Brioche and berry bread little pudding








The diffrence of this little summer pudding is the brioche that you use  in the recipe.
If you dont have a brioche recipe see here is a nice recipe of Epicurious.
This recipe of little pudding is adapted from a Tyler Florence recipe to Food Network


Ingredients


Butter, room temperature


4 eggs


3/4 cup whole milk


3/4 cup heavy cream


1 tablespoon vanilla extract


1 teaspoon lemon zest


1/2 cup sugar, plus more for dusting and topping


4 large slices brioche bread


2 cups mixed berries (blueberries, strawberries, raspberries, blackberries), plus more for garnish


Lemon Fondant:


1 y 1/2 cups powdered sugar


2 tablespoons water


2 lemons, zested and juiced


Directions

Butter and sugar 6 (6-ounce) ramekins



In a medium bowl, whisk together the eggs, milk, cream, vanilla extract, lemon zest, and sugar. Combine well with a whisk - then let it settle so there are no air bubbles on the surface otherwise these will cause lumps in your anglaise.

Preheat the oven to 200 degrees C.
Tear the brioche up into large pieces using your hands, add to the custard mixture and toss to combine. Equally divide the berries among the ramekins and top with the bread mixture. Gently press down so they are packed evenly. Sprinkle with more sugar, then refrigerate for 10 to 15 minutes to let soak.

Bake for 25 minutes in the center of the oven. The pudding is ready when it has puffed up and the custard is set. The top should be a nice golden color. Remove and allow to cool slightly.

Make the fondant. In a mixing bowl combine sifted powdered sugar, water, lemon zest and juice.
Once the pudding has cooled slightly, invert onto an individual serving plate. Drizzle the lemon fondant over warm bread pudding and serve with extra fresh berries.

Budín de verano con pan brioche

Esta receta de pequeños budines de verano e sun poco distinta de otras que ya he hecho. Esta lleva pan brioche en tajadas. Si no tienen una receta de pan brioche pueden ver  aquí  que por lo demás es delicioso para tomar con un café o un té.








Receta
Ingredientes

mantequilla (para los bowls)
4 huevos
3/4 taza de leche
3/4 taza de crema espesa
1 cucharada de vainilla
1 cucharada de ralladura de limón
1/2 taza de azúcar más un poco más para espolvorear
4  torrejas de pan brioche
2 tazas de berries surtidos (arándanos, frambuesas o fresas)

Fondat de lim+on

1 1/2 taza de azúcar impalpable
o azúcar glass
2 cucharadas de agua
2 limones (su jugo y ralladura)

Método

Enmantequillar los bowls para horno (6)
En un bowl mediano mezclar los huevos,la leche, la crema, la vainilla, la ralladura de limón y el azúcar.
Batir y mezclar bien hasta que tenga una consistencia cremosa.
Precalentar  el horno a 200° C.

Empapar las torrejas o pedazos de brioches en la mezcla .
Colocar alugunos trozos de esta mezcla en el fondo de los bowls. Despues repartir las berries en los cuencos, apretando un poco hacia el fondo.Terminar con otra capa de brioches empapados en la mezcla apretar bien.
Refrigerar de 10 a 15 minutos para dejar remojar bien.

Cocinar por 25 minutos hasta que la mezcla se vea dorada.
Retirar y dejar enfriar un poco.

Para hacer el fondat de lim+on, mezclar el azúcar, el limón y el agua.Batir y mezclar bien.
Cuando los budines esten frios darlos vuelta en un plato y bañarlos  con el fondat de limon.
Servir con berries y si se quiere con un poco de nata o crema batida.

artichokes and corn kennels pizza (veggie)










What is better than pizza any time....?? If you think something fast an yummy, I think in pizza, I love to make my own dough, and my own stuff, I know in many parts you have delicious pizza but I think the better is that you make!

Well Lucy, who  is a nice and sweet lady who help me one time at week bring me a weks ago 2 artichokes jar (canned)  and I think, I wanna make pizza with this, fortunately I made the pizza when Lucy come so she enjoy too!
You can make this pizza with any type of artichokes, fresh, in tin or freeze, and the dough was really nice  and easy.
I use the things I had this day,  canned artichokes, green pepper and corns kernels and tomatoes and  was a lovely veggie pizza!





