Whole wheat chocolate Blueberry cake (Cake de chocolate con harina integral y arándanos)



This chocolate blueberry cake is really good! But when I saw the pictures , I noticed   maybe I put a lot of mint decoration !! 
But you guys can decorate it as you like :)
Sorry for that but I was so focused and happy doing that I did not realize, as Keith says tut! 
Keith know much cooking and baking because he spent time in France! 
He makes lovely breads:)

Ingredients

1 1/2 cups whole wheat flour
1 cup golden  brown sugar
6 tablespoon  unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup water
1/2 cup frozen blueberries
2 eggs

Garnish
1/2 cup frozen or fresh blueberries
1/2 cup semisweet chocolate pieces
3 tablespoons heavy cream


Method

Preheat oven to 180°c (350F)
In a medium bowl combine flour,sugar, cocoa powder, baking powder, baking soda and  salt.
In blender combine water and eggs. Blend until smooth . Add to mflour mixture. Whisk until combine and add the frozen blueberries.
Pour the batter in a greased  8x8x2 baking pan.
Bake about 30 minutes or  until a toothpick inserted in the center comes out clean. Cool completely on wire rack.
Desmold onto swerving plate.
In a small microwave  bowl heat the heavy cream by 1 minute.
Add the chocolate pieces, stiur and let stand by a while.
You have to be a smooth chocolate cream.
Spreading in  cooled cake. Garnish with blueberries and some mint if you desire.

Cake de chocolate y harina integral con arándanos







Aún no salen los nuevos arándanos y si hay deben ser carísimos. Asi que derechamente pensé en hacer esta receta con arándanos congelados.
Aqui en Chile tenemos estupendas empresas de arándanos y frutos congelados que no son tan caros.
Se pueden encontrar todo el año en los supermercados.
Hay que estar viendo. Cuando encuentro ofertas compro y congelo asi tengo para todo el año y por supuesto congelo en verano.
La frambuesa congela maravillosamente.

Me encantó que esta receta llevara harina integral y aún asi quedara como brownie!





Ingredientes

1 1/2 taza de harina integral
1 taza de azucar rubia 
6 cucharadas de cocoa   o chocolate sin azúcar
1 cucharadita polvos de hornear
1/2 cucharadita de bicarbonato de sodio
1/4 cucharadita de sal
3/4 taza de agua
2 huevos
1/2 taza de arándanos congelados o frescos

Para el glaseado de chocolate
1/2 taza de arándanos frescos o congelados
1/2 taza de chocolate en trozos (en barra)
3 cucharadas de crema espesa

Preparación

Precalentar el horno a 180°c

Caramel apple tarts (tartas de manzana caramelizadas)








   I love apples and usually I eat and bake them year-round.
 I find this recipe of little tarts and think could be lovely. And was awesome.
The pastry really thin and the filling delicious.

Ingredients
12 tarts

pastry 

350 g all purpose flour 
3 tablespoon of sugar 
160 grams of chilled butter in cubes
4 1/2 tablespoons cold water 

Method

In a bowl place the flour and sugar. Then add the butter cubes and make crumbs with fingers .
Until have  a breadcrumb texture. 
Gradually add the cold water and work dough until smooth. 
Wrap the dough in plastic film and refrigerate 15 minutes. 
Roll out on a lightly floured surface and use a round pastry cutter to cut the circles.
 And  then place in muffins cups. 
 Prick with a fork the bottom of the tarts  and refrigerate 15 minutes 
Preheat oven to 180 ° c 
Place a weight on top as  beans  or other to maintain the shape. 
Cook them 10 minutes or until crust is crisp and dry. 
Set aside  while prepare  apple filling. 

Apple filling 

4 to 5 Apples granny smith or fuji 
pitted and peeled. 
80 grams sugar 
fine zest of 1 lemon 
Juice of 1 lemon 
3 eggs 

20 grams of butter.
icing sugar for dusting

Method


Grate 3-4 large apples over a bowl  and add 2/3 of the sugar-grated lemon  and lemon juice. 
Finally add the eggs and stir well. 
When you are ready  distribute the mixture into the tarts 
Cut another apple (or 2) into thin slices and arrange on the tarts. 
Sprinkle with remaining sugar and cover each with a little butter.
Bake the tarts in the oven (180 °) 20 to 25 minutes or until filling is set and the apple slices are, starting to brown. 
Dust with icing  sugar and place in the oven about 5 minutes to caramelize.
Allow to cool and serve warm or at room temperature.

