Double - chocolate cupcakes












Chocolates cupcakes with chocolates frosting, someones will say hurrah!!! and others maybe dont like, but I tasted and really nice, is for  these love so much  chocolate.!
I adapted this recipe from an antique Goodhousekeeping Magazine, always we loved this Magazine because all theirs recipes are tasted and nice.



Rich chocolate cupcakes

2 cups all purpose flour
2/3 cup unsweetened cocoa
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1 cup whole milk
1 1/2 teaspoon vanilla extract
1 cup of sugar
6 tablespoon of butter
2 large eggs

Method

1. Preheat oven at 190°c Line 12 muffins cups with flted paper liners.

2. In a bowl combine flour, cocoa,baking powder, baking soda, and salt.
In 2 cup liquide measure mix milk and vanilla, set aside.

3. In a large bowl beat sugar and butter just until blended, beat until mixture is light and creamy.
Add eggs 1 at a time, beating well after each addition.

4. Add flour mixture alternately with milk mixture.  Beat just until combined, ocassionally scraping bowl with rubber spatula.

5.Spoon batter into muffins pan cups. Bake  20 to 25 minutes or until toothpic in center of cupcakes comes out clean.
Inmediaely remove cupcak es from pans and cool copletely in wire rack.

6.To frosting the cupcakes will be cool.

Chocolate frosting

3/4 cup of semisweet  hard chocolate(in pieces)
2 tablespoon unsweetened chocolate powder
3/4 cup butter or margarine softened
1  1/2 cup confectioners sugar
1 teaspoon vanilla extract
1 or 2  tablespoon of milk

1. In small saucepan over medium low heat, melt chocolates stirring occasionally. Cool slightly

2.In large bowl with mixer at LOW speed, beat cooled chocolate with butter until blended-
Add confectioners 'sugar, vanilla and milk, beat until smooth.
Increase speed to medium/high, beat until frosting is light and fluffy, occasionally scraping bowl with rubber spatula.
If is needed  add the other tablespoon of milk for easy spreading consistency.
Spread in the cupcakes and garnish as you like.(I used little sugar flowers and mint leaves)
Keep at refrigerate by 20 minutes  for frosting will be OK before serve.

Cupcakes de chocolate con crema de chocolate, quizas a  algunos les parezca mucho (hay personas que no les gusta el chocolateles ) pero siempre cocino para todos los gustos y de vez en cuando el chocolate me gusta.
Esta receta de cupcakes realmente deliciosos está adaptada de Goodhousekeeping Magazine (en inglés) que es una revista americana maravillosa en que trae de todo pero la verdad me tiro de cabeza para  ver las recetas que son super buenas además van con toda estación, me explico ahora que  estan en Primavera uno puede ver los que que se cocina o las frutas o verduras de la época.
Son absolutamente probadas y deliciosas, nunca he tenido un problema con alguna receta de Goodhousekeeping housekeeping, es una de las revista que estoy suscrita hace algunos años.



Cupcakes de chocolate con frosting de chocolate


Ingredientes


2 tazas de harina sin polvos de hornear
2/3 taza de cocoa sin azúcar
1 1/2 cucharadita polvos de hornear
6 cucharadas de margarina o mantequilla
1 taza de azúcar
1/2 cucharadita de bicarbonato en polvo
1 pizca de sal
1 taza de leche
1 1/2 cucharadita de extracto de vainilla
2 huevos
Preparación

Precalentar el horno a 190°. Preparar un molde muffins con las cápsulas de papel.
En un bol mezclar la harina, caco, polvos de hornear, bicarbonato y una pizca de sal.
En un vaso de medidas mezclar la leche y la vainilla. Resevar.
En otro bol mezclar la mantequilla y el azúcar hasta que tenga una una textura cremosa y liviana.
Agregar los huevo de a uno incorporando bien despues de cada uno.
Agregar la mezcla de harina con la mezcla de leche  alternando.
Batir la mezcla bien hasta que esté bien integrado.
Repartir la crema de chocolate en las cápsulas de papel en el molde de muffins.
Hornear de 20 a 25 minutos. Para ver si estan listo con una brocheta fina o similar probar en el centro de los cupcakes, si está seco está listo.
Dejar enfriar antes decorar.