The recipe

Ingredientes  (6 servings)

250 grs. all purpose flour
60 grs, semola
1 teaspoon of salt
1 tablespoon of   dry yeast
2 tablespoon of olive oil or other
6 tablespoon of warm water

3 to 4 tomatoes in slices
200 grs. tomate sauce
200 grs, mozarella cheese
300 grs. canned artichokes (or freeze)
1 cup of corn kennel (fresh or freeze)
1 tablespoon of green or red pepper in cubes
oregano and pepper

Method

To make the dough, place flour , semola and salt in a bowl, add yeast.



Make a space in the center and add oil and water little by little, go make the dough with your hands,

Knead the dough and  by 5  minutes, it should be soft  and elastic   then place the dough in the bowl and set aside by 40  minutes.

Place in a floured table and rolling making a cirle for  a pizza tin.




Place dough on lightly greased pan.



Form a small ledge with your fingers.


To cover pizza, first put the tomato sauce, then sprinkle the oregano, tomatoes cut into slices, and put on the sauce.


Season with salt and pepper.


Top with cheese in slices or grated cheese.

Top with artichokes into pieces and corn.


On these few pieces of green  pepper.

Preheat the  oven to 190 ° C bake for 20  to 25minutes or until the cheese  is completely melted and dough is crisp look.

Pizza de alcachofas con choclo







La Pizza es una de las comidas rápidas más deliciosas que se pueden hacer además de la variedad con que se pueden preparar.
De todas maneras prefiero las pizzas hechas en casa, no sé, quizas por la masa, los rellenos que uno le pone lo que quiere, mi marido a veces trae la masa de prepizza y tambien la ocupo pero no tiene nada que ver con la que uno hace. Y cuando compra pizza muchas veces al enfriarse se pone latiguda o incomible (auqnue los niños se la comen igual) no sé porque.

En fin esta es una veggie pizza porque lleva trozos de alcachofas y maiz en granos (choclo) igual se puede hacer con alcachofas en tarro o frasco o congeladas (vienen en bolsas).

Para los que vivimos en Chile, ocupé unos frascos de Traverso muy b uenos(además los frascos son muy buenos para mermelada cuando llegue el verano)  que me regaló la Lucy que es mi angel de la guarda que me ayuda una vez a la semana, alguien se los dió y me los trajo estaban muy buenos. Siempre hacemos intercambio, me trae, harina, papas, pan amasado y estas conservas. Yo le doy paltas, mandarinas o lo que tenga. El trueque es estupendo.Gracias Lucy.


Ingredientes

250 grs. harina normal
60 grs, semola o semolina
1 cucharadita de sal
1 cucharada de levadura en polvo
o en gránulos
2 cucharadas de aceite de oliva o de maravilla
6 cucharadas de agua tibia

para cubrir
 3 o 4 tomates pelados
y cortados en rodajas
200 grs. salsa de tomate
200 grs. de queso mozarella  o gauda
300 grs, alcachofas envasadas o congeladas
1 taza de maiz (choclo) fresco o congelado
1 cucharada de pimiento verde o rojo en cubitos

orégano, sal y pimienta

Preparación

Colocar la harina, sal y sémola en un cuenco, agregar  la levaura, el aceite y el agua tibia.
Unir bien con las manos enharinadas.
Colocar la masa en una superficie enharinada y amasar durante unos 5 minutos hasta que esté suave y elástica
Luego colocarla en un lugar tibio por unos 40 minutos
Poner la masa sobre una superficie o mesa enharinada.
Amasarla y extenderla en círculo del porte del molde que se va a usar (26 a 28 cm es una masa delgada)
Para lacobertura cubra la masa con la salsa de tomate esparciendola bien, luego espolvorear con oregano.
Despues disponer los tomates cortados en lonjas. Aliñar con sal y pimienta.
Distribuir el queso ya sea en lonjas o molido.
por último cubrir con las alcachofas cortadas en trozos y el choclo en granos.
Finalmente distrubir pedazos de pimentón ya sea verde o rojo.
Precalentar el horno a 190° C.
Cocinar en el horno por unos 20 a 25 minutos o hasta que el queso estpe totalmente derretido y la masa se vea ligeramente dorada y crujiente.