Tartas de manzana acarameladas















Ingredientes (masa)
12 tartas

350 gramos de harina
3 cucharadas de azúcar
160 gramos de mantequilla
refrigerada en cubitos

Preparación

En un bol colocar la harina y azúcar.
Entonces añadir la mantequilla haciendo migas con los dedos.
Hasta que tenga una textura de migas de pan.
Entonces agregar de a poco agua la necesaria.
Hacer una masa homogénea y envolver en un film plástico y dejar en el refrigerador 15 minutos.

Roasted milk (gluten free recipe) (Leche asada)













The roast milk  is a typical recipe from our childhood. 
When the desserts still not come in jars or  or plastic containers. 

All these desserts are typical  like  leche asada -floating islands (nevada milk)´- course Flan - Wine dessert and rice pudding. 

Funny that my kids still love these desserts. 
I made this dessert and take  to my mother on Saturday for 
lunch  and they loved literally! 

It's like flan  but  better  I think. The best is eat after refrigerate by a while. 
They are so old desserts (like  wine dessert) of course I remember my grandmother making ​​this recipe.

Pears tree




Ingredients
(6 servings)

6 eggs
6 cups of  whole milk
2 teaspoon vanilla extract
8 tablespoon of powder sugar
orange zest

Caramel
5 tablespoons granulate sugar
some water


Method


Melt granulated sugar with water (enough to cover the sugar) in a medium pan until it turns a golden blonde color .. 

Don't stir  only move a little the pan to all be golden. 

Turn off and put in a baking dish to cover the bottom of the pan. 
Care to empty the caramel could burn. 

Then in a large bowl beat the eggs and add the powdered sugar- milk-vanilla and orange peel. 

Pour the mixture in the baking dish where the caramel is ready. 
Oven at 180 ° c. 
Bake at  oven for 40 minutes. 
Remove from oven and let cool by a  time. 
Then refrigerate to be chilled.

Leche asada 











Completando este mes de recetas especialmente diciocheras agrego esta receta de Leche Asada que hace tiempo no hacía.
La llevé para la casa de mi mamá para el 18 y fue un éxito:)
Bueno mis hijos adoran estos postres.

Vi varias recetas pero finalmente me quedé con la receta de Pablo Hunneus (Manual práctico de cocina chilena) al cual recurro siempre (lo tengo desde que me casé.)
Lo unico que cambié fue agregarle 2 huevos. Lo demás igual y queda perfecta.

Ingredientes

6 huevos
6 tazas de leche
2 cucharaditas de vainilla
8 cucharadas de azúcar flor
cáscara de naranja

Para el caramelo
5 cucharadas de azucar granulada 
y agua para hacer el caramelo

Preparación

Derretir el azúcar granulada con agua en un sarten mediano hasta que tome un color rubio dorado.
Luego verter en una fuente que vaya al horno puede ser metálica o de pyrex.
Ver que se esparza todo el caramelo en el fondo de la fuente.
Reservar.
En un bol batir los huevos y agregar el azúcar en polvo-la leche-cáscara de naranja y vainilla.
Cuando está bien unida la mezcla se vacia en la fuente en que está el caramelo.
Precalentar horno moderado (180°c)
Llevar a horno por 40 minutos y se notará que está lista porque se verá cuajada.
Retirar del horno y dejar enfriar un rato. Luego poner en el refrigerador para que se termine de enfriar.

Little chilean treats with dulce de leche (tapitas con dulce de leche y merengue)








September 18 is our Independence day so I made other chilean recipes.
These treats have dulce de leche and meringue over a little crust.

Ingredients

6 egg yolks
2 eggs
30 ml sunflower oil or other
15 ml pisco or rum
1 pinch of baking powder
370 grams of all purpose flour

250 g. dulce de leche

Meringue
2 white eggs
1 1/2 cups of sugar
1/3 cup water
1/4 teaspoon cream of tartar
pinch of salt
Some  candy sprinkles


method


In a bowl mix the egg yolks and eggs first, beat oil and add rum or pisco,. 
Add the flour and pinch of baking. 
Mix well and place on floured surface kitchen. 
Join to have a mass for cutting pastries. If necessary add a little flour. 
Cut with cookie cutter masitas about 5cm 
Prick with a fork on one side only. 
Place on a baking tray with parchment paper and place in the oven at 180 ° C and bake about 10 minutes until they are lightly browned. 
Cool and fill with a little dulce de leche in each one and then the meringue. 
Sprinkle candy colored balls. 