Preparar el frosting de chocolate:

Ingredientes

3/4 taza de chocolate en barra (en pedazos)
2 cucharadas de cocoa o chocolate en polvo sin azúcar
3/4 taza de margarina o mantequilla suavizada
1 y 1/2 taza de azúcar en polvo o azúcar glass
1 cucharadita de extracto de vainilla
1 o 2 cucharadas de leche (depende de la consistencia que se desee)

Preparación

En una olla pequeña a fuego muy suave derretir los chocolates, (o a baño maría) el chocolate nunca debe hervir.(A baño maría  se coloca la ollita sobre un sartén con un poco de agua y se va revolviendo)
Dejar enfriar.
Pasar a un bol y con la batidora a muy baja velocidad (suave) batir el chocolate con la mantequilla, cuando esté suave y cremosa agregar el azúcar glass o en polvo, la vainilla y una cucharada de leche, batir hasta que esté suave.
Subir un poco la velocidad de la batidora hasta que esté cremoso y tenga consistencia.
Si se necesita  agregar la otra cucharada de leche.
Decorar los cupcakes con esta mezcla  y adornar a gusto.
(yo los adorné con hojas de menta y flores de azúcar que venden en los lugares de repostería.)
Llevar al refrigerador o nevera para que el frosting se asiente.

Vanilla and rice flour cake and a... guest writer post!

and now the recipe, I adapted this recipe from  Murdoch Books. Australia(cooking)

Ingredients

185 grs. soft butter
2 teaspoon vanilla extract
250gs. sugar
3 eggs
200 grs. all purpose flour
1 1/2 teaspoon of baking powder
80 grs. rice flour
80 ml. of milk

method

1. Preheat the oven at 180° c. Butter a square pan  23 x 26 cm aprox. and
cover the bottom with greaseproof paper .

2. In a medium bowl beat  the butter, vanilla, sugar, the flours and  milk.
beat until you have a creamy and thick batter.

3.Empty the mix in the square mold and level surface cake.

Bake in the oven by  45 to 50 minutes or until is golden and firm.
Try with a skewer in the center of the cake.

Set aside in the mold about 15 to 20 minutes.

Cut in squares and powder with glass sugar.

PD: The garnish of rose petals are the las of the season, we are in Autumn!

Cake the vainilla con harina de arroz







Este bizcocho o cake fue una gradable sorpresa (como pasa a veces con las recetas) vi los iungredientes y tenía harina de arroz asi que puse manos a la obra y quedó un cake verdaderamente bueno y delicioso.


Este post me lo pidió Amanda, una nueva amiga en este  mundo de los bloggers, ella  es de Canadá y tiene  un blog de recetas  que se llama Eating in Winnipeg y dentro de ese  un espacio que se llama  guest writers y me pidió  que hiciera un post para su blog, tiene un hermoso blog con deliciosas recetas los invito a que la visiten.

Amanda me ha pedido  que conteste algunas preguntas:

Mi receta favorita, tengo varias pero de las que me encanta hay dos el Suspiro Limeño y el Pie de Limón.
Mi artefacto favorito de la cocina es mi batidora manual, es la que más uso, es cómoda y liviana.
Cual es mi máxima para vivir?

Ingredientes

185 grs. de mantequilla
2 cucharadita de esencia de vainilla
250 grs. de azúcar
200 grs. de harina
3 huevos
1 y 1/2 cucharadita de polvos de hornear
80 grs. de harina arroz
80 ml de leche

Preparación

Precalentar el horno a 180° c Enmantequillar un molde de forma cuadrada y forrar la base con papel  mantequilla.(23 x 26 aprox.)

