Classic Fudge Walnut Brownies












When you want (or need) something with chocolate you can think in Brownies, especially this recipe of Fudge-walnut brownies, are absolutely delicious is adapted of one recipe of My recipes  where you can find too healthy recipes.

Ingredients

200 grams  all purpose flour
1 cup granulated sugar
3/4 cup unswetened cocoa
1/2 cup brown sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup bittersweet chocolate chunks
1/3 cup fat free milk
4 tablespoon of butter melted
1 teaspoon vanilla extract
2 large eggs beaten
1/2 chopped walnuts divided

Method

Preheat oven to 180C

Weigh or lightly spoon flour into dry measuring cups, level with a knife.
Combines flour and nex 5 ingredientes (sugar,cocoa,brown sugar,baking powder and salt)in a large bowl.

Combine 1/2 cup of chocolate and milk in a microwave safe ( I put all the chocolate chunks with milk and was so good) bowl., microwave  at high 1 minute strirring after 30 seconds.

Stir in butter,vanilla and eggs. Add milk mixture, 1/2 cup chocolate (if you melt only 1/2 cup)and 1/4 cup of nuts to flour mixture stir to combine.

Pour the batter into a square metal baking pan coated with cooking spray or oil, sprinkle over the batter with remaining nuts.
Bake for 22 minutes or until a wooden pick inserted in center comes out with moistcrumbs clinging.
Cool in pan on a wire rack.
Cut into 20 pieces.

Brownies con nueces

A veces el cuerpo nos pide un poco de chocolate (no soy de tener barras de chocolate) solo las que uso para cocinar pero me apetece a veces hacer algo con chocolate, un mousse o brownies como estos que son deliciosos y muy chocolatosos, esa sería la palabra!!
Adapté y traduje esta receta de My recipes un sitio en inglés que tiene recetas muy buenas y saludables, de hecho estos brownies tienen menos calorías que otros que a veces  hemos probado.
La cosa es la medida, una puede probar todo pero en porciones pequeñas.
La gracia del brownie es que debe quedar húmedo y delicioso por eso es importante el rato de cocción.
(Si a veces me demoro en traducir la receta tenganme paciencia es porque he estado muy alcanzada de tiempo, este mes si Dios quiere mis hijos se graduan de 4° medio y ya saben como es)

Ingredientes

200 gramos de harina sin polvos de hornear
1 taza de azúcar
3/4 taza de cocoa sin azúcar
1/2 taza de azúcar rubia
1/2 cucharadita de polvos de hornear
1/4 cucharadita de sal
1 taza de chocolate en trozos tipo bitter
1/3 taza de leche descremada
4 cucharadas de mantequilla derretida
1 cucharadita extracto de vainilla
2 huevos grandes batidos
1/2 taza de nueces picadas en trocitos


Preparación

Precalentar el horno a 180° c.

Medir la harina y los ingredientes secos.
En un bol colocar la harina, azúcar, cocoa en polvo, azúcar rubia, polvos de hornear y sal.

Aparte en una jarrita o bol para microondas colocar la mitad del chocolate en trozos y la leche (yo hice lo siguiente coloqué todo el chocolate con la leche y lo derretí en el microondas y la textura quedó muy buena.)

 Se coloca 1 minuto en el microondas en potencia alta y se retira para revolver cada 30 segundos, se revuelve y se vuelve a colocar.

Debe quedar una textura cremosa de chocolate con la leche.
En otro bol mezclar la mantequilla con la vainilla y huevos, agregar la mezcla con el chocolate derretido, y 1/4 de las nueces trozadas, mezclar todo con la mezcla de harina. Unir bien.

Poner la mezcla en un molde cuadrado alargado no muy grande (de unos 20 por 24 cm) previamente humedecido con aceite (le paso un pedazo de toalla nova con aceite) espolvorear encima el resto de las nueces picadas.
llevar a horno por unos 22 minutos no más porque debe quedar húmedo.Probar con una brocheta de bambú si sale con una pocas migas adheridas, estará bien.
Tapar y dejar enfriar.
Se puede cortar en 15 o 20 trozos segun se quiera.

Spinachs and parmesan filling crepes










Long time since I had made crepes , always forget the nice are them and how we like with some veggies or a dessert (filling with jam or dulce de leche).
I had spinachs so thesese was perfect for this plate.
Easy and yumm.

 
These panquekes (or crepes)  can be kept perfectly frozen!