For the meringue 

It is done in a double boiler. 
Put all ingredients in a bowl over a pot with water and beat with electric mixer for about 8 to 10 minutes until you have a good meringue for spreading. 

Cover the pastries  with meringue  will  be  already  with dulce de leche .
Allow to dry at room temperature for a while. 
You can let dry until next day (24 hrs.) or put in oven to low heat (160°c)  a few minutes and remove from oven.

Tapitas con manjar y merengue










Ya ad portas del 18 he hecho esta receta para complementar otras que he hecho de dulces chilenos.
Estas son unas tapitas que llevan manjar o dulce de leche y se cubren con merengue.
Feliz 18 para todos!

Ingredientes

6 yemas
2 huevos
30 ml de aceite
15 ml de pisco o ron
1 pizca de polvos de hornear
370 gramos de harina sin polvos de hornear

manjar o dulce de leche
mostacillas para espolvorear

Preparación

En un bol mezclar las yemas, huevos, aceite y pisco o ron, luego agregar la harina y la pisca de polvos de hornear,unir todo bien y colocar sobre la mesa enharina.
Si la masa aun esta pegajosa agregar un poco más de harina, hacer una masa como una bola.
Estirar la masa con el rodillo y cortar los discos con un cortapastas y pinchar los discos con un tenedor.
Llevar a horno y hornear durante unos 10 minutos en una bandeja de horno hasta que esten ligeramente dorados.
Se dejan enfriar y despues se rellena con manjar y se cubre con merengue.

merengue

Ingredientes
2 claras
1 pizca de sal 
 1 y 1/2 taza de azúcar
1/3 taza de agua
1/4 cucharadita cremor tártaro



Se prepara a baño maría.
En un bol colocar todos los ingredientes y colocarlo sobre una olla con agua.
batir con batidora eléctrica de unos 8 a 9 minutos hasta que tenga una consistencia de merengue,
Cubrir y dejar secar. 
Se pueden dejar secar hasta el otro dia temperatura ambiente o llevar a  horno a temperatura muy suave  unos minutos hasta que esten secos pero aun blancos.
retirar y dejar enfriar.

Copy-cat Lofthouse Sugar cookies (Secret recipe Club)





This time in Secret Recipe Club my assignment was Melissa from Melissa's cuisine  and I was a lot of time looking her recipes (she have a lot) finally I choose this cookie's recipe and was absolutely lovely!

Thanks Melissa by a lovely and yum cookie's recipe.
Many times I didn't make cookies and was a pleasure.
Yes this recipe make me think in Christmas:)







Ingredients
(about 5 dozen cookies)

1 cup butter room temperature
2 cups sugar
3 eggs
2 teaspoons vanilla
1 1/2 cup sour cream
6 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt

METHOD

In the bowl of your stand mixer using the paddle attachment
cream the butter and sugar until light and fluffy about 3 minutes.
Add the eggsone at time beating after each addition until is incorporated.
Add the vanilla and sour cream and beat until 
is incorporated.
add the flour-baking powder-baking soda- and salt and mix on low speed until combined. The dough will be sticky.
Divide the dough in half and flattennin rectangles.Will help you work on a floured surface and flour your hands. 
Wrap the dough in plastic wrap and refrigerate at least 2 hours.

After this time remove one of the dough rectangles from the fridge.
Place the dough on a  floured surface and roll out about 1/4 inch thick.
You can add a little more flour is needed.
Use a 2 1/2" cookie cutter to cut the cookies.
Place on a parchment lined cookie sheet. It is best to work in small batches and keep the dough cold until you are ready to work with it.

Note: I divide all the dough in two batches and let one of the batches in the fridge until the next day when I made the remaining cookies.

Bake at  190°c by 9 minutes until the cookies are lightly browned.
Allow the cookies completely before frosting them.
Decorate as desired.
Store in an airght container at room température.
You can also freeze unfrosted cookies.