2. Batir la mantequilla, vainilla, azúcar, huevos, las dos harinas y la leche.
mezclar bien hasta tener una masa consistente.

3.Verter la mezcla en el molde preparado y nivelar la mezcla.
Llevar a horno de 45 a 50 minutos hasta que esté dorado y firme.
Se puede probar  con una brocheta de madera, si está limpio y seco ya está listo.
Dejarlo reposar dentro del molde por lo menos
de 15 a 20 minutos.
Espolvorear con azúcar glass o azúcar en polvo y cortar en cuadrados al servir.

PD: Los pétalos de rosas son de las últimas de la temporada.

Coffe floating Islands (Leche nevada con café)











This recipe of floating islands with coffee is  from my  friend  Pamela who has a wonderful blog "  Rescatando recetas"and she made  this recipe to Mom' s day in honor of her mother .



And I appreciate  her for this recipe and  also is delicious. We loved them all. ..

Floating  islands  dessert we say here in Chile Snow milk and is the same.



Floating Islands



Ingredients (6  servings)

6 eggs whites
3/4 cup of sugar
3 tablespoon of coffe powder
3/4 liter of milk
150 ml. of heavy cream (optional)
some coffe seeds for garnish

Coffe cream
1/2 cup of sugar
3 tablespoon of cornstarch
2 tablespoon of coffe powder

Method



Make a syrup with the sugar and 3 tablespoon of coffe powder, heat the pan and add some water.
About 5 minutes when is ready cut the fire and reserve.

Beat the whites until are until soft peaks form and add the coffe syrup until is incorporate.


Heat de milk  until boil,  and then reduce heat to make the whites flakes.

With a tablespoon, place delicately the eggs whites in the milk and leave for 2 minutes then turn
aside and leave again for 2 minutes. Remove the coffe whites from the milk and skim.

 
Make the coffe cream


To coffe cream  use the same milk boiled  add 1/2 cup of sugar and dissolve in cold water 3 tablespoon of cornstarch,  Cook, over low heat, stirring constantly without letting it come to  a boil  until mixture thickness and coats back of spoon. Add two tablespoon of coffe and incorporated to he cream.
Place the cream and the coffe flakes in a large dish to serve. Keep refrigerate until serve.

If you like garnish with  some coffe seeds

Islas flotantes con café o Leche Nevada con café










Este postre de Islas Flotantes o Leche nevada de café (como le decimos en Chile) es de mi amiga Pamela que para los que no la conocen es chilena y tiene un blog con recetas muy buenas que se llama "Rescatando recetas" y los invito a que la visiten para que la conozcan.
Esta receta de Leche nevada con café es de su mamá y justamente la preparó para el día de las madres, aquí en la casa nos encantó.



Leche nevada con café

Ingredientes

 6 claras de huevo


3/4 taza de azúcar


3 cucharadas (sopa)de café instantáneo


3/4 litro de leche


Crema de café

2 cucharadas de café instantaneo

3 cucharadas  de maizena

1/2 taza de azúcar


150 ml. de crema (opcional)


Preparación


Primero preparar un almíbar con 3/4 taza  de azúcar y 3 cucharadas de café instantáneo, luego cubrir con agua y llevar al fuego por unos 5 minutos hasta que se acomo un almíbar un poco espeso.

Calentar la leche hasta que hierva luego bajar el fuego a muy suave para preparar las copos de claras.

Barir las claras firmes y agregar de a poco el almíbar de café hasta que esté bien firme el merengue..


En cuanto la leche comience a hervir cada vez que pongamos una tanda de copos, los sacaremos con ayuda de una espumadera y los iremos poniendo en una fuente.

Cuando terminamos con los copos usaremos la misma leche para hacer una crema pastelera. Primero agregaremos 1/2 taza de azúcar  y luego disolver las 3 cucharadas de maizena en un poco de agua y se incorpore a la leche.