Ricotta and coffe Ice cream (Helado de ricotta y café)






This Ricotta and coffe Ice cream is a present for you in the North hemisphere, because you are in summer I know, here in South America, we are in winter a really cold winter, but we always love eat Ice cream around the year, more in the summer of course, but  sometimes I love to make some Ice cream with a sauce or chocolate pieces, I made this the last Sunday and was nice...
I dont have a machine Ice cream but I make with antique method and is nice, if you have a machine..better









The recipe (6 servings)



Ingredients
350 grs. fresh ricotta
125 cc express  coffe (cold)
200 grs. sugar
4 yolks
1 cup of heavy cream
2 tablespoon of icing sugar
2 tablespoon rhum (optative)
1 tablespoon of cofee powder to sprinkle
some chocolates pieces



Method

Place a while the ricotta in a strainer to discard the liquid can sometimes have.



Then mix the ricotta with the espresso.


 On the other hand beat the yolks and sugar until light and have a creamy batter.


Whipp  the heavy cream and add the final icing sugar.


 Finally add the rhum.
Mix the eeg batter with the cream whipped.

 Pour into a metallic pan and cover with plastic wrap.

Leave in the freezer for about two hours.  After one hour beat and let by 1 hour more.

Sprinkle with coffee and chocolate pieces. (You can melt the chocolate over a smooth surface and breaks into pieces) or chocolate sauce






EN ESPAÑOL

Helado de café y ricotta
350 grs. ricotta fresca
125 cc. de café express (frío)
200 grs. de azúcar
4 yemas de huevo
1 taza de crema o nata
2 cucharadas de azúcar flor o impalpable
2 cucharadas de ron (optativo)
1 cucharada de café en polvo para espolorear
chocolates en trozos para adornar
o salsa de chocolate


Preparación
















Este helado de ricotta y café es especial para los que estan en verano en el hemisferio norte, aquí en el hemisferio sur estamos en invierno pero comemos helado de postre muchas veces, con alguna salsa caliente
o con café. Este helado lo hice la semana pasada para el Domingo de postre.
Es una receta sencilla y muy buena yo no tengo máquina para hacer helados  pero los que tengan máquina la pueden  usar.Yo los hago con el sistema antiguo.


Ingredientes

Colocar la ricotta un rato en un colador para que bote el agua que a veces tiene.
Mezclar con el café express.
Por otro lado batir las yemas con el azúcar hasta tener un batido cremoso.
Batir la crema hasta montar y agregar azúcar impalpable o azúcar glass finalmente agregar el ron.
Mezclar la ricotta con la crema de huevo e incoporar cuidadosamente la crema batida con azúcar.
Vaciar en un molde metálico y cubrir con un film plástico. Enfriar en el freezer por dos horas, sacar, batir un poco y dejar una hora más.
Servir espolvoreado con el café en polvo y pedazos de chocolate o salsa de chocolate.

Mini tortes poulete-cheddar (chicken and cheese mini tarts)










Today Im here with a lovely french recipe, chicken and cheese mini tarts, What can I say? The kids (and hubby) (and me) loved this recipe is made with puff pastry and filled with chicken, cheese and others.
To my veggie daugther I made a veggi version, with zucchini, chopped corns and carrots. Really yummy.
I think this lovely recipe is for every time of the year.

The recipe

Mini torte poulete-cheddar

Ingredients (4 servings)

350 chicken breast in strips
1 roll puff pastry
100 grs. cheddar cheese
1 celery branch
3 carrots
1 onion chopped
2 tablespoon of chives chopped
25 cl. cream
30 grs. butter
1 egg
salt and pepper

Method

Cut the chicken into strips. Grate the cheddar. Chop the chives Carrots  and peel the onions, slice them and the celery.


In a skillet, melt the butter, put the chopped vegetables and chicken strips to return to medium heat for 10 minutes, stirring often.

Remove from heat, add cream to the skillet, cheddar, chives, salt and pepper, mix. Roll out the dough. Cut into 4 rounds with a diameter slightly larger than from your ramekins. Divide chicken mixture into 4 ramekins.
Brush the edges of the ramekins with beaten egg (reserve the remainder). Lay the dough rounds on top and press the edges to make them adhere.
Refrigerate 30 minutes (an essential step for the dough rises during baking).

Preheat oven to 180°c ,Brush  the dough with remaining beaten egg. Bake 20 minutes in the oven until the pastry is golden. Serve hot.