Frosting 
(I adapted some ingredients 
in this but I dont have problem)

1 cup of butter room temperature
1 teaspoon vanilla
3 1/2 cups powdered sugar
3 tablespoon heavy cream
food coloring 
(I used only some drops of pink)

In the bowl of your stand mixer cream together the butter and vanilla.
Slowly beat in the powdered sugar until smooth and creamy.
Mix in heavy cream one tablespoon at time until you have the desidered frosting consistency.
Add a few drops of food color until evenly colored.Store in an
airtight container in the refrigerator.
Bring to room temperature before spreading.

galletas Lofthouse sugar










Estas galletas quedan muy lindas.
Y me recuerdan como la Navidad.
Este mes es de nuevo Secret Recipe Club y me tocó el blog de Melissa's cuisine.
Melissa tiene muy buenas recetas y para varias me costó elegir
Finalmente hice estas galletas.
Salen hartas pero se puede hacer la mitad de la receta si se quiere. Yo hice todo pero el primer dia hornee una porción y al otro día el resto.
La masa queda super buena en el refrigerador.Lo más importante para las galletas es el tiempo.
Las galletas se cocinan muy rápido asi que mejor poner el reloj y tomar el tiempo.

Ingredientes

1 taza de mantequilla temperatura ambiente
2 tazas de azucar
3 eggs
2 teaspoons of vanilla
1 1/2 taza de sour  cream o 1 taza yogurt natural
(hay que probar la consistencia de la masa si queda bien con una taza es ok)
1 cucharadita polvos de hornear
1 cucharadita de bicarbonato
1/4 cucharadita de sal

French onion soup (sopa de cebollas francesa)







This soup is absolutely wonderful. Of those I would be happy  do it again soon ... 
There are many variations of the onion soup but I loved this. 
In many recipes there are not one  recipe are variations of the same recipe. 
For me this was delicious. The amount of onions. The baguette bread. . cheese. Delicious...... 
Here though there sun  some  days is still really cold.. 
And elsewhere autumn approaches so this soup is perfect for everyone.

Ingredients
4 servings


85 grams of butter 
2 tablespoons vegetable oil 
500 grams of thinly sliced ​​onions 
1 teaspoon sugar 
1/2 teaspoon salt 
1 1/2 tablespoon flour 
600 ml of hot broth (vegetable or other) 
4 tablespoons brandy 
salt and pepper 
130 grams of grated parmesan or gruyere cheese 
8 small slices of baguette 1 cm thick 
1 clove of garlic

Method


Melt butter with oil in a medium or large  heavy saucepan 
Fry onion with sugar and salt to  heat  low. 

Cover saucepan  and sauté the onion for about 20 minutes, stirring occasionally. 

Uncover and continue stirring a bit more but take care not to burn. 
Sprinkle over the flour and stir for about two minutes more. Add  hot  broth and cook over low heat 15 minutes 

Preheat oven to 180 ° c. 
Toast the bread for 1 to 2 minutes or until golden brown. 
Rub with garlic while hot and save. 

Add the brandy to the soup and season to taste with salt and pepper. 
Spread the slices of bread into the bowls in which it will serve. 
Pour soup and sprinkle grated cheese on top.

Leave the bowls with soup in the oven about 20 minutes or until cheese is browned and bubbly. 

Let stand a few minutes before serving.

Note: If you like you can add 100 g more of onions.
          You can use only 1 tablespoon of flour will be more light.

Sopa de cebollas






Que tal una sopita para esos dias del 18 cuaqndo se espera el asado ?o puede ser despues si se quiere arreglar el cuerpo.
Cuando hago esta sopa sólo como eso y tomo una copa de vino.
Me encanta esta receta . De todas las que he probado es la que más me gusta y es deliciosa.
Como en muchas recetas hay muchas versiones esta me gusto por la cantidad de cebolla (hay unas que usan mucha) el queso y todo.
Quedó perfecta.
Ahora si alguien quiere puede agregar más cebolla (1 más) mis cebollas no eran grandes. Medianas.
Si no se tiene pan baguette se puede usar cualquier pan rústico.