Una vez que espese la leche agregaremos 2 cucharadas de café instantáneo y si queremos también la crema. Verter  esta preparación en la fuente con los copos y cuando haya enfriado dejar  el postre en la heladera una o dos horas antes de servir.
Si se quiere agregar granos de café para servir.

almonds and basil pasta













A little tired of sweet and dessert??
 Here we have something savoy and delicious and also easy to make.
The incredible thing I did two weeks ago and basil was lovely, now with the cold days (we are in autumn) that have already started to decline but the Northern Hemisphere are fortunate fresh basil so enjoy this recipe.

Note:

This yummy recipe is for one or two persons, if you want more double the ingredients.





Almond and basil pasta

Ingredients (2 servings)

70 grs. almonds in slices
300 grs. pasta
1 cup chopped basil
1 garlic  clove (mashed)
3 tablespoons of olive oil
3 tablespoon of cream
salt an pepper

Method


In a baking sheet place the almonds and cook by a while in medium heat.(3 a 4 minutes)
When are little golden take out, and reserve.
I use the almonds without toast but make as you like.
 In a pot of boiling water and salt cook pasta according to directions or until "al dente".
 Drain the pasta and pour into the pot, add the basil, garlic, oil, salt  pepper  and cream.
Heat over medium heat and serve immediately with reserved almonds.

Pasta con almendras y albahaca











Si estan un poquito cansados de dulces y postres aquí traigo una receta deliciosa y salada.
A veces la gente cree que uno come puros dulces, claro que no, pero sobre todo para las comidas es casi imposible tomar las fotos la cocinera está demasiado ocupada.
pero cuando cocino más tranquila como este caso (hago cosas más pequeñas cuando estoy sola)
Lo increíble que cuando hice esta receta la albahaca aún estaba en su esplendor ahora con las heladas ya están más decaidas estamos en pleno Otoño cerca del Invierno.
pero no se preocupen tengo congelados una buena reserva de berries.
Y sé que habran dias con sol. Aún no llueve.
Bueno ahora la receta.
Está pensada para dos porciones ( o tres) pero si quieren para más doblan los ingredientes.


Ingredientes

70 grs. de almendras
300 grs. de pasta
1 taza de hojas de albahaca picada
1 diente de ajo (molido)
3 cucharadas de aceite oliva
3 cucharadas de crema
sal y pimienta

Preparación

En una bandeja de horno colocar las almendras en láminas y dorar un poco, unos 3 o 4 minutos.
Reservar.
Yo usé las almendras sin tostar pero tostadas quedan deliciosas.
En una olla con agua caliente hervir la pasta con un poco de sal.
Cocinar según las instrucciones o hasta que esten "al dente".
Colar la pasta y agregarle el ajo, albahaca picada, aceite, sal y pimienta y la crema.
Clentar la olla un poco y agregar las almendras tostadas y servir.
Buen provecho.

Lavender creme brulée















Other recipe I adapted  from Cafe Fernando  that I saw a time ago. I have a  lavender bush in my garden and I made some treats and desserts and I love cook with it, is nice and beauty.And I love of course creme  brulée, I have to say : I really love this dessert!

Ingredients (6 servings)




1 1/2 cups heavy cream


1/2 cup whole milk


2 tbsp lavender
(if you are afraid about lavender I have to say is not strong but you can reduce and use only
1 tablespoon of lavender flowers)


5 large egg yolks


1/2 cup sugar


2 tbsp pure vanilla extract


 1/2 cup  sugar for  caramel topping


Method


1.Center a rack in the oven and preheat the oven to 170° c

2.Put six ramekins  or  baking dishes on a baking sheet.


3 In a pot heat cream, milk and lavender to a boil, remove from heat, cover and let infuse for 20 mins.


4.In a measuring cup  or medium bowl, whisk egg yolks, sugar and vanilla together until well blended.