Mini tartas de pollo y queso cheddar










Hoy día tengo una receta que nos ha encantado en casa. (a todos) Es una receta francesa que he adaptado de Vins & Cuisine.
Son una tartitas rellenas con pollo y queso cheddar, (puede ser otro queso)
cubiertas de masa de hoja o pascualina que ya viene lista y está en todas partes.
En algunas partes la ven en rollo y en otras viene como dos hojas grandes para tarta, cualquiera servirá.
Se hacen cuatro porciones. Si les sobra pedazos de masa (orillas o recortes) guardenlas en el refrigerador (hoy me hice una mini tortita para mi solo con los sobrantes de masa, la rellené con verduras)
Para mi hija hice la versión veggie, que es zapallito italiano,choclo, cebollín y algunas hierbas.

Ingredientes (4 porciones)

350 grs. de pechuga de pollo en tiras
1 rollo de masa de hoja o un set para tarta pascualina
100 grs. queso cheddar
1 rama de apio
3 zanahorias en trozos
1 cebolla picada
2 cucharadas de ciboulette picado
30 grs. mantequilla
1 huevo
sal y pimienta



Método

Cortar la pechuga de pollo en trozos, rallar el queso, picar el ciboulette,las zanahorias ,el apio y la cebolla.

En un sartén derretir la mantequilla (agregar gotas de aceite para que no se queme) y agregar el pollo en trozos, y los vegetales ya picados (zanahorias,apio y cebolla)y cocinar a fuego medio, por unos 10 minutos.Revolviendo siempre.

Retirar del calor el sartén, agregar la crema,el queso y el ciboulette, sal y pimienta, mezclar bien y reservar.

Estirar un poco la masa con el rodillo, enmantequillas cuatro bowls o cuencos de cerámica para horno, cortar en forma redonda para cuatro pocillos.
Colocar un trozo de masa en el fondo y en los laterales, colocar la mezcla de pollo y tapar con otra masa redonda, repetir lo mismo en los cuatro pocillos.
Sellar las orillas y uniones de los pasteles con huevo batido, reservar el sobrante.
Poner los cuencos en el refrigerador por unos 30 minutos.

Precalentar el horno a 180°.Pintar la masa con el huevo batido que quedó.
Cocinar en el horno por unos 20 minutos o hasta que esté la masa dorada.
Servir caliente.

Almond tart with marzipan (Tarta de almendras con mazapan)













You know, I believe  cook is like love (and I talk of this with many of you) when you see a recipe you loved  it and  you think would be nice to make that, or you see  in the super or in store (happens me with sweet potatoes, berries, tropical fruits, shrimps etc.)  and you  maybe think I will make something with  this , well you know...

 
Aniway, I saw a lot of time this recipe in a little book   and always want to make but some times I dont had almonds or marzipan etc.  finally  a few days ago I had all and the time  and really  was a pleasure...

This recipe is adapted from "Oven delicious" from Parragon books ltd.

The recipe

Almond tart with marzipan

Ingredients

Dough
200 grs.  all purpose flour
pinch  of salt
80 grs. cold butter in cubes
cold water

filling

300 grs. marzipan (I use normal marzipan without colour but if you dont have  any, here a recipe to make marzipan
170 grs. grated almonds
150 butter without salt
100 grs. caster sugar
60 grs. flour
100 grs. candied fruits chopped (cherries, mangoes, orange or any you have)
50 grs. raisins
50 hrs. almonds in slices
100 grs. raspberries or blueberries








Method


1. Grease with butter  a  tart pan with removable base about 22 cm. in diameter.



Processor  the flour, salt and butter, put it all together, and process until the consistency of breadcrumbs.


Add water to the consistency of a dough.

Transfer the dough to a flour surface then make a circle a little larger than the mold.


Place dough in pan and accommodate.


Put a piece of tracing paper and some dried beans.


2. Allow the dough in the refrigerator for about 30 minutes.

Turn on oven to 190 ° c  and  bake for  10 minutes, then remove paper and beans and cook about 5 minutes more.

Lower the oven temperature to 180 ° c.

Grate the marzipan over the tart while still   hot.


3. Process the butter, ground almonds and sugar and knead until a smooth consistency. Add a tablespoon of flour  and the egg. Knead.

Add another tablespoon of flour and the other egg, mix well.