Ingredientes
(4 porciones)

85 g de mantequilla
2 cucharadas de aceite vegetal
500 gramos de cebollas en rodajas finas
1 cucharadita azucar
1/2 cucharadita de sal
1 1/2 cucharada de harina
600 ml de caldo caliente
(verduras o pollo)
4 cucharadas de brandy
sal y pimienta
125 gramos queso parmesano o gruyere rallado
8 rebanadas pequeñas de pan baguette
o pan rústico de 1 cm de espesor
1 diente de ajo partido por la mitad

Preparación


Derretir la mantequilla con el aceite en una olla grande . Freir la cebolla con el azucar y la sal y bajar el fuego al mínimo.
Tapar la olla por un rato y rehogar  la cebolla por unos 20 .
minutos removiendo de vez en cuando para que se dore.
Destapar y seguir friendo y revolviendo tener cuidado de que no se queme.
Esparcir la harina por encima y seguir revolviendo. Agregar el caldo caliente y cocer la sopa a fuego lento a medio tapar.
Unos 15 minutos.
Precalentar el horno a 180°c.
Tostar el pan en el horno por unos dos minutos o hasta que se dore.
Darlo vuelta y tostar por el otro lado.
Frotar con el ajo mientras aún esta caliente y reservar.

Agregar el bandy a la sopa y sazonar con sal y pimienta.
Repartir las rebanadas de pan ya preparadas en kos cuencos que se va a servir.Verter la sopa y esparcir el queso rallado.
Llevar los cuencos al horno unos 20 minutos o hasta que el queso se dore y empieze a burbujear.
Dejar reposar unos minutos antes de servir.

Turron de vino (red wine meringue/a vintage dessert)











When I was a child this was one of my favorites dessert .
Usually my chilean grand mom (abuelita Chela) made for Sundays or some special dates like Independence day (18 de Septiembre)
Is nice cook or bake recipes you remember people we love.
So this month I will try some chilean recipes.

 Anyway if you want look in my labels you cand find many chilean recipes.

This post is dedicate to Lory a new friend of mine who came from USA and cook amazing and  living with her family in Puerto Octay a beautiful place in the south of Chile.
Her blog is Our chilean adventure and yo can visit her and Jim (her hubby) she has amazing pictures.

Ingredients
5 glasses

1 cup of red wine
Sirah or Carmenere (or other red wine)
1 1/2 cup of sugar
4 white eggs
60 g chopped waltnuts

Method


In a bowl beat the egg whites with a pinch of salt. 
While the whites are whipping on medium speed to soft peaks boil the sugar syrup with the red wine.
Add slowly the hot syrup . Continue whipping until the mixture cools .
The meringue is ready when the bowl is no longer hot.

For syrup
Put a pan to medium heat with wine and sugar and boil for a while. 
The wine sauce is ready when you try  a bit with a spoon it looks like syrup. (threads) 
Gradually incorporate this  syrup  to meringue

Divide into glasses and sprinkle the chopped nuts. 
Leave in the refrigerator for about 15 minutes and serve.

TURRON DE VINO














El turron de vino es uno de mis postres favoritos. Era muy comun que mi abuelita Chela lo hiciera para fechas especiales o los Domingos en que normalmente ibamos a almorzar.
Hace mucho que no lo hacía.

Lo hice para empezar a poner recetas para este tiempo del 18 por lo menos algunas. En todos estos años he hecho tantas que 
me cuesta encontrar recetas distintas.

He hecho empanadas-sopaipillas- alfajores- empolvados- chupes de mariscos-pastel de choclo cazuela- caldillos de pescado tortas mil hojas- chilenitos-lanchitas en fin.
Pero siempre se encuentra algo distinto.

Esta receta es de Platos y Copas de un número especial de cocina chilena.

Jamie Oliver's Yogurt and berry popsicles (helados de berry y yogurt )




These delicious bery popsicles you can eat any season, delicious and healthy!
We love them!

Ingredients

2 small ripe bananas peeled and sliced
1 1/2 cups frozen berries
2 cups non fat plain yogurt
2 tablespoon of honey
(or sucralose or other sugar substitute)


1. Combine bananas and remaining ingredients in food processor or blender, process until smooth.

2. Divide mixture evenly among 6 plastics molds or small paper cups. Freeze pops 10 minutes and insert popsicles stick or small plastic spoon into center of each. Freeze pops at least 3 hours or until frozen solid.

3. Run each mold under warm water.(you can help slowly with a knife) 
Gently pull each pop from mold or peel paper away.
Serve and enjoy.