5.Still whisking, drizzle in one quarter of the hot liquid (you might want to rewarm the liquid after infusion) and temper the yolks. Pour in the rest of the liquid, mix and strain it into the baking dishes.

6.Bake the custards for 50 to 60  minutes ,   or until the custards  are set. Tap the sides of the dishes and the custards should hold firm.
Note: if you see are not set bake for 10 minutes more.

7.Let the custards cool until they reach room temperature. Cover each with plastic wrap and refrigerate at least 1 hour. Sprinkle each custard evenly with 1 tbsp sugar, then brown the sugar with a blowtorch until it bubbles and colors.

Crema brulée con lavanda


















Otra receta que adapté del Blog Café Fernando  que tiene recetas  deliciosas. La había visto hace un tiempo y como normalmente cocino con lavanda me atrajo la idea de hacer esta crema brulée con lavanda.(de hecho tengo helados con lavanda si lo quieren ver)
Queda deliciosa y de una textura muy suave. Si alguien quiere menos lavanda poner solo una cucharada de hojas de lavanda.Quedará igual de rico.De hecho  modifiqué la receta.



Si les gusta o quieren probar un Helado de miel y lavanda veanlo aquí.

Ingredientes (6 ramekins)

1 y 1/2  taza de crema espesa
1/2 taza de leche
2 cucharadas de flores de lavanda
1/2 taza de azúcar
5 yemas de huevo
2 cucharaditas extracto de vainilla
6 cucharadas para el caramelizado de los brulée (una por cada pocillo)

Preparación



Precalentar el horno a 170° (horno medio suave)
Preparar los bols de cerámica o ramekins en una fuente metálica para llevar a horno a baño maría.
En una olla calentar la crema, leche y la lavanda hasta que hierva.
Retirar del fuego y dejar reposar unos 20 minutos.
En un bol mediano batir las yemas de huevo, azúcar y vainilla hasta que esten bien mezclados.
Aún batiendo agregar un poco del liquido que se calentó con la lavanda,para temperar las yemas, despues agregar el resto del líquido y colar para sacar los pedazos de lavanda o trocitos de huevo que a veces quedan.
Divir la mezcla en los ramekins.que ya estan en la fuente para horno, la fuente debe estar hasta la mitad de agua, y llevar a cocinar a baño maría por unos 50 a 60 minutos, la mezcla debe quedar firme .
Si no están firmes cocinar unos 10 minutos más.
Dejarlos a temperatura ambiente. Despues cubrir con film plástico y dejarlos en el refrigerador por 1 hora al menos.

Despues espolvorear azúcar en los ramekins y dorar con un soplete o antorcha (si no tienen tambien se pueden poner al horno al grill) hasta que esten dorados y burbujeantes.

Glazed lemon cake with cardamom












Sometimes only I want is a piece of cake  you know, for a cup of tea or coffe and really I cant eat bought cookies(I have sometims for the kids) and this  cake is for me the perfect cake for tea or any moment in the day. Is moist and yummy. Anyway I love all with lemon!

Ingredients

5 tablespoon of butter or margarine
1 cup minus 1 tbsp granulated sugar
1 tablespoon of honey
2 eggs
1 tablespoon lemon zest
1/2 cup whole milk
1/2 teaspoon of salt
2 cups of flour
1 teaspoon of baking powder
1 teaspoon of ground cardamom

Glaze

1/4 cup lemon juice
1/3 cup of sugar
1 tablespoon of honey

Note: Dont soften butter in microwave. Either leave butter on kitchen counter  for an hour before use.

Method

Preheat oven at 190 °c (medium heat)
Butter a 4x8 inch loaf pan.