.Spoon this  mixture over the pie dough. Finally sprinkle the chopped almonds and bake for about 40 minutes or until the cover is golden.


Serve with raspberries or blueberries.

Tarta de almendras con mazapán








Pienso que cocinar es como amar, de verdad,( y esto lo hemos conversado entre bloggers de recetas)
uno ama la cocina con pasión o no. Es así. Mucha gente ni siquiera entiende que tenga este blog.
Ohh! La infinidad de veces que me han dicho para que lo tienes? para que sirve? Mucha gente no entiende el amor por la cocina. Yo lo heredé de mi madre y de mi abuela. Lo sé.

Bueno, cuando veo una receta me enamoro de ella, digo, esto quedaría bien o esto me gustaría hacer  o cuando veo algún ingrediente, frutas, u otra cosa, digo con esto se podría hacer algo muy bueno. En fin es así. Algunos lo entenderán otros no. Pero supongo que cada uno hace su blog de lo que quiere. Aunque algún día no siguiera con el blog, es impresionante la  cantidad de amigos y gente espectacular que he conocido compartiendo ideas de recetas o de comida y lo que se aprende  de lo que se come en otros sitios o lugares lejanos.

Bueno esta receta la vi hace tiempo en un pequeño libro que tengo y es muy bueno pero no la había podido .
Esta receta está adaptada de " Delicias al Horno" de Parragon books ltd.











Ingredientes

Masa
200 grs. de harina normal
1 pizca de sal
80 grs, mantequilla fría en cubos
agua fría para unir la masa

Relleno

300 grs. de mazapan
175 grs. de almendras molidas
150 grs. mantequilla sin sal
100 grs, azúcar en polvo o impalpable
60 grs. de harina
2 huevos
50 grs. de pasas
100 grs. de fruta confitada (surtida o de cerezas, naranjas o cualquiera)
50 grs. de almendras laminadas
100 grs. de frambuesas o arándanos

Preparación

Engrase ligeramente con mantequilla un molde para tarta de unos 22 cm. con fondo demoldable.
Porcesar juntos la harina, sal y mantequilla, y mezclarlo todo hasta que tenga una consistencia de pan rallado.
Añadir agua suficiente como para hacer una masa.
Pasarla a una superficie espolvoreada con harina formando un círculo un poco más grande que el molde para forrarlo.
Colocar la masa en el molde y presionar bien.
Colocarle un trozo de papel de mantequilla y unas judías o legurmbres secas.
Dejarlo en el refrigerador por unos 30 minutos.
Calentar el horno a unos 190°C , luego hornear durante unos 10 minutos.
Luego retirar el papel y las legumbres.y hornear unos 5 minutos más.
Bajar a 180°C .
Rallar el mapazan sobre la masa de tarta cuando aún esté caliente.

Aparte procesar la almendra molida, la mantequilla y el azúcar.
y amasarlo hasta obtener una masa de consistencia suave.
Añadir una cucharad de harina y un huevo, unir bien.
Agregar otra cucharada de harina y el otro huevo y amasar todo de nuevo.
Por último incorporar el resto de la harina.

En un bol poner la harina y agregar las pasas, fruta confitada, unir bien.
Con una cuchara repartir la mezcla sobre la tarta que ya tiene el mazapán.
Esparcir las almendras en láminas sobre la tarta.
Hornear durante unos 40 minutos o hasta que la tarta esté dorada.
Servir con frambuesas o arándanos.

Quinoa and corn pudding (budín de quinoa y choclo)









Quinoa  has been cropping quite often in food-related news and since we like trying out new ingredients, especially vegetables and grains, it was a matter of time before it showed up on our dinner table.


Quinoa is native to the Andes Mountains of Chile, Peru and Bolivia and has been grown there for about 6000 years! Its protein content is unusually high, contains a balanced set of essential amino acids, is a good source of dietary fibre, phosphorus, magnesium, and iron and is gluten-free. No wonder the Incas called it the mother grain.

Many time I wanted make something with quinoa but you know always we have a lot of recipes and we have to choose but the last time I wonder by quinoa recipes because my daugther  dont eat  any meat (only fish) and some friends talked me about quinoa and here you have a yummy quinoa recipe.
The quinoa is sell in USA and other countries in the natural ingredients in supermarket and latinomerican stores.
You need only a bite, this recipe has 1/2 cp of quinoa. If you want to know more about quinoa see here.