Ingredients

200 grs. plain flour
2 eggs
1 yolk
400 ml milk
pinch of salt
30 g. butter

Filling
400 g spinachs
some green onions trimmed and sliced
salt and pepper
250 grs creme fraiche or sour cream
100 grs. grated parmesan cheese
50 g.unsalted butter
Method


To prepare the crepes  place the flour and a pinch of salt in a large bowl, add the eggs and yolk and mix to a lumpy wet paste using a spoon.
Now add the milk and whisk a little to begin  to smooth out the lumps.Beat until you have a creamy batter.
.

Alternatively place all the ingredients except for the butter in a blender and whizz until smoothy.
I use a hand whisk and was perfect.
Leave the batter to stand for   least 20 minutes, then stir in the melted batter.

Heat a frying pan  of about 24 cm  over a medium heat  and add some oil drops and clean with a paper towel.
Ladle injust enough batter to coat the base,tipping it to allow it to run evenly over the surface. When the pan is hot enough the pancake mixture should sizzle as it hits the pan.

Cook by 30  seconds until the top side appears dry and  lacy at the edges and is golden.
Loosen the edges using a palette, a knife or spatula.
Slip this underneathand flip it over. Give another 30 seconds and then slip int onto in a plate.
You can make a pile  them up on a plate  and cover with foil to keep warm.

Filling

To make the filling bring a large pan of salted water to the boil and add the spinach and blanch it for 2 minutes, then drain it and press out as much of the water as possible.

At the same time heat a large frying pan over a medium low heat for a few minutes add the butter and once it has melted stirring ocassionally  Then add the green onions and sweat by a minutes.
Finally mix in the spinach  and cook about 1 minute. seasoning with salt and pepper  Leave cool and transfer to a bowl.

To assmble the cannelloni (crepes) lay a couple of tablespoon of the filling just to the side of the centre of the top pancake. and roll it up.
Place this in a 35 x 35 cm roasting dish and fill and roll the remainder likewise, laying them out in a row.
Heat the oven to 180° c Beat the creme fraiche with a spoon to lossen it and spoon it evenly over the pancakes. Scatter over the
parmesan cheese and bake for 25 minutes until golden and sizzling.

Panqueques rellenos con espinacas











Siempre se me olvida lo ricos que son los panqueques y tan rápidos, me acuerdo que mi abuelita Filomena (la española) parada en la cocina y diciendo ya estais listos?? y todos decian. no todavía no para que la pobre viejita siguiera haciendo panqueques.
Los iba haciendo y los ibamos comiendo tal cual, normalmente con manjar (dulce de leche) pero tambien me encantan salados y los hago a veces con pollo o mariscos o con verduras, esta vez los hice con espinacas.

Es una receta de Country living UK

Ingredientes
200 gramos de harina sin polvos de hornear
2 huevos
1 yema de huevo
400 ml de leche
pizca de sal
30 grs. mantequilla

Relleno

2 cebollines picados finos
400 grs. de espinacas
50 grs. de mantequilla
sal y pimienta para aliñar
250 grs. crema o sour cream
100 grs. queso parmesano rallado

Preparación


Para preparar los crepes colocar en un bol la harina y sal ,
agregar los huevos y la yema de huevo, unir bien.Agregar la leche y batir un poco (con un batidor de alambre) para deshacer los posibles grumos.
Batir bien hasta tener un batido cremoso. Batir bien todos los ingredientes y dejar reposar unos 20 minutos excepto la mantequilla.
Despues agregar la mantequilla ya derretida.
 
Calentar un sarten de teflon de unos 24 cm. e ir haciendo los panqueques. Poner una cucharada y media mas o menos para que sea una película delgada.
Dejar dorar levemente y dar vuelta con una espátula para que se dore por el otro lado.
Ir reservando los panqueques en un plato.
Cubrir con aluza foil si no se van a usar de inmediato.
 
Relleno
 
Para el relleno en un sarten grande con un ´pcp de agua saltear las espinacas ya picadas, hacer esto por unos dos minutos, luego retirar del fuego y estrujar el agua.
En un sartén calentar un poco de mantequilla y agregar el cebollín picado.
Sudar un poco. despues agregar las espinacas y unir todo bien revolviendo todo a fuego suave.
Sazonar con sal y pimienta y reservar en un bol.
 
Para armar los panqueques rellenos.
Tomar un crepe o panqueques y colocar en el centro una cucharada y 1/2 de la mezcla de espinacas,
Enrollar e ir colocando de a uno en una fuente de horno.
Hacer los panqueques necesarios.
Precalentar el horno a 180 c
Conuna cuchara esparcir la crema espesa o la sour cream, luego el queso rallado y llevar a horno por unos 25 minutos hasta que esté dorado y burbujeante.
Normalmente sirvo dos panqueques por persona y los acompaño de tomates u otra ensalada.
Se calientan bien en microondas si quedan para la noche.

