle Ages onward. A course in a medieval feast often began with one or two potages, which would be followed by roasted meats.
 
This pumpkin potage recipe is adapted from the Chef Paula Larenas a wonderful chef from our country.






The recipe

Ingredients (4 servings)

3/4 liter vegetable Broth cube  (prepared)
1/2 kilo pumpkin peel in cubes
1/2 chopped onion
1 garlic clove
3 tablespoon of oil
salt and pepper
1 1/2 cup of heavy cream
basil to garnish

method

In a fry pan heat the oil and add the chopped onion, garlic clove, and the pumpkin in cubes.
Saute by a minutes and add the vegetable broth cube, cook by 30 minutes and then blender.
Check the seasoning and  add the heavy cream slowly, boiled by a minutes and serve.
Garnish with basil leaves.

Me encantan las sopas y los potages, porque me gusta esa consistencia de los potages un poco más espesos.
Estea receta de potage es de la Chef Paula Larenas de nuestro país, una estupenda Chef y profesora.
La palabra potage viene del francés antiguo "pottage".se  considera una sopa más espesa que puede ser solo de verduras o una mezcla de verduras y carne o pollo, en que se mezclan los ingredientes y se muelen.
El potage tiene su origen en la cocina del norte de Francia en la época medieval, en que se hacían diferentes tipos de sopas o potages.
Con el tiempo fue creciendo su popularidad y se fue extendiendo a otros paises de Euroa y en el mundo.
En la cocina medieval se servían hasta dos potages y despues carnes a las brasas generalmente.
J'aime french cuisine, !!!!


La receta

Ingredientes (4 porciones)

3/4 litro de caldo de de ave  en  cubo( preparado.)
1/2 kilo de zapallo pelado y picado
1/2 cebolla picada fina
1 diente de ajo
3 cucharadas de aceite
sal y pimienta
 1 taza y 1/2 de nata o crema espesa
hojas de albahaca

Método

En un sartén poner a calentar el aceite y agregar la cebolla picada, el diente de ajo, e incorporar el zapallo picado.
Saltear durante unos minutos y agregar el caldo ya preparado. Cocinar durante unos 30 minutos
y luego licuar. Debe quedar de una consistencia más bien espesa. Verificar la sal y pimienta y agregar suavemente la crema.
Hervir por unos minutos y luego cortar el fuego.
Servir con algunas hojas de albahaca.

Kiwi Ice Cream with raspberries sauce





I think   everybody love  Ice cream (someones no maybe)but I love make them but I dont have an Ice cream machine  ( I hope maybe in the future) but I made them with   antique style and I think are really good and the kids love them.

I made this Kiwi Ice cream the last week and with raspberries sauce because you know the kiwi is a little acid but is so good. The original recipe was with lemon juice but the kids dont like (hug!) (they are really critic)so I dont put the lemon juice and was find. Sometimes the kiwi are  really acid but mix with other fruits, bananas, oranges or apples is delicious and I put some sugar or splenda .

This recipe is adapted  from "Cocina light"from Time life books.Vol 3


THE RECIPE

In gredients

5 kiwis
1 greek yogurt (about 175 g.)
or plain yogurt
130 grs. of sugar
1 teaspoon of lemon juice (optative)

Raspberries sauce

200 grs. fresh or frozen raspberries
1 tablespoon of sugar
1 cucharada de agua
2 tablespoon of raspberries jam



Method

Peel the kiwis and , cut in quarters, and make puree in a a blender or in process machine.
Add the lemon juice (optative) the yogurt  cream and sugar mix well.
Place the kiwi cream in a metallic dish and freeze by  2  hours.
After this time, take out and beat for a while and freeze again by 2 hours.
Before serve set aside normal temperature by a while.
Place in glasses with raspberries sauce..

Raspberries sauce

In a little pot heat at slow heat the raspberries, sugar, jam and 1 tablespoon of water mix.until it thickens
Reserve and serve with wiki Ice cream



En español



 Creo que hay poca gente que no les gustan los helados (los hay) pero en general a todo el mundo les gustan especialmente a los niños. A mí me gustan especialmente los de frutas, berries, kiwis, limones casi cualquier fruta. El kiwi es excepcionalmente bueno en vitaminas, de hecho tiene más vitamina c que las naranjas.
Justamente por la acidez del kiwi las frambuesas le vienen bien, lo que si la receta traía jugo de limón y yo lo pongo optativo, porque el público aquí no le gustó con limón (muy ácido) (son terriblemente críticos) así que para la sengunda sin limón y quedó de lo más bien.
Se que muchos tienen máquina para hacer los helados se puede hacer ahí, yo los hago a la manera antigua.
Quedan de lo más bien. La cosa es no complicarse pienso yo.












Ingredientes

5 kiwis
1 yogurt espeso natural(sin sabor) (aprox. 175 grs.)
130 grs. de azúcar
1 cucharadita de jugo de limón (optativo)

Salsa de frambuesas

200 grs. de fambruesas frescas o congeladas
1 cucharada de azúcar
1 cucharada de agua
2 cucharadas de mermelada de frambuesas o fresas


Preparación

Pelar y cortar los kiwis en cuartos. Colocarlos en una batidora o procesora y hacerlos puré.
Añadir el jugo de limón (optativo) el yogurt y el azúcar, incorporar bien todo y hacer una mezcla suave.
Si tienen máquina hacerlo según las instrucciones del fabricante.
Si no (como los hice yo) vaciar la mezcla en una fuente metálica y llevar al congelador por unas dos horas.
Retirar y batir un poco la mezcla (para romper los c ristales de hielo) y llevar nuevamente al freezer por unas dos horas.
Antes de servir dejar un rato a temperatura ambiente.
Servir con la salsa de frambuesa.