I adapted this yummy recipe from  Paula Magazine recipes from Chile (2006)

The Recipe

Ingredients (6 servings)

1/2 cup of quinoa
salt and pepper
2 tablespoon  of oil
4 tablespoon of red pepper in cubes
2 tablespoon of green onion chopped
4 tablespoon  of zucchini in little cubes
2 cups of corn kernels  freeze or fresh
3/4 cup of milk
3 eggs
4 or 5 leaves basil chopped
1/2 cup of parmesan cheese grated

1. Wash the quinoa with cold water in a colander.   Place the quinoa with 1/2 cup of water and salt in a pot.
   Cook slow  heat until the water is evaporate. Take out of the fire.
   Place in a bowl and let chill.
 
In a small skillet heat oil over medium heat, add the red pepper, green onions and zucchini, stir fry for about 5 minutes or until vegetables are lightly browned.


Season with salt and pepper.
Remove from heat, add the vegetables to the bowl and mix with quinoa.
 In a saucepan, add the corn and milk, rocessor until is  homogeneous, well you can grind in blender.
Add eggs and basil, season with salt and pepper, grinding everything.


. Buttered individual ramekins and distribute ready mix quinoa, pour over corn puree and sprinkle with grated cheese.


Place the ramekins  in a preheated oven at 190 ° c and bake for 20-25 minutes or until golden.

Remove from oven and serve with basil leaves and corn.

Budín de quinoa con choclo o maiz

Hace mucho que quería hacer recetas de quinoa, pero siempre pasa lo mismo, es tal la cantidad de recetas que se van acumulando y ya saben el tiempo es el mismo.
Tengo que ir seleccionando, pero amigas me habian recomendado la quinoa por lo completa que es para preparar comidas sobre todo a mi hija que no come carne (sólo pescado)
La compré hace tiempo y recién hace poco la pude preparar.
Esta receta es muy buena y sólo lleva 1/2 taza de quinoa, rinde mucho.
Aviso para los bloggers chilenos, la quinoa se encuentra en casi todos los supermercados y tiendas de alimentos naturales.(Por supuesto tambien en La vega si pueden ir)

Esta receta está adaptada de Paula recetas de cocina (2006)
Receta

Ingredientes

1/2 taza de quinoa
2 cucharadas de aceite
sal y pimienta
4 cucharadas de pimiento rojo picado
2 cucharadas de cebollín picado
4 cucharadas de zapallito italiano(calabacines) en cubos
2 tazas de choclo fresco o congelado
3/4 taza de leche
3 huevos
4 o 5 hojas de albahaca
1/2 taza de queso parmesano rallado

Método

Lavar los granos de quinoa en un colador y estilar.
En una olla colocar la quinoa cubrir con 1/2 taza de agua fría, agregar sal a gusto y cocinar a fuego suave hasta que se vaya evaporando el líquido.
Retirar del fuego, colar y dejar enfriar.

En un sartén pequeño calentar el aceite a fuego medio , agregar el pimentón, el cebollín , los zapallitos italianos, saltear revolviendo de 4 a 5 minutoes o hasta que las verduras estén doradas.
Sazonar con sal y pimienta.
Retirar del fuego, añadir las verduras al bowl de la quinoa y mezclar.

Mexclar el choclo y la leche y moler bien puede ser en un porcesador o en la licuadora hasta obtener un puré homogeneo, agregar los huevos y la albahaca,  mezclar y moler bien.
Enmantequillar unos  pocillos de cerámica o greda colocar la mezcla de quinoa con las verduras y luego repartir encima la mezcla de choclo y luego espolvorear con queso rallado.
Precalentar el horno a 190° y colocar dnetro los cuencos o bowls cerámicos, hornear de 20 a 25 minutos o hasta que esten dorados.
Servir calientes con albahaca y unos granos de maiz o choclo.

Summer cherry pie (Pie de cerezas)















I made this Cherry Pie last week, you know the cherry season is really short so I havent fresh cherries I made with a jar of canned cherries and was really nice, but you in the North have still cherries, anyway ths recipes you can make with canned cherries or fresh cherries, the dough is awesome, really!