These Banana muffins are so easy to make warm muffins are ideal for a mid morning sweet treat with a cup of tea or coffe:)
This recipe needs ripe bananas  -are more easy to mash and is packed full of sweetness and flavour.
Muffins are best eaten on the day but they freeze well too allow them to cool completely then pop in a freezer bag and you can freeze for up to 2 months.
Defrost at room temperature for about 2 hours and you can warm in a low oven 5-10 min.
 
 
 
 
 
 
Ingredients
 
250 g plain flour
1 tbsp baking powder
1 teaspoon ground cinnamon
130 g  sugar
75 g butter chilled and grated
1 egg
175 ml milk
2 medium sized ripe bananas peeled
 
Method
 
Preheat oven to 180°c
Line a 12 hole muffin tray with paper muffin cases.
Sit the flour baking powder and cinnamon into a large bowl and stir in the sugar and grated butter.
Stir to coat the butter in the flour mixture.
Beat together the egg and milk and stir into the bowl until just blended.
Dont over mix - it should still be lumpy..
Cut 12 slices from pne of the bananas then mashed the remainder with the other banana.
Fold the mashed banana into the mixture and divide the mixture between the paper cases.
Top each with a slice of banana.
Bake for 20 to 25 minutes until risen golden and firm to the touch.
Serve warm or cold.
 
tip: I brush a little with apricot jam over them. (optative)

Estos muffins de banana o plátano son fáciles de hacer y rápidos.
Además quien no tiene plátanos por vencer o muy maduros en la casa?
Siempre me ha parecido curioso que por ejemplo los plátanos son tan baratos comparados con otras frutas que son propias nuestras (peras  manzanas  duraznos etc) en todo caso el plátano es excelente por el potasio y sus vitaminas.
Y a la mayoría de los niños les gustan.
 
Estos muffins son deliciosos recien hechos y tibios pero tambien se pueden congelar sin ningun problema hasta dos mes en el freezer (para colaciones)
Esperar que se enfrien y luevo ponerlos en bolsitas plásticas  y cuando se quieran usar sacar dos horas antes y dejar a temperatura ambiente.
Si se quieren tibios poner al horno unos 5 a 10 minutos (calor bajo)

Ingredientes

250 grs harina sin polvos de hornear
1 cucharada de polvos de hornear
1 cucharadita de canela molida
130 gramos de azúcar
75 grs mantequilla bien fría y en trozos pequeños

Sticky Gingerbread








 
 
 






Is time again to other SRC recipe and this time my assignement was Our Eating habits and I really enjoyed looking her recipes .
 My list was long but finally I decide make this stick gingerbread because I love ginger and  always wanna make some bread with ginger.
A really nice recipe that I loved so much.
I think too that is a lovely ginger bread for Christmas or any time of the year.
And I love how smell!

Mixitup





Ingredients

120 grams of butter
1 1/2 cups all purpose flour
2 teaspoon of ground ginger
1 1/2 tsp cinnamon
1 tsp baking soda
1/2 cup dark brown sugar
4 tablespoon of molasses or honey
2/3 cup milk
1 egg


Method

 Place butter  brown sugar and molasses (or honey) in a saucepan and cook over medium heat until butter is melted and mixture is combined.

Remove from heat and stir in the flour  ginger  and cinnamon.
Stir in beaten egg.

Warm the milk and add baking soda
 Add to the mixture in your saucepan.

Mix all well until you will have a creamy batter.

Preheat oven at 180 °
Pour the mixture into a loaf pan has been lined with parchment paper and greased.

Bake about 45 minutes or until  you try with a wood sticker and is dry.

If you have time leave for  one day to let the flavors melt.

Serve with butter and enjoy!

Pumpkin mousse shooters

 












When I made this the kids weren't really interested (normally eat pumpkin in savoy things)
but really I wasn't worry I knew was delicious:)
I love pumpkin in sweet and savoy things!
Anyway... they loved:)
Is really light and creamy.

Ingredients


1 fat free cream cheese (like philadelphia)
1 cup and half of pumpkin puree
or a can
1 teaspoon ground cinnamon
1 cup of ricotta cream
1/2 teaspoon ginger
1/8 teaspoon of ground cloves
3 cups whipped topping cream divided


Method


Beat cream cheese in a medium bowl with electric mixer at medium speed until smooth.
Add pumpkin (if you cooked mashed it) milk  ricotta cream  cinnamon  ginger and cloves and beat about 1 minute until smooth .
Mix with  1 1/2  cups whipped topping .
Finally divide the mousse in 6 glasses.
Cover and refrigerate about 1 1/2 hour.
Just before serving top each shooter with remaining whipped topping and some mints.