Beat the butter until fluffy, about 2 minutes. Add the sugar and honey, continue to beat until creamy, afew minutes or more.
Add eggs, one at a time.beating after each addition to incorporate.
On low speed  slowly beat the milk in . Do not worry if the mixture looks a little curdled. Mix in lemon zest.
Mix together the flour, salt, cardamom, baking powder.
Add to the wet ingredients beating until is smooth.
Place batter in prepared  pan and bake by 45 to 50 minutes or until is golden and dry.

While the lemon cake is baking prepare the glaze.
Heat the glaze ingredients, honey, sugar and lemon juice.in a samll saucepan until is dissolved.

Once you have removed the bread from the oven , pokes hole over the top with a thin skewer, this help the glaze penetrate.
Spoon the glaze over it while the cake is still in the pan and is still hot.
Let cool for 20  minutes before removing from pan and slicing to serve.

Cake glaseado con limón y cardamomo.










Desde que tengo el blog no soy de tanto dulce (aunque no lo crean) soy más salada. Pero a veces me encanta un pedazo de queque (de esos típicos que hacen las mamás) para una taza de té o de café, generalmente en la tarde.
Siempre tengo (por los niños) de esas galletas que vienen en paquetes chicos que a veces les mando para la colación  pero no sé algo me pasa porque no me las puedo comer, a veces no son malas pero las encuentro como químicas o seran los aditivos para que duren.
En fin por eso nos encantan los muffins y los queques, lo malo es que no duran NADA.
Pero este queque lo encontré sencillamente delicioso. Esas cosas que te sorprenden.
Ni siquiera pensaba sacarle fotos. Pero es demasiado rico.
Es húmedo (esencial en un queque) y sabroso y la mezcla limón,miel y cardamomo, maravilloso.
Y es fácil. Buen provecho!
Está adaptada de Simple recipes.com (le hice algunos cambios y le disminuí la mantequilla)

Nota: el cardamomo es un ingrediente propio de la India maravilloso y se encuentra en casi todos los supermercados (en frasco).

Ingredientes

5 cucharadas de mantequilla o margarina
1 taza menos una cucharada de azúcar granulada
1 cucharada de miel
2 huevos
1 cucharada ralladura de limón
1/2 taza de leche
1/2 cucharadita de sal
2 tazas de harina
1 cucharadita de polvos de hornear
1 cucharadita de cardamomo molido

(no suavizar la mantequilla en el microondas, es mejor sacarla una hora antes de que se va a usar)

Glacé

1/4 taza de jugo de limón
1/3 taza de azúcar
1 cucharada de miel

Preparación

Precalentar el horno a  190° c (temperatura media)
Enmantequillar un molde alargado mediano.
En un bol batir la mantequilla hasta que esté suave, acerca de dos minutos.Agregar el azúcar y la miel, continuar batiendo hasta que esté cremosa.
Agregar los huevos de  a uno.Batiendo despues de agregar cada uno.
Si se hace con máquina (tambien puede ser a mano) batir a velocidad suave agregando la leche,
No preocuparse si está muy cremoso.
Agregar la ralladura de limón

Mezclar la harina, la sal, el cardamomo, y los polvos de hornear. Unir con los demás ingredientes que ya están batidos.Unir hasta tener una consistencia cremosa.
Vaciar la mezcla en el molde preparado y llevar al horno de 45 a 50 minutos o hasta que esté seco y dorado.

Mientras se cocina el cake preparar el glacé.
En una ollita a fuego suave calentar la miel, azúcar y jugo de  limón hasta que se disuelva.

Cuando se retire el cake del horno con una brocheta fina (de esas de bambú).pinchar el  cake arriba para que cuando se le eche el glacé se absorba mejor.
Con una cuchara esparcir el glacé sobre el cake. (sin sacar del molde)
Dejar enfriar unos 20 minutos antes de desmoldar y esperar que se enfrie antes de servir.

Lemon cheesecake cupcakes










These delicious cupcakes I adapted from an amazing blog Cafe Fernando  this is one of more beauty blogs I know. He made this recipe with blackberries but I think any berry is good to this recipe.
Delicious for a Tea time or an special breakfast ot like a dessert.
I use to make the muffins pan and place the cases inside the mold.