The recipe


Ingredients

Crust



1/3 cup whole milk


1 tablespoon  white vinegar

2 cups all purpose flour


1/2 teaspoon salt

1 cup chilled solid vegetable shortening, cut into 1/2-inch cubes






Filling

3/4 cup sugar


3 tablespoons cornstarch


1 tablespoon grated orange peel

3 tablespoon  of orange juice


1 teaspoon ground cinnamon

1/8 teaspoon salt

4 cups pitted fresh cherries or canned pitted sweet dark cherries, thawed, drained

1 egg, beaten to blend with 2 teaspoons water (for glaze)







For crust:



Whisk milk and vinegar in small bowl to blend.
 Whisk flour and salt in medium bowl to blend; add shortening and rub in with fingertips until mixture resembles coarse meal.
Stir in milk mixture; briefly knead in bowl just until dough comes together. Gather dough into ball. Divide into 2 pieces, 1 slightly larger than the other. Flatten each piece into disk. Wrap disks separately in plastic and refrigerate 30 minutes.

Meanwhile, prepare filling:

In a pot cook  slow heat  the cherries, sugar, orange juice,cinnamon, orange peel, cornstarch and salt, mix and cook for a while until is thickness. Set aside by 20 minutes.





Preheat oven to 190 ° C.
 Roll out larger dough disk on lightly floured work surface to 13-inch round (crust will be thin). Transfer to 10-inch-diameter glass pie dish.
 Roll out second disk on lightly floured work surface.
. Spoon cherry filling into crust. Place  dough strips across pie in 1 direction and  in opposite direction, forming lattice. Press strip ends and edge of crust together to seal. Crimp edges decoratively. Brush lattice and edges with egg glaze. 
Bake pie 20 minutes. Cover crust edges with foil collar to prevent overbrowning. Continue to bake until filling bubbles and crust is golden brown, about 40 minutes not more. Transfer pie to rack and cool at least 1 hour. Serve pie warm or at room temperature.

Pie de cerezas




Hice este Pie o Tarta de cerezas la semana pasada.  Y ya saben la temporada de cerezas es sumamente corta, además aquí en Chile estamos en invierno, pero tenía un frasco grande de cerezas negras envasadas, buenísimas ( Aviso para Chile las compré  en el Líder son marca Guallarauco: estupendas) y de hecho esta receta se puede hacer con cerezas  frescas, o envasadas.
Bueno, y los que estan en el Hemisferio Norte lo pueden hacer con  cerezas naturales, cerezas negras o con las envasadas si no tienen.
La masa es deliciosa. Se los aseguro.

Ingredientes masa

1/3 taza de leche
1 cucharada de vinagre blanco
2 tazas de harina
1/2 cucharadita de sal
1 taza de margarina o mantequilla en cubos

Relleno

3/4 taza de azúcar
3 cucharadas de maicena
1 cucharada ralladura de naranja
3 cucharadas de jugo de naranja
1 cucharadita de canela en polvo
1/8 cucharadita de sal
4 tazas de cerezas negras envasadas, en tarro o frescas si es verano(sin las semillas)

1 huevo batido con dos cucharadas de agua (para el glacé)

Masa

Batir la leche con el vinagre en un pequeño bol.
En otro bol mezclar la harina con la sal y agregar los trozos de margarina o mantequilla uniendo con las manos.
Agregar la mezcla de leche con vinagre. Unir bien haciendo una bola de masa.
Dividir en dos partes una más grande que la otra.
Cubrirlas con film plástico y refrigerar por 30 minutos.

Mientras preparar el relleno

En una olla pequeña calentar a fuego muy suave las cerezas,azúcar,jugo de naranja, ralladura de naranja, canela molida y maicena,cocer hasta que tenga una consistencia espesa. Dejar enfriar por unos 20 minutos.

Precalentar el horno a 190° c
En una superficie enharinada extender las masas de a una en forma redonda para colocar en el molde de pie.(la masa es delgada)
Poner una de las masas en el molde de pie y rellenar con la mezcla ya preparada de cerezas.
Hacer tiritas largas con la otra masa y cubrir.
Con una brocha pintar la cubierta co el huevo batido.
Llevar a horno por 20 minutos o hasta que esté dorado. Si se dora mucho colocarle encima un trozo de papel aluminio hasta que esté listo.A lo más 40 minutos en total

Retirar y dejar enfriar.

Servir tibio o frío.