Mousse de zapallo  camote















Cuando hice este postre de zapallo los niños no mostraron mucho interés pero no me preocupé (igual son tan exigentes) ayer se pusieron a pelear si la cazuela debía llevar arroz o chuchoca todo porque ayer la hice con chuchoca la cazuela de pollo.
Como que el arroz me aburre prefiero con chuchoca o un poco de sémola queda super rica.

Bueno para no alargar el cuento les encantó el postre.
(normalmente el zapallo lo comen en cosas saladas o en sopaipillas) pero siempre les digo que hay que probar.

Ingredientes

1 queso crema tipo filadelfia
1 taza y 1/2 de puré de zapallo cocido
3/4 taza de leche
1 taza de ricotta
1 cucharadita de canela molida.
1/2 cucharadita de jengibre molido
1/8 de cucharadita de clavo de olor molido
3 tazas de crema batida dividida
(una parte dentro del mousse y la otra para adornar)

Preparación

Batir el queso crema en un bol mediano con batidora eléctrica
a velocidad mediana hasta que esté suave.
Agregar el zapallo molido la ricotta  la leche la canela el jengibre y el clavo de olor
Batir 1 minuto hasta que esté suave y cremoso.
Agregar 1 1/2 taza de crema batida e incorporar.
Repartir el mousse en 6 pocillos o copas
Llevar a rerigerar por lo menos 1 hora y 1/2.
Caundo esten listos agregar un poco de crema batida y adornar con hojas de menta.

I fnd these amaretto apple  muffins in My recipes and  really are delicious I love especially the glaze on the top.
 
The amaretto adds an even more distinct almond  flavor but if you dont have it, you can use almond extract instead.
 
 
 
 
 
 
 
 
 
 
Ingredients 
 
1 1/2 cups all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon baking soda
3/4 cup granulated sugar
1/2 cup less fat cream cheese softened
1/4 cup butter softened
2 tablespoon amaretto (almond flavored liqueur)
1 teaspoon vanilla extract
1 karge egg
1/2 cup aour cream
2 tablespoon of milk
1  cup finely chopped apple
1 tablespoon all purpose flour
 
Streusel
 
 
2 tablespoon all purpose flour
2 tablespoon brown sugar
1/4 teaspoon ground cinnamon
2 tablespoon butter chilled
2 tablespoon sliced almonds
 
Glaze
 
1 cup powdered sugar
4 teaspoons reduced fat milk
 
Method
 
Preheat oven to 180°c
Place muffin cup liners in 12 muffin cups
In a bowl combine all purpose flour ( 1 1/2 cups) add baking powder  salt and baking soda stirring with a whisk.
Combine granulated sugar cream cheese and 1/4 cup butter in a large bowl  beat with a mixer at medium speed until well blended.
Combine sour cream  and 2 tablespoon of milk in a small bowl
stir with a whisk untill well blended. Combine apple and 1 tablespoon flour in a small bowl  toss well.
 
Add flour mixture and sour cream mixture alternately to sugar mixture begining and ending with flour mixture.
Beat just until blended. Fold in apple mixture. Divide batter evenly among muffins cups.
To make the streusel combine 2 tablespoon flour brown sugar  and ground cinnamon in a small bowl.
Cut in 2 tablespoons butter with a pastry blender until mixture resembles coarse meal: stir in almonds Sprinkle streusel evenly over muffins..
Bake at 180° for 27 minutes or until a wooden pick inserted in center comes out clean. Cool in pan for 15 minutes on a wire rack and remove the muffins from the pan.
 
To prepare glaze, combine powdered sugar and 4 teaspoons milk in a small bowl, stirring with a whisk. Drizzle glaze over cupcakes.
If you dont have amaretto you can use almond extract instead (1/2 teaspoon)

Couscous salad












Sometimes I make couscous (I love it) and Esperanza loves too but really I dont remember if I posted some recipes maybe one.
Anyway looking my old cook magazines  I find this recipe for a salad and sounds delicious.
And I made it!  nice!
I ate alone but you can use the couscous like rice or potatos to serve with some meat or chicken but really alone is delicious.

I adapted this recipe from Revista Paula cocina  (año 2003)


Ingredients

2 cups couscous
1 tablespoon  of oil
2 tablespoon of butter
salt and pepper
1 cup of raisins
3/4 cup of almonds in slices
1 teaspoon of chopped mint
1/2 cup of dates in cubes (optative)


Method


In a saucepan  put three cups of cold water
oil  the curry  butter  and salt and dates.