Salsa de frambuesa

En una olla calentar a fuego bajo,las frambuesas, la mermelada, el azúcar,revolver por un rato hasta que la salsa esté espesa.

Servir los helados con la salsa de frambuesas.

Sopaipillas con pebre (Little chilean treats with pebre sauce)









I have to confess that this recipe was difficult to translate into English ', because it is difficult to explain who were "sopaipillas"  for someone who does not know. So will complete with a contribution of my friend's blog Anabella cook up in as they watch the buns with some of our history. Plese look here her blog
They are a lovely  dough (I made the little version) stuffed with pumpkin and you can eat with "pebre" like I show you here or with a sweet sauce that is made with chancaca , you can make the sauce with Syrup too.
In many restaurant  while waiting for the food you order, the waiter brings you some sopapillas (usually small) with a sauce like this pebre or other hot pepper sauce (jalapeno) and you eat them with some wine or other drink you like..

Other time we allways eat sopaipillas is when is raining. Really I dont know why. But is raining we say, we have to make some sopaipillas and is delicious.
Pebre is a sauce with tomatos,chopped onions, oil, salt and and chopped cilantro or parsley
But if you want sweet, make a syrup, heat in a pot water, syrup, orange peel and cinnamon and eat them is absolutely yummy too.
This recipe is adapted from "Platos y Copas" September 2007  a chilean magazine.

 




Sopaipillas pasadas (syrup sopaipillas)







Ingredients

1 cup of boiled  and mashed
pumpkin
3 tablespoon of margarine
1 teaspoon of salt
3 1/2 cups of plain flour
1 teaspoon of baking powder
1/2 cup of hot milk or hot water
(you can reserve the water of boiled pumpkin)
1/2 liter of canola oil to fry the sopaipillas



Method
On a flat surface or table place the flour and baking powder, add to it the pumpkin powder, margarine, milk or with hot water and salt. Join well.



 Forming a smooth and elastic dough. If is necessary add some flour.


With a rolling pin extend the dough and let it about 1 cm.  


Cut the sopaipillas   with a shape or a glass (I use one of 4 cm. But you make more bigger than this)


 With a fork prick. the sopaipillas before fry.
In a skillet heat the oil and go frying . Fry wit carefully for the hot oil.Fry a minute by side.


They should be nicely golden not brown. 

When you are frying the sopaipillas let them over a large dish with a towel paper.

Pebre sauce

1 onion chopped finely
1 or 2 tomatoes chopped
1  green ají chopped (jalapeño or chile )
1 tablespoon of oil
1 tablespoon of cilantro chopped
1 tablespoon of lemon juice
salt

Method: In a medium bowl mix the onions,tomatoes,aji,oil, cilantro, lemon juice and salt, stir well  and place in little bowls to serve.



Sweet sauce
In a little pot heat some golden sugar, honey a orange peel, some cloves, cinnamon,2 cups of water, finally add 2 tablespoons of cornstarch dissolved in cold water to thick heat by a while until is thick.
Serve the sopaipillas with this sauce.

Las sopaipillas son algo muy típico de nosotros y que comemos especialmente cuando llueve, no se porque, pero está lloviendo y uno dice, "voy a hacer sopaipillas" es una costumbre, en todo caso para que sepan más de las sopaipillas y su historia les recomiendo el blog de mi amiga Anabella que lo encuentran aquí.
Las sopaipillas son una masa suave frita que contiene zapallo o calabaza. Se pueden comer con "pebre" que es una salsa con cilantro,tomate y cebolla picada, o "pasadas"que son justamente pasadas por una salsa de miel o chancaca para los que quieran algo dulce. O solas tambien son deliciosas.

Esta receta está adaptada de la revista de cocina "Platos y Copas"de Septiembre del 2007.




Ingredientes

1 taza de zapallo o calabaza molido
3 cucharadas de margarina
1 cucharadita de sal
3 y1/2 tazas de harina normal
1 cucharadita de polvos de hornear
1/2 taza de leche o agua caliente (se puede usar la misma en que se coció el zapallo)
1/2 litro de aceite sin sabor para freir

Método

En una superficie lisa formar un cerro con la harina con los polvos de hornear, agregar el zapallo
molido,la margarina,  junto con la leche o agua, la sal. Unir bien.
Formando una masa suave y elástica.Si fuese necesario añadir más harina.
Luego estirar la masa con el rodillo (uslerear)dejándola más o menos de 1 cm. de espesor,
Cortar con un molde o un vaso de 7 cm (yo usé unos más pequeños de 4 cm. porque las quería pequeñas)
Pinchar con un tenedor. Freir de 3 a 4 por vez, con cuidado. Por el aceite caliente.
Ir colocándolas en un plato sobre papel absorbente.
Deben quedar doradas.
Freir un minuto por lado.
Servir solas o con la salsa de pebre.

Salsa de pebre para acompañar

1 cebolla picada fina
1 o 2 tomates picados
1 ají verde picado
1 cucharada de aceite
1 cucharada de cilantro picado
1 cucharada de jugo de limón
sal

En un bol mediano mezclar la cebolla picada fina,
los tomates picados, el aceite, cilantro, ají y sal. y el jugo de limón. Mezclar bien

Salsa dulce para sopaipillas pasadas

1/4 kilo chancaca o una mezcla de azúcar rubia con miel
2 tazas de agua
cáscara de 1/2 naranja
canela o clavo de olor
1 cucharada de maicena
Calentar en una ollita pequeña la chancaca o azucar con miel, cáscara de naranja, canela y finalmente la maicena con agua fría calentar un rato hasta que esté espeso.