Ingredients


Lemon Cheesecake Cupcakes Recipe

(12 servings)
Cookie base:


200 grs. of cookies (grinded)


60 ground almonds


2 tbsp sugar


3 tbsp butter, melted


Filling:




 For a creamy consistency, make sure that all the ingredients below are at room temperature.


1  cream cheese 200 grs. (Philadelphia or other)


3/4 cup of heavy cream (or sour cream)


1/2 cup sugar

2 large eggs


1/2 tsp vanilla extract


1 tbsp finely grated lemon zest


1 tbsp lemon juice


1 cup of raspberries (or any kind of berry)


2 tablespoon  powdered sugar


Method





Preheat your oven to 190° c
Line a 12-hole muffin tin with muffin cases and set aside.


Crush the cookies to fine crumbs and mix with ground almonds, sugar and melted butter.


Press 1  tablespoon of mixture into the base of each muffin case and place in the refrigerator to chill by 30 minutes.


Beat the cream cheese, heavy cream and sugar in a mixer until light and fluffy.

Add the eggs, one at a time, followed by vanilla extract, lemon juice and lemon zest, beating well after each addition.Mix well.


.Spoon the mixture over the cookie bases 3/4 full.


.Press three raspberries into the filling and bake for 25-30 minutes or until the cheesecakes are puffed and starting to color.

.Cool, then chill until ready to eat.


.Decorate each cheesecake with raspberries and dust with powdered sugar to serve.

Esta receta es de un Blog que tiene recetas maravillosas Café Fernando hace mucho que no iba y estuve mirando recetas y esta fue una de las que me encantó, el blog está en inglés pero es igual un blog hermoso para conocer.

Estos lemon cupcakes se pueden comer de postre o de merienda o para un desayuno relajado.
Usé los moldes de muffins para poner dentro las cápsulas de papel.


Cupcakes de limón y queso crema

Ingredientes (12 cupcakes)

Está compuesto de una base de galletas, luego una crema que es el cheescake y luego las frambuesas.

Masa de galletas

200 grs. de galletas molidas
60 grs. de almendras molidas
2 cucharadas de azúcar
3 cucharadas de mantequilla derretida

Relleno

Para una consistencia cremosa del relleno los ingredientes de más abajo deben estar a temperatura ambiente.

1 queso crema Philadelphia  (200 grs. o similar)
3/4 taza de crema espesa
1/2 taza de azúcar
2 huevos
1/2 cucharadita extracto de vainilla
1 cucharada de ralladura de limón
1 cucharada de jugo de limón
2 cucharadas de azúcar glass o azúcar en polvo
1 taza de frambuesas (o frutillas o arándanos)
(pueden ser frescos o congelados

Preparación

Precalentar el horno a 190°c.
Preparar un molde para muffins con las cápsulas de papel.
Moler las galletas y unir con las almendras molidas.
Agregar el azúcar y la mantequilla derretida.
Poner como basa en cada cápsula de papel una cucharada de la mezcla de galletas molidas.
Colocar el molde con las cápsulas de papel en el refrigerador por unos 30 minutos.

 Mezclar el queso crema, la crema o nata,y el azúcar. Unir bien hasta que esté suave y cremoso.
Agregar los huevos de a uno, enseguida el extracto de vainilla, el jugo de limón y la ralladura.
Mezclar bien.
Retirar del refrigerador llas capsulas con la base de galletas.
Rellenar cada cápsula con la crema  3/4 de su capacidad.
Sobre el relleno  de cada una colocar unas 3 frambuesas presionando un poco.
Llevar a horno por unos 25 a 30 minutos o hasta que estén dorados y listos.
Retirar y dejar enfriar
Decorar con otras frambuesas y espolvorear con azúcar glass o en polvo.