Bring to a boil over medium heat and add the couscous  and mix.
Remove from heat cover and let stand 20 minutes.
Stir a bit with a fork and add the raisins.

Place in a bowl and place the couscous cool aqnd  fluff with a fork. and then  let stand before serving add almonds and mint.
Check the seasoning.

Ensalada de Couscous y curry





















Me encanta el couscous porque es suave y muy rico y se puede servir acompañando algo como carne o pollo o solo.
Esta receta la adapté de una Revista Paula cocina /(año 2003)

Ingredientes

2 tazas de couscous (viene en cajas)
1 cucharada de aceite
2 cucharadas de mantequilla
1 cucharadita de sal
1 pizca de pimienta
1 taza de pasas
3/4 taza de almendras en láminas
1 cucharadita de menta picada
1/2 taza de dátiles en trozos (optativo)

Preparación

En una olla colocar tres taza de agua fría
y agregar el aceite   la mantequilla  la sal  el curry y los dátiles.

Hervir el agua con los ingredientes a fuego medio
agregar el couscous y mezclar.
Retirar del fuego y dejar reposar por lo menos 20 minutos
Revolver y agregar las pasas.

Colocar en un bol y esponjar un poco con un tenedor agregar las almendras y la menta picada.

Revisar la sazón si necesita más sal.
Se puede servir tibio o frio.

Apricots and ricotta dessert








I had other apricots jar still and I wanna make something as here is close  apricots season (about 2 months more)

I remind you that while in the northern hemisphere  when begin the Autumn we are in spring and before summer anyway I love Fall is my favorite season.(and love Fall recipes)

 OK  no more blah blah I made a apricots dessert I think is a mix of ice crema and like a semifredo but is really delicious.:)











Ingredients

1 jar of apricots
3 tablespoon of apricots jam
250 ml of whipped cream
250 grams  ricotta or cottage cheese
150 grams of sugar
1 teaspoon of ginger powder
mint leaves
50 grams little meringues (optative)


Method



Grind in blender apricots with some juice that comes in the jar should be a thick texture and some pieces of apricots and need not grind all.

To this mixture add the tablespoon of jam mix and set aside.


Ina  bowl whipp the heavy cream until is firm  and add the sugar,  and the ginger and ricotta.
(if you  want add the meringue now)

Line a loaf pan with two sheets of plastic  film one horizontal and the other vertical so that the sides fall.

Put the mold in layers of cream first and then one of apricots  another of cream and repeat   finishing with cream layer.

If you want you can marbling passing the handle of a spoon.
Fold the plastic film to cover the dessert.

 Freezer for about six hours.
Once removed from the freezer to remove the plastic wrap and carefully unmold onto a plate.

Garnish with some mint leaves and chocolate.
Then store in freezer again.
To more soft put a few seconds (about 30 seg)on the microwave

Postre helado de damascos y ricotta








Tenía otro tarro de damascos y quería usarlo antes de que llegue la temporada de damascos y me acordé de este postre que realmente es delicioso y que había visto hace tiempo en un libro que tengo.
Adapté la receta porque la receta original era con damascos secos pero me tincó más con damascos en tarro.
Tambien lleva merengues pero yo no le puse en todo caso si quieren le agregan.

Ingredientes

1 tarro de damascos o albaricoques
3 cucharadas de mermelada de damascos
250 ml de crema para batir
250 gramos de ricotta o queso fresco
150 gramos de azúcar
1 cucharadita de jengibre en polvo
50 gramos de merengues pequeños (optativo)

Preparación

 Moler en una licuadora los damascos con un poco de jugo solo un poco no importa que queden trozos
Agregar la mermelada de damascos  mezclar y reservar.

En un bol batir la crema y agregar el azúcar   y cuando ya esté con picos suaves agregar la ricotta o queso fresco y el jengibre.
Si se quiere se agregan los merengues.

Forrar un molde alargado con film plástico (molde como de pan de molde) con una lámina en forma horizontal y otra vertical dejando caer un poco por los lados.
Entonces poner capas alternadas de crema primero luego de la mezcla de damascos y luego la crema repetir y termina con la crema.
Doblar las puntas del film plástico hacia dentro y llevar a congelador unas 6 horas para que amolde bien.
Cuando esté listo desmoldar en un plato y retirar el papel plástico.
adornar con hojas de menta y chocolate.
Si se quiere más suave (no tan congelado) pasar por el microondas unos segundos.
Despues guardar en el congelador nuevamente.
